Thousand Layered Mooncake


THOUSAND LAYERED MOONCAKE

Adonan putih/white dough:
125 gr tepung serbaguna. 125 gr all purpose flour.
35 gr mentega putih. 35 gr white butter.
15 gr gula halus. 15 gr castor sugar.
5 tetes cuka. 5 drops vinegar. (Apple vinegar)
60 ml air dingin. 60 ml cold water.
Cara/method:
Campur air dan cuka, aduk dan sisihkan. Campur bahan kering dan tambahkan air cuka sedikit demi sedikit sambil diuleni, tutup dengan plastik pembungkus dan diamkan 30 menit. Bagi adonan @ 36gr. (6 buah)
Mix water and vinegar, stir and set aside. Mix dry ingredients and add vinegar water gradually while kneading, cover with plastic wrap and let stand 30 minutes. Divide the dough @36gr. (6 pcs)

Adonan mentega/butter dough:
100 gr tepung serba guna. 100 gr all purpose flour.
60 gr mentega. 60 gr butter. (Anchor)
Pewarna makanan/food coloring:
Pink, ungu, orange, biru, hijau
Cara/method:
Campur semua bahan dengan penutup plastik dan diamkan 30 menit. Dan untuk @ 31gr beri pewarna. dan bagi adonan menjadi 5 bagian @ 6 gr. Bulatkan dan simpan di lemari es.

Isian ubi/yam filling:
20 gr butter. 20 gr butter. (Anchor)
200 gr ubi ungu, kukus dan haluskan. 200 gr purple yam, steam and mashed
20 gr tepung serbaguna 20 gr all purpose flour.
60 gr gula halus. 60 gr castor sugar
60 ml susu segar. 60 ml fresh milk.
Sejumput garam. A pinch of salt.
Cara/Method:
Blender ubi, susu, dan gula. Panaskan minyak masukkan taru dan aduk hingga mengental, matikan api. Tambahkan butter aduk rata dan diamkan hingga suhu ruang, timbang @25gr dan simpan di kulkas. Blend yam, salt, milk and sugar. Heat the butter, add the sweet potato and stir until thickened, turn off the heat. Add butter, mix well and let stand to room temperature, weigh @25gr and store in the refrigerator.

Isian telur asin/salted egg filling:
6 buah kuning telur asin rebus, haluskan. 6 pcs boiled salted egg yolks, mashed.
60 gr tepung serbaguna. 60 gr all purpose flour.
40 gr gula halus. 40 gr castor sugar.
30 gr butter. 30 gr butter. (Anchor)
½ sdt garam. ½ tsp salt.
Cara/method:
Sangrai tepung, matikan api, masukkan kuning telur asin dan bahan lain aduk hingga rata, dan timbang masing2 15gr, bulat dan simpan di kulkas. Roast the flour, turn off the heat, add salted egg yolk and other ingredients, stir until blended, and weigh 15 grams each, round and store in the refrigerator.

Cara membuat mooncake/how to make mooncake:
1. Bungkus isian kuning telur asin dengan adonan ubi dan simpan di kulkas. Wrap the salted egg yolk filling in sweet potato dough and store in the refrigerator.
2. Ambil adonan putih, ratakan dan beri 1 buah 5 adonan berwarna, bungkus dan rapatkan, gulung hingga tipis, gulung adonan menyamping, gulung tipis memanjang lalu gulung, tutup dengan plastik dan diamkan selama 30 menit di lemari es. 4. Panaskan oven 175C selama 20 menit, dan oven selama 27 menit. Preheat oven at 175C for 20 minutes, and oven for 27 minutes.
