PURPLE SWEET POTATO SOFT BREAD
Bahan/ingredients:
220 gr tepung utk roti. 220 gr bread Flour. (holden Eagle or Cakra Kembar Premium)
50 gr ubi ungu kukus, lumatkan. 50 gr purple sweet Potato, mashed
30 gr gula pasir. 30 gr granulated sugar.
3 gr ragi instant. 3 gr instant yeast.
160 ml susu hangat suam. 160 gr lukewarm milk.
1 butir telur kocok lepas. 1 beaten egg
3 gr garam. 3 gr salt.
25 gr mentega tawar. 25 gr unsalted butter.
Selai ubi ungu/purple sweet potato jam:
100 gr ubi ungu kukus, lumatkan. 100 gr steamed purple sweet potato.
20 gr gula pasir. 20 gr granulated sugar.
70 ml whipping cream hangat suam. 70 ml whipping cream.
Sejumput garam. A pinch of salt
1 gr larome Vanila Susu. 1 gr Larome vanilla Milk (or can be change with ¼ tsp vanilla extract)
Cara/method:
1. Campur dalam mangkuk besar tepung, gula, larome dan ragi aduk rata. Tambahkan garam aduk. Mix in a large bowl flour, sugar, larome and yeast mix well. Add salt to stir.
2. Tuang susu hangat dan aduk rata dgn scraper. Ulen adonan hingga kalis (sekitar 10 menit) boleh dengan mixer kecepatan sedang selama 7 menit. Pour lukewarm milk and mix well with a scraper. Knead the dough until smooth (about 10 minutes) can be with a mixer on medium speed for 7 minutes.
3. Tekan adonan perlahan dengan jari dan tambahkan mentega, ulen hingga kalis. Gently press the dough with your fingers and add butter, knead until smooth.
4. Bulatkan adonan dan simpan di wadah tertutup selama 60 menit. Sambil menunggu roti proofing, masak bahan isian. Round the dough and keep in a closed container for 60 minutes. While waiting for the proofing bread, cook the filling. .
5. Timbang adonan masing2 32-33gr. Pipihkan adonan dan bulatkan, istirahatkan 20 menit. Weigh the dough 32-33gr each. Flatten and round the dough, rest for 20 minutes.
6. Pipihkan adonan dan bulatkan, pipihkan lagi beri isian sebanyak 10 gr, letakkan di dalam loyang ukuran 18×18 selama 40 menit. Flatten the dough and make a round, flatten again, give the filling as much as 10 gr, place it in a 18x18cm baking dish for 40 minutes.
7. Panaskan oven 180C selama 20 menit. Taburi permukaan roti dengan tepung. Preheat oven to 180C for 20 minutes. Sprinkle the bread surface with flour.
8. Tutup bagian atas dengan aluminium foil. Masukkan ke oven dengan suhu 160C selama 25 menit dan lanjutkan 5 menit lagi, ambil aluminium nya. Cover the top with aluminum foil. Put it in the oven with a temperature of 160C for 25 minutes and continue another 5 minutes, take out the aluminum.
9. Keluarkan roti dari loyang, dan biarkan suhu ruang diatas baking rack. Remove the bread from the pan, and leave it to room temperature on the baking rack.
10. Roti siap disajikan. The bread ready to serve.
