Chocolate Rhum Pie with Almond Crust


CHOCOLATE RHUM PIE WITH ALMOND CRUST

Bahan/ingredients:
Untuk kulit pie – for crust pie:
1 butir telur ayam. 1 egg.
30 gr gula halus. 30 gr castor sugar.
100 gr mentega tawar. 100 gr unsalted butter. (Elle & Vire)
150 gr almond bubuk. 150 gr almond powder.
60 gr tepung protein sedang. 60 gr medium protein flour.
¼ sdt garam. ¼ tsp salt.

Isian coklat/Chocolate filling:
250 ml whipping cream. 250 ml whipping cream. (Greenfield).
300 gr dark chocolate compound cincang. 300 gr DCC, chopped. (TULIP)
¼ sdt garam. ¼ tsp salt.
2 sdm rhum bakar. 2 tbsp baked rhum.

Hiasan/garnish:
10 buah strawberry. 1 pcs of strawberry
1 pak raspberry. 1 pack raspberry.

Cara/method:
1. Membuat kulit pie/how to make pie crust:
-Mixer kecepatan sedang mentega dan gula halus hingga lembut, tambahkan telur, kocok hingga lembut, tambahkan campuran tepung almond, tepung dan garam, sambil kocok hingga tercampur rata. Beat with medium speed butter and castor sugar until soft, add egg and beaten until soft, gently add mixed almond powder, flour and salt and continue to stir well.
-Bungkus adonan kulit pie dgn plastik dan diamkan di lemari es selama 30 menit. Wrapping the pie crust dough and refrigerated for 30 minutes.
-Keluarkan adonan, pipihkan adonan sekitar 1 cm, dan masukkan di cetakan pie, simpan di lemari es 30 menit, take out the dough, flatten the dough around 1 cm with rolling pin and add into pie pan, refrigerate for 30 minutes.
-Panaskan oven 180C, tusuk2 dasar kulit pie dgn garpu, alasi dgn kertas roti dan letakan biji2an diatasnya, oven selama 15menit. Preheat oven 180C, prick the dough with fork, line a parchment paper over the dough and place dried bean on top and baking for 15 minutes.
-Angkat kertas roti dan biji2an, panggang kembali kulit pie selama 15 menit dgn turunkan suhu di 160C. Biarkan kulit pie dingin suhu ruangan. Take out the parchment paper and dried beans, return to bake for 15 minutes with reduce the heat on 160C. Let’s room temperature the crust.
2. Membuat isian coklat/how to cook chocolate filling:
-Panaskan whipping cream dan garam (tdk perlu mendidih). Heat whipping cream and salt (no need until boiling)
-Matikan api, masukkan cincangan coklat, aduk hingga tercampur rata, tambahkan rhum. Aduk. Biarkan hingga suhu turun 50%. Turn off the heat, put the chopped chocolate, stir until well blended, add the rum. Stir it up. Let the temperature drop 50%

3. Tuang adonan coklat ke kulit pie, hias dgn buah pilihan dan simpan di lemari es 2 jam sebelum dihidangkan. Pour the chocolate batter on the crust, garnish with your choice fruits and refrigerate for 2 hours before serving.
