Cinnamon Rolls With Cream Cheese Glaze


CINNAMON ROLLS WITH CREAM CHEESE GLAZE

Reference:

Cinnamon Rolls (Easy Recipe: No-Knead, No Machine)

Bahan/Ingredients:
240 gr tepung serba guna. 240 gr All-Purpose Flour. (Segitiga Biru)
1 sdt garam. 1 tsp salt.
4 gr ragi instan kering. 4 gr instant dried yeast. (SAF)
85 gr susu segar. 85 gr fresh milk. (Greenfield)
45 gr air. 45gr water.
1 butir telur ukuran besar.1 large egg.
45 gr madu. 45 gr honey. (Tropicana)
30 gr mentega tawar. 30 gr unsalted butter. (Anchor)

Untuk isian/For the Filling:
60 gr mentega leleh, suhu ruang. 60 gr melted butter, room temperature.
100 gr gula merah. 100 gr brown sugar.
1½ sdt kayumanis bubuk. 1½ tsp ground cinnamon
1 sdt ekstrak vanila. 1 tsp vanilla extract.

Cream Cheese Glaze:
60 gr cream cheese, suhu ruang. 60 gr cream cheese, room temperature.
60 gr icing sugar.
50 gr mentega leleh, suhu ruang. 50 gr melted butter, room temperature. (Anchor)
½ sdt ekstrak vanila. ½ tsp vanilla extract.

Cara/method:
1. Campur dan aduk tepung dan ragi dalam mangkuk besar, masukkan garam, aduk dan sisihkan. Mix and stir flour and yeast in a large bowl, add salt, stir and set aside.
2. Campur bahan cair dan panaskan hingga mentega meleleh (hangat saja) aduk dgn whisk, masukkan telur dan aduk cepat. Mix the liquid ingredients and heat until the butter melts (just warm) stir with a whisk, add the egg and stir quickly.
3. Masukkan bahan cairan bertahap ke tepung dan aduk hingga tidak ada gumpalan dan berbentuk bola dengan sendok. Sdh cukup dan hentikan memasukkan cairan. Kerok adonan yg menempel di tepi mangkok ke tengah. Add the liquid ingredients gradually to the flour and stir until there are no lumps and are spherical with a spoon. That’s enough and stop putting fluid in. Scrape the dough attached to the edge of the bowl into the middle with a spatula.
4. Tutup mangkuk dengan plastik dan serbet istirahatkan 2 jam di tempat yg cukup hangat. Adonan akan mengembang 3 kali lipat. Cover the bowl with plastic and napkin and rest for 2 hours in a fairly warm place. It will triple in size.
5. Kemudian, SIMPAN ADONAN DI CHILLER MINIMAL 8 JAM, lebih bagus diinapkan semalam. Adonan ini bisa bertahan selama 3 hari. After this, REFRIGERATE THE DOUGH FOR AT LEAST 8 HOURS, preferably overnight. It can be refrigerated for up to 3 days before using.
6. Bila sudah siap membuat cinnamon roll, buat isiannya. Campur mentega, gula merah, vanila dan kayumanis bubuk. Aduk hingga lembut. Sisihkan. When you’re ready to make your cinnamon rolls, make the filling. Combine the butter, brown sugar, vanilla and cinnamon in a bowl. Stir until smooth. Set aside.
7. Pindahkan adonan di atas meja kerja yg sdh ditaburi tepung, gilas hingga berbentuk persegi dengan ketebalan ½cm. Transfer the dough to a floured work surface, and roll it into a rectangle approximately ½ cm thick.
8. Oleskan isian diatas adonan, sisakan bagian tepinya jangan di oles. Spread the filling over the dough, leaving a narrow margin around the edges uncovered.
9. Mulailah menggulung adonan perlahan hingga membentuk balok, potong sekitar 5 cm dan letakkan berjarak di atas loyang yg dalam dan alasi dengan kertas roti. Jangan menggulung terlalu ketat, karena akan keluar bagian tengahnya saat di panggang. Start rolling the dough slowly until it forms a block, cut about 5 cm and place it on a deep baking sheet and cover it with baking paper. 10. Tutup loyang dengan serbet, dan biarkan adonan mengembang, sekitar 1 jam. (tergantung seberapa hangat dapur Anda). Cover the pan with a napkin, and allow the rolls to rise until they’ve grown into each other and are puffed up, about 1 hour. (depending on how hot your kitchen is).

11. Panaskan oven 180C, 20 menit sebelum waktu proofing selesai. Preheat the oven 180C, 20 minutes before the proofing time is over.
12. Panggang selama 20-25 menit. Bake for 20-25 minutes.
13. Sementara menunggu memanggang, buatlah glaze-nya. Dalam mangkuk besar (bisa menggunakan mixer tangan) kocok keju krim, mentega, gula, dan vanili bersama dengan pengocok sampai tercampur rata. While they are baking make your glaze: In a large bowl (or you can use a hand mixer) beat the cream cheese, butter, sugar and vanilla together with a whisk until well combined.
14. Angkat loyang dari oven dan biarkan beristirahat selama 20 menit. Setelah dingin keluarkan dari loyang dan letakkan di rak pendingin. Remove the pan from the oven and let it rest for 20 minutes. Once cooled remove from the pan and onto a cooling rack.
15. Oleskan cream cheese glaze diatas cinnamon roll dan nikmati segera. Spread your cream cheese glaze generously over the cinnamon rolls, and devour immediately.
