Haoyou Mian – Noodle With Oyster Sauce

HAOYOU MIAN – NOODLE WITH OYSTER SAUCE

Bahan toping/topping ingredients:
3 bongkah mie basah gepeng, rebus dan tiriskan. 3 bulb of flat fresh noodle, boiling and drain.
300 gr ayam/babi, iris tipis. 300 gr chicken/pork, finely slice.
6 buah jamur shiitake kering, rendam dan iris tipis. 6 pcs of dried shiitake mushroom, soak and finely slice.
100 ml kaldu ayam. 100 ml chicken broth.
1 sdm minyak olive + ½ sdm minyak wijen. 1 tbsp olive oil + ½ tbsp sesame oil.
6 siung bawang putih, cincang halus. 6 cloves of garlic, finely chop.

Bumbu/seasoning:
1 sdm saus tiram. 1 tbsp oyster sauce.
⅓ sdm arak masak(boleh tidak pakai). ½ tsp cooking wine(can be skip)
½ sdm kecap ikan. ½ tbsp fish sauce.
½ sdt lada hitam bubuk. ½ tap blak pepper powder.
Garam sesuai selera. Some salt to taste.

Pelengkap/condiment:
Sayur rebus. Boiled veggie
Daun bawang. Leek
Bawang merah goreng. Fried shallot.
Acar cabe. Preserved cayenne.

Cara/method:
1. Panaskan minyak, tumis bawang putih hingga harum, masukkan ayam/babi tumis hingga berubah warna, masukkan arak dan kecap ikan, aduk rata, masukkan jamur dan semua bumbu, aduk rata. Tambahkan kaldu ayam. Didihkan dan sisihkan. Heat oil, saute garlic until fragrant, add chicken / pork stir-fry until it changes color, add fish sauce and sauce, stir well, add mushrooms and all seasonings, stir well. Add chicken stock. Bring to a boil and set aside.
2. Rebus air dan masak mie hingga matang dan tiriskan. Siapkan dalam mangkuk besar 1 sdm saus tiram, ½ sdm minyak wijen, 2 sdm minyak bawang, ½ sdt lada bubuk, ¼ sdt garam, aduk rata, masukkan mie rebus dan aduk rata. Boil water and cook noodles until cooked and drain. Prepare in a large bowl 1 tbsp of oyster sauce, ½ tbsp sesame oil, 2 tbsp of onion oil, ½ tsp ground pepper, ¼ tsp salt, stir well, add boiled noodles and stir well.
3. Cara saji/how to served: letakkan mie yang sudah dibumbui, beri toping dan pelengkap.
