Ikan Pari Bakar Sambal Mangga – Grilled Stingray With Sambal Mango


IKAN PARI BAKAR SAMBAL MANGGA – GRILLED STINGRAY WITH SAMBAL MANGO

Bahan/ingredients:
3 potong ikan pari ukuran sedang, lumuri jeruk nipis dan diamkan 20 menit.
½ buah mangga muda, iris korek api. ½ pcs unripe mango, julliane.

Bumbu/seasoning:
5 siung bawang putih
10 buah bawang merah
1 sdt garam
3 sdm air asam jawa
1 sdm gula Jawa
5 sdm cabe merah giling.
15 buah cabe rawit.
1 sdt terasi.
3 lembar daun jeruk. 3 pcs lime juice.
1 batang serai, sobek
5 sdm minyak untuk menumis.

Cara/method:
1. Haluskan bumbu dan tumis hingga matang benar, sisihkan. Setelah agak dingin masukkan mangga dan aduk rata. Blend the seasoning and stir-fry until completely, set aside. After a bit cold enter the mango and stir well.
2. Bakar ikan pari diatas bara api, hingga matang rata. (Aku menggunakan airfryer, dan untuk efek bakaran aku gunakan torch). Grill the stingrays over the coals, until they are evenly cooked. (I use an airfryer, and for the burn effect I use a torch).
3. Pindahkan ikan pari bakar di atas piring saji dan letakkan sambal mangga diatasnya. Sajikan dengan nasi hangat. Transfer the grilled stingray to a serving plate and place the sambal mangi on top. Serve with warm rice.
