Sup Daging Ubi Kayu Makassar – Beef & Cassava Soup Ala Makassar


SOP DAGING UBI KAYU MAKASSAR – BEEF & CASSAVA SOUP ALA MAKASSAR

Bahan/ingredient:
500 gr daging sengkel. 500 gr beef shank.
Seikat seledri. A bunch of celery, tied.
3 iris lengkuas. 3 slices galangal.
1 batang sereh. 1 stalk of lemongrass.
2000 ml air mineral. 2000 ml mineral water.

Bumbu halus/ground seasoning:
10 buah bawang merah. 10 pcs shallot.
6 siung bawang putih. 6 cloves of garlic.
½ sdt ketumbar. ½ tsp coriander.
¼ buah pala. ¼ pcs nutmeg.
3 butir kemiri. 3 pcs candlenut.
½ sdt lada bubuk. ½ sdt pepper.
2 sdt garam.(sesuai selera) 2 tsp salt. (To taste)
2 sdm minyak untuk menumis. 2 tbsp oil for saute.

Pelengkap/condiments:
1 bungkus mie gepeng kering, rebus & tiriskan. 1 pack dried flat noodle, boiling & strain. (URAI – Burung Dara)
200 gr toge, siram air panas & tiriskan. 200 gr bean sprout, pour hot water over bean sprout & strain.
1 batang ubi kayu/singkong besar, kupas, potong dan goreng. 1 stalk big size cassava, peel, cut and fry.
3 telur rebus. 3 boiled egg.
Sambal (cabe rawit, bawang putih, bawang merah, terasi, garam). Chili (red cayenne, garlic, shallot, belacan, salt)
Jeruk nipis. Lime
Kacang tanah goreng (aku ga pakai). Fried peanut. (I Skip)

Taburan/topping:
Daun bawang. Scallion.
Bawang merah goreng. Fried shallot.
Kecap manis bila suka. Sweet soy sauce to taste

Cara/method:
1. Rebus air, masukkan serai, lengkuas dan daging, masak dgn api kecil hingga daging empuk. Boil water, add lemongrass, galangal and meat, simmer until the meat is tender.
2. Tumis bumbu halus hingga harum dan masukkan ke dalam sup. Saute the ground seasoning until fragrant and put in soup.
3. Angkat dan iris daging sesuai selera. Remove and slice the meat to taste
4. Cara penyajian/how to serve: letakkan mie di dalam mangkuk, beri pelengkap, irisan daging, tuang sup, beri taburan, sajikan dengan jeruk nipis dan sambal. put the noodles in a bowl, add the slices, slice the meat, pour the soup, add sprinkles, serve with lime and chili sauce.
Note:
1. Singkong aku proses dengan airfryer. (Singkong bisa diproses spt bikin singkkng goreng berbumbu)I process cassava by airfryer. (Cassava can be make like savory fried cassava)
2. Masak sup daging nya dgn slow cooker selama 3 jam. Cook the meat soup with a slow cooker for 3 hours.
