Soes Ragout – Choux Ragout


SOES RAGOUT – CHOUX RAGOUT

Utk 12 buah. For 12 pcs.

Bahan sous/choux ingredients:
175 ml air mineral, 175 gr mineral water.
150 gr mentega tawar. 150 gr unsalted butter. (Anchor)
125 tepung untuk kue. 125 gr cake flour, Kunci Biru.
4 butir telur. 4 pcs egg.
¼ sdt garam. ¼ tsp salt.

Cara/method:
1. Didihkan air, garam dan mentega, matikan api. Masukkan tepung dan aduk dengan sendok kayu hingga rata dan tidak lengket di panci. Boil water, salt and butter, turn off the heat. Add flour and stir with a wooden spoon until smooth and not sticky in the pan.
2. Biarkan dingin, masukkan telur 1 per 1 dan kocok dengan mixer speed sedang asal tercampur. Let it cool, add 1 egg per 1 and beat with a medium mixer speed as long as it is mixed.
3. Masukkan ke kantong piping, dan semprotkan ke loyang beri jarak. Put it in the piping bag, and spray it into the pan to make space.
4. Oven 180C selama 30-40 menit. Oven 180C for 30-40 minutes.

Bahan Ragout/Ragout ingredients:
2 siung bawang putih, cincang. 2 cloves of garlic, chopped.
½ buah bawang bombay, cincang halus. ½ pcs onion, finely chopped.
100 gr ayam asap, potong kecil. 100 gr smoked chicken, finely cut.
100 gr jagung beku. 100 gr frozen corn.
100 gr kacang polong beku. 100 gr frozen peas.
1 sdm mentega untuk menumis. 1 tbsp butter for saute. (Anchor)
60 gr keju cheddar parut. 60 gr grated cheddar cheese. (kraft)
20 gr keju parmesan. 20 gr parmesan cheese.
Lada bubuk dan pala bubuk secukupnya. Some pepper and nutmeg.
3 sdm tepung. 3 tbsp flour.
300 ml susu cair tawar. 300 ml fresh milk plain.

Cara/method:
1. Tumis bawang putih dan bawang bombay dgn mentega tawar hingga harum, masukkan ayam, wortel, paprika, keju, garam, lada dan pala, aduk. Masukkan tepung aduk rata, tambahkan susu dan krim kental, aduk rata hingga mengental. Sisihkan. Saute garlic and onion with butter until fragrant, add chicken, carrot, bell pepper, cheese, salt, pepper and nutmeg. Add flour, stir well, add fresh milk and heavy cream. Stir well until thickener. Set aside.
2. 2. Iris bagian atas soes dan beri isian. Slice the top of the choux and add the filling.

3. Soes siap disajikan. Choux ready to serve.
