Martabak Manis – Sweet Pancake


MARTABAK MANIS – SWEET PANCAKE

Bahan/ingredients:
200 gr tepung serba guna. 200 gr all purpose flour. (Segitiga Biru)
4 gr garam. 4 gr salt.
40 gr gula pasir. 40 gr granulated sugar.
220 ml air. 220 ml water.
3 gr soda kue. 3 gr baking soda.
1 sdt ekstrak vanila. 1 tsp vanilla extract.
1 butir telur. 1 egg.

Bahan biang/starter ingredients:
3 sdm air hangat. 3 tbsp warm water.
½ sdm ragi instan kering. ½ tbsp dried instant yeast. (SAF)

Taburan/topping:
Coklat meses secukupnya. Some chocolate sprinkle. (Ceres)
Keju cheddar parut secukupnya. Some grated cheddar cheese. (Kraf)
Kental manis secukupnya. Some condensed milk. (Frisian flag)

Cara/method::
1. Untuk adonan biang: campur air hangat dan ragi, aduk dengan sendok kayu, diamkan hingga berbuih sekitar 10 menit (bila tidak berbuih berarti ragi sdh tidak aktif/air terlalu panas). For starter mixture: mix warm water and yeast, stir with a wooden spoon, let stand until bubbling about 10 minutes (if not bubbling means the yeast is not active / the water is too hot).
2. Campurkan tepung, soda kue, gula, garam & telur dalam mangkuk besar, aduk dengan sendok kayu sambil masukkan air bertahap sampai tercampur bahan tercampur rata. Mix flour, baking soda, sugar, salt & eggs in a large bowl, stir with a wooden spoon while adding the water gradually until the ingredients are mixed evenly.
3. Tuang biang, aduk rata kemudian tutup dengan serbet, diamkan selama 30 menit hingga muncul gelembung. Pour the starter, stir well then cover with a napkin, let stand for 30 minutes until bubbles appear.
4. Panaskan teflon 24cm, oles tipis minyak, wajan harus panas benar, kecilkan api lalu tuang adonan (harus ada suara mendesis), taburkan gula secukupnya di atas adonan. Tutup teflon supaya adonan matang sempurna, gunakan api kecil saja. Heat the Teflon 24cm, gently rub with oil, the pan must heat well, reduce the heat and then pour the dough (there should be a hissing sound), sprinkle sufficient sugar over the mixture. Cover the teflon so that the dough is perfectly cooked, use only low heat.
5. Setelah matang angkat martabak, taruh di talenan lalu oleskan mentega di atasnya. Beri taburan sesuai selera. Potong di tengah dan susun. Oles permukaan atas martabak dengan mentega. Potong sesuai selera. Once cooked, remove the pancake, put it on a cutting board and spread butter on it. Sprinkle topping according to taste. Cut in the middle and arrange. Rub the top surface of the martabak with butter. Cut to taste.
