Sourdough Breakfast Bun


SOURDOUGH BREAKFAST BUN

Bahan biang/starter ingredients:
30 gr sourdough starter.

100 ml air hangat suam. 100 ml lookwarm water.
100 gr tepung untuk roti. 100 gr bread flour.

Bahan roti/bread ingredients:
250 gr tepung untuk roti. 250 gr bread flour.
50 ml air mineral. 50 ml mineral water.
1 butir telur. 1 egg.
30 gr gula pasir. 30 gr granulated sugar.
4 gr garam himalaya. 4 gr himalayan salt.
30 gr mentega tawar. 30 gr unsalted butter.

Cara/method:
1. Membuat biang/how to make starter batter: tuang air dalam mangkuk sedang, masukkan sourdough starter, aduk dgn whisk, tambahkan tepung, aduk rata. Tutup dengan plastik dan kain serbet simpan selama 8 jam di ruangan yang cukup hangat. Pour water in a medium bowl, add the sourdough starter, stir with whisk, add flour, stir well. Cover with plastic and cloth napkin stored for 8 hours in a room that is quite warm.

2. Campur tepung, garam dan gula, sisihkan. Mix flour, salt and sugar, set aside.
3. Campur air dan telur, masukan adonan biang, aduk rata, tambahkan bahan kering, aduk, hingga kalis dengan scraper, tambahkan mentega, aduk hingga tercampur rata dengan tangan, bulatkan adonan, taruh di dalam mangkuk besar, tutup dengan plastik dan kain, istirahatkan ditempat yg cukup hangat hingga mengembang 3 kali (sekitar 3,5 jam). Mix water and eggs, add prickly dough, stir well, add dry ingredients, stir until smooth with scraper, add butter, stir until thoroughly mixed by hand, round the dough, put in a large bowl, cover with plastic and napkin, rest in a place that is warm enough to rise 3 times (about 3.5 hours).
4. Taburi meja kerja dengan tepung, tuang adonan dan bagi menjadi 12 bagian (sekitar @52gr) bulatkan, letakkan di atas tray yg dilapisi kertas roti dan ring untuk roti, istirahatkan selama 30 menit, tutup dengan kain serbet. Hingga adonan mengembang 2 kali. Sprinkle the work table with flour, pour the dough and divide into 12 parts (about @ 52gr) rounded, place it on a tray lined with baking paper and rings for bread, rest for 30 minutes, cover with cloth napkin. Until the dough rise 2 times.
5. Panaskan oven selama 20 menit dengan suhu 220C. Masukkan loyang dan panggang selama 15-20 menit dengan suhu 180C. Taruh diatas rak baking. Preheat the oven for 20 minutes at 220C. Add the baking pan and bake for 15-20 minutes at 180C. Put it on the baking rack.
6. Roti siap disajikan dengan olesan mentega dan pilihan sesuai selera anda. Bread is ready to be served with butter and choices according to your taste.
