Ayam Suwir Pedas Kecombrang – Spicy Shredded Chicken With Torch Ginger


AYAM SUWIR PEDAS KECOMBRANG – SPICY SHREDDED CHICKEN WITH TORCH GINGER

Bahan/ingredients:
1 ekor ayam probiotik. 1 pcs probiotic chicken.
1 buah bunga kecombrang, iris halus. 1 pcs torch ginger, finely slice.
Bumbu rempah/herbal seasoning:
14 buah bawang merah, iris halus. 14 pcs shallot, finely slice.
6 siung bawang putih, iris halus. 6 cloves garlic, finely slice.
½ sdt kunyit bubuk. ½ tsp turmeric powder. (Jay’s)
1 sdm cabai merah besar halus. 1 tbsp ground red chili pepper.
30 buah cabai rawit, iris halus. 30 pcs red cayenne, finely slice.
4 iris lengkuas. 4 sliced galangal.
2 lembar daun salam. 2 pcs indonesian bay leaf.
5 lembar daun jeruk. 5 pcs lime leaf.
2 batang serai, geprak. 2 stalks of lemongrass, crush.
Garam secukupnya. Some salt.
½ sdt terasi halus. ½ tsp ground shrimp paste.
6 sdm minyak olive untuk menumis. 6 tbsp olive oil for saute.

Cara/method:
1. Bumbui ayam dengan garam, madu, lada dan diamkan selama 4 jam. Oven hingga matang (sekitar 2 jam), suwir dan sisihkan. Season the chicken with salt, honey, pepper and let stand for 4 hours. Oven until cooked (about 2 hours), shredded and set aside.
