Sup Sirip Hiu – Shark-fin Soup


SUP SIRIP HIU – SHARK-FIN SOUP

Bahan/ingredients:
500 gr sirip hiu, suwir. 500 gr shark-fin, shredded.

½ ekor ayam kampung goreng dan suwir. ½ pcs of darmer chicken, frying and shredded.
10 buah jamur shiitake kering ukuran besar, rendam sm empuk dan iris tipis. 10 pcs of dried shiitake big size, soak until tender and finely slice.
5 siung bawang putih, cincang. 5 cloves of garlic, chopped.
2 cm jahe. 2 cm ginger.
1500 ml kaldu ayam. 1500 ml chicken broth.
3 sdm minyak olive + 1 sdm minyak wijen, untuk menumis. 3 tbsp olive oil + 1 tbsp sesame oil for saute.
5 sdm tepung maizena + 6 sdm air, untuk pengental. (Sesuaikan). 5 tbsp corn flour + 6 tbsp water, for thickener. (Adjust it)

Bumbu/seasoning:
2 sdm arak masak. 2 tbsp cooking wine. (Shao Shing)
3 sdm kecap asin premium. 3 tbsp premium soy sauce.
2 sdm kecap ikan. 2 tbsp fish sauce. (Gold Fish)
1 sdm saus tiram. 1 tbsp oyster sauce. (Lee Kum Kee)
1 sdt lada bubuk. 1 tsp pepper powder.
Garam sesuai selera. Sals as your desire.

Pendamping/condiment:
Cuka hitam dan cabai rawit merah. Black vinegar and red cayenne.

Cara/method:
1. Panaskan minyak, tumis jahe dan bawang putih hingga harum. Masukkan ayam suwir, aduk rata, masukkan jamur shiitake dan sirip ikan, aduk, tambahkan arak masak aduk 30 detik, tambahkan semua bumbu, aduk rata, masukkan kaldu ayam, aduk dan biarkan mendidih. Heat oil, saute ginger and garlic until fragrant. Add shredded chicken, stir well, add shiitake mushrooms and fish fins, stir, add cooking wine stir 30 seconds, add all seasonings, stir well, add chicken broth, stir and simmer.
2. Gunakan api besar, masukkan larutan pengental aduk hingga sup mengental. (Harus api besar supaya kuah tidak mudah mencair). Use high heat, add the thickening mixture, stir until the soup thickens. (Must be a big fire so the broth doesn’t melt easily)
3. Sajikan panas dengan pendamping. Serve hot with condiment.
