Jalangkote – Makassar Fried Pastry


JALANGKOTE – MAKASSAR FRIED PASTRY

Bahan kulit/dough ingredients:
650 gr tepung tinggi protein. 650 gr high protein flour. (Cakra kembar).
300 ml air es + ½ sdt garam. 300 ml cold water + ½ tsp salt.
50 ml minyak hangat. 50 ml warm oil.

Cara/method:
Letakkan tepung ke dalam mangkuk besar. Campur minyak dengan air es, aduk dan tuang bertahap ke dalam tepung sambil uleni hingga kalis, setelah adonan halus, tutup dgn plastik dan diamkan selama 30 menit. Put the flour into a large bowl. Mix oil with ice water, stir and pour gradually into the flour while kneading until smooth, after the dough is smooth, cover with plastic and let stand for 30 minutes.

Bahan isian/filling ingredients:
400 gr kentang, potong kecil, goreng matang 80%, tiriskan. 500 gr potatoes, cut into small pieces, fried 80%, drain well.
300 gr wortel, potong kecil, rebus dan tiriskan. 300 gr carrot, cut into small pieces, drain.
1 papan bihun jagung, rendam air hingga lembek. A board of corn vermicelli, soak the water until soft.
250 gr toge. 250 gr bean sprout.
8 siung bawang putih, iris. 8 cloves of garlic, slice.
5 buah bawang merah, iris. 5 pcs of shallot, slice.
1 sdm saus tiram. 1 tbsp oyster sauce.
1 sdm kaldu ayam bubuk. 1 tbsp chicken broth powder. (Knorr)
Garam dan lada secukupnya. Some salt and pepper.
3 sdm minyak olive untuk menumis. 3 tbsp olive oil for saute

8 butir telur rebus, belah 6 bagian. 8 boiled egg, cut into 6 part.

Cara/method:
Panaskan minyak, tumis bawang putih dan bawang merah hingga harum, masukkan semua bahan kecuali telur rebus, aduk dan masak selama 10 menit. Sisihkan. Heat oil, saute garlic and onion until fragrant, add all ingredients except boiled eggs, stir and cook for 10 minutes. Set aside.

Bahan saus/sauce ingredients:
½ sdm cuka salad jepang. ½ tbsp japanese salad vinegar. (SHU)
6 siung bawang putih. 6 cloves of garlic.
100 gr saos sambal. 100 gr chili sauce. (Jawara)
15 buah cabe rawit. 15 pcs red cayenne.
½ sdt taoco. ½ tsp fermented soy bean..
200 ml air mineral. 200 ml mineral water.

Cara/method:
Campur dan blender semua bahan dan didihkan. Mix and blend all ingredients and bring to a boil.

Cara membuat jalangkote/how to make jalangkote:
1. Pipihkan adonan dan bentuk bulat dengan cookie cutter diameter 5,5cm. Flat the dough and round shape with a cookie cutter 5.5 cm in diameter.

2. Beri isian dan katupkan kulit dan tutup dengan cara cubit pelintir bagian tepi kulit. Fill and tighten the skin and cover it by pinching the edges of the skin.

3. Panaskan minyak jumlah banyak, masukkan jalangkote goreng hingga keemasan, tiriskan. Heat a lot of oil, add fried jalangkote until golden, drain.
4. Sajikan jalangkote selagi hangat dengan saus sambal.

Note:
1. Untuk alasan kesehatan aku memilih menggoreng rendam minyak hingga ½ matang kemudian aku proses lanjut goreng kering dengan AIRFRYER 160c selama 15 menit dan kulit jalangkote lebih garing dan ta berminyak. For health reasons I chose to fry the oil soak until ½ cooked then I proceed to dry frying with AIRFRYER 160c for 15 minutes and the skin of the jalangkote is more crisp and not greasy.
2. Bila hendak disimpan, goreng jalangkote ½ matang. Tiriskan dan bisa disimpan di freezer. Saat mau dikonsumsi, goreng dalam minyak panas setelah di defrost. If you want to save, fry jalangkote ½ cooked. Drain and can be stored in the freezer. When you want to consume, fry in hot oil after defrosting.
3. 1 resep ini menjadi 44 jalangkote. 1 of this recipe becomes 44 jalangkote
