Blueberry Lemon Buckle


BLUEBERRY LEMON BUCKLE

Bahan/ingredients:
100 gr gula halus. 100 gr castor sugar.
100 gr mentega tawar (suhu ruang). 100 gr unsalted butter (room temperature). (Elle & Vire)
2 btr telur. 2 pcs egg.
100 ml susu segar. 100 ml fresh milk. (Greenfield)
120 gr tepung cake. 120 gr cake flour (kunci biru)
80 gr tepung almond. 80 gr almond flour..
1 sdt baking powder. 1 tsp of baking powder
½ sdt garam. ½ tsp salt
200 gr blueberry segar. 200 gr fresh blueberries.
1 sdm air lemon. 1 tbsp lemon juice.
5 gr kulit lemon parut. 5 gr lemon zest.

Taburan streusel/Streusel Topping :
80 gr gula merah butir. 80 gr granulated brown sugar
40 gr tepung utk cake.40 gr cake flour.
½ sdt bumbu spekoek. ½ tsp spekoek spice.
40 gr mentega tawar.(suhu ruangan). 40 gr unsalted butter (room temperature)

Cara/methods:
1. Panaskan oven 180C. Oles loyang loaf 20x10cm (atau loyang bongkar pasang 18 inch) dgn mentega or minyak sayur. Alasi kertas roti. Preheat oven 180C. Spread loaf pan 20×10 cm (or springform pan 18 inch) with butter or veggie oil. Cover with baking sheet.
2. Campur gula, mentega dan telur. Mixer dengan speed medium sampai adonan merata (3 menit) mix sugar, butter and egg, mixer with medium speed until mixture mixwell. (3 minutes).
3. Campur susu dan air lemon, aduk dan sisihkan. Campur bahan kering (tepung, tepung almond baking powder, kulit lemon dan garam) bertahap dan bergantian dengan memasukkan susu, mixer kecepatan rendah (2 minutes). Mix mil and lemon juice, stir and set aside. Mix dry ingredients (flour, almond baking powder, lemon zest and salt) gradually and alternately by adding milk, while mixing low speed (2 minutes).
4. Tuang ke loyang. Letakkan blueberry diatas adonan dan tekan lembut dengan sumpit. Pour into a pan. Place the blueberries on the dough and press gently with chopstix.


5. Cara membuat Streusel/how to make streusel topping:
Campurkan gula merah, tepung, bubuk kayu manis, dan mentega. Campuran akan menggumpal kecil-kecil. Taburkan di atas adonan sampai merata. Mix brown sugar, flour, powdered cinnamon and butter. The mixture will lump into small pieces.
6. Taburkan dgn Streusel diatas adonan. Sprinkle streusel topping on mixture.


7. Oven selama 30 minute. Agak dingin keluarkan dr loyang potong. Bake for 30 minutes, after cold, lift up cake from the pan and slice.
