Scallion Pancake With Ssamjang


SCALLION PANCAKE WITH SSAMJANG

Bahan/ingredient:
Untuk adonan roti aku buat dari super dough nya Gemma 👇dari 1 resep aku pakai ⅓ bagiannya. I made the bread dough from Gemma’s recipe👇 I only use ⅓ of the dough

Cinnamon Rolls (Easy Recipe: No-Knead, No Machine)

6 batang daun bawang, iris. 6 stalks scallion, slice.
Garam himalaya secukupnya. Some himalayan salt.
Laba hitam bubuk secukupnya. Some black pepper powder.
Bawang Putih bubuk secukupnya. Some garlic powder. (Mc. Cormick)
Minyak olive secukupnya. Some olive oil.

Saus Ssamjang/Ssamjang sauce:
2 sdt minyak wijen. 2 tsp sesame oil.
1 sdt biji wijen sangrai. 1 tsp roasted sesame oil.
2 sdt gochujang. 2 tsp gochujang. (Korean chili paste)
1 sdt gochugaru. 1 tsp gochugaru. (Korean chili flake)
½ sdt madu. ½ tsp honey.
1 sdm doenjang. 1 tsp doenjang. (Korean soybean paste)
1 siung bawang putih ukuran besar cincang halus. 1 clove minced big size garlic.

Cara/method:
1. Campur bawang daun dengan lada, garam dan bawang putih secukupnya. Sisihkan. Mix the scallion with pepper, salt and garlic to taste. Set aside.
2. Taburi meja kerja dengan tepung, letakkan adonan roti diatasnya dan gilas setebal 0,5 cm. Sprinkle the work table with flour, place the bread mixture on top and roll it 0.5 cm thick.
3. Olesi adonan dengan minyak olive, taburi bawang putih bubuk, garam dan lada secukupnya, letakkan ¾ bagian daun bawang dan lipat adonan seperti amplop.
Rub the dough with olive oil, sprinkle with garlic powder, salt and pepper to taste, add ¾ of the scallions and fold the dough like an envelope.
4. Oleskan minyak olive diatasnya dan taburkan sisa bawang daun, lipat dan rapatkan. Tepian adonan. Istirahatkan selama 30 menit tutup dengan kain serbet. Letakkan di tempat hangat. Rub olive oil on top and sprinkle the rest of the scallions, fold and close the edges of the dough. Rest for 30 minutes covered with a napkin. Place it in a warm place.
5. Panaskan minyak olive di wajan teflon ukuran 32”. Gilas perlahan adonan dan letakkan diatas teflon panas, tekan adonan dengan tangan, tutup teflon, dan masak dengan api sedang ke tinggi. Balik adonan bila bagian yg menempel pada teflon sudah kecoklatan dan tutup kembali, bila sudah kecoklatan, angkat dan potong sesuai selera. Heat the olive oil in a 32″ Teflon pan. Slowly roll the dough and place it on hot Teflon, press the dough evenly by hand, cover teflon, and cook using medium to high heat. Turn the dough if the sticking part of the Teflon is brown and close again, if it is brown, lift it and cut it according to taste.
6. Campur bahan Ssamjang sauce dan sajikan bersama Scallion Pancake.
