Bihun Goreng Pelangi – Rainbow Fried Vermicelli

BIHUN GORENG PELANGI – RAINBOW FRIED VERMICELLI

Bahan/ingredients:
300 gr bihun kering, rendam air panas 2 menit dan tiriskan. 300 gr of dried vermicelli, soak 2 minutes of hot water and drain.
3 kuntum baby bok choy, potong. 3 bulb of mustard green, cut
1 buah wortel ukuran kecil, iris korek api & rebus sebentar 1 pcs carrot small size, julienne and boiling a while.
2 buah cabe merah besar, iris korek api. 2 pcs chili pepper, julienne.
1 batang daun bawang, iris serong. 1 stalk of leek, oblique.
30 ekor udang kupas sisa ekor, rebus sebentar dan tiriskan. 30 shrimps peeled the remaining tails, boil briefly and drain.
6 siung bawang putih, cincang. 6 cloves of garlic, chopped.
6 buah bawang merah, cincang. 6 pcs of shallot, chopped.
1 butir telur buat dadar dan iris. 1 egg for omelette and sliced.

Bumbu/seasoning:
2 sdm minyak cabe. 2 tbsp chili oil.
½ sdm minyak wijen. ½ tbsp sesame oil.
½ sdm kecap cap jamur. ½ tbsp mushroom soy sauce.
1 sdm kecap ikan. 1 tbsp fish sauce.
1 sdm saus tiram. 1 tbsp oyster sauce.
50 ml air panas. 50 ml hot water.
1 sdt lada bubuk. 1 tsp pepper powder.
Garam secukupnya. Some salt.

Cara/method:
1. Panaskan minyak, tumis bawang merah dan bawang putih cincang hingga harum. Heat oil, saute chopped shallot and garlic until fragrant.
2. Masukkan udang dan sayuran, masukkan kecap ikan dan saus tiram, aduk. Masukkan semua bahan dan bumbu dan aduk dengan penjepit. Add shrimp and vegetables, add fish sauce and oyster sauce, stir. Add all ingredients and seasonings and stir with tongs.
3. Siap disajikan panas dengan taburan telur dan bawang. Ready to be served hot with a sprinkling of eggs and onions.
