Tangzhong Milk Bread


TANGZHONG MILK BREAD

Bahan Tangzhong/ingredients for water roux:
40 gr tepung untuk roti. 40 gr bread flour. (Golden Eagle by PT. Bunga Sari Flour Mill)
200 ml air. 200 ml water.
Masak dalam wajan sambil diaduk hingga lembut. Simpan di lemari es selama 6 jam. Keluarkan dari lemari es 1 jam sebelum adonan dipakai. Miix until thick (water roux), transfer to a small container and let cool, cover and keep in the refrigerator for a minimum 6 hours. Take out of the refrigerator 1 hour before use.

Bahan/ingredients:
580 gr tepung untuk roti. 500 gr bread Flour. (Golden Eagle by PT. Bunga Sari Flour Mill)
11 gr ragi instan kering. 11 gr dry instant yeast. (SAF)
60 gr gula pasir. 60 gr granulated sugar.
12 gr garam. 12 gr salt.
20 gr susu bubuk. 20 gr milk powder.
260 gr susu segar hangat. 260 gr lookwarm fresh plain milk(38C). (Greenfield)
1 butir (50gr) telur. 1 egg (50 gr)
50 gr mentega tawar. 50 gr unsalted butter. (Anchor)

Olesan telur/Egg wash:
1 butir kuning telur. 1 egg yolk.
1 sdm susu segar. 1 tbsp fresh milk.
