BUGIS MANDI

Bahan/ingredients:
200 gr tepung beras/tepung ketan. 200 gr rice flour/glutinous rice flour.
370 ml santan (200 ml santan instan + 170 ml air). 370 ml coconut milk (200 ml coconut cream + 170 ml water)
30 ml juice pandan. 30 ml pandan juice.
¼ sdt garam. ¼ sdt salt.
60 gr tepung tapioka. 60 gr tapioca flour.

Daun pisang untuk membungkus secukupnya. Some banana leaf for wrapping

Bahan saus santan/coconut sauce ingredients:
400 ml santan kental. 400 ml coconut cream. (KARA)
5 gr garam. 5 gr salt.
30 gr tepung beras. 30 gr rice flour.
15 gr gula pasir. 15 gr granulated sugar.
2 lbr daun pandan. 2 pcs pandan leaves.

Isian/filling:
1 buah kelapa setengah tua, parut. 1 coconut medium ripe, grated.
100 gr gula kelapa, 100 gr coconut sugar
2 lbr daun pandan. 2 pcs pandan leaf.
½ sdt garam. ½ tsp salt.

Cara/method:
1. Membuat saus santan/how to make coconut sauce:
Campur semua bahan dan didihkan. Sisihkan. Combine all ingredients and cook. Set aside.
2. Membuat isian/how to cook filling:
Campur bahan isian dan aduk rata, masak dgn api kecil hingga matang. Tapi tidak boleh kering. Bila sudah dingin ambil ½ sdm makan dan bulatkan. Sisihkan. Mix filling ingredients and stir well, simmer until cooked. But don’t too dry. When it is cold take ½ tbsp and make a round. Set aside.
3. Cara membuat kulit/how to cook the dough:
Campur tepung beras, santan, pandan juice, garam ke dalam mangkuk, aduk hingga tepung larut kemudian masak dengan api kecil hingga matang dan adonan menjadi kalis (tidak lengket). Taruh di mangkuk lalu masukkan tepung tapioka, uleni hingga rata. Mix rice flour, coconut milk, pandan juice, salt into a bowl, stir until the flour dissolves then cook over low heat until cooked and the dough becomes smooth (not sticky). Put in a bowl then add tapioca flour, knead until blended.
4. Membuat Bugis Mandi/How to make Bugis Mandi:
Ambil adonan kulit, pipihkan dan beri isian, tutup adonan hingga rapat, lakukan hingga adonan habis.
Ambil daun pisang bentuk kerucut, beri saus dan masukkan bola bugis, tambahkan santan tutup daun dengan cara membuat lipatan. Letakkan ke dalam kukusan yg sdh dipanaskan dan kukus selama 15 menit. Take the skin dough, flatten and give the filling, cover the dough tightly, do it until the dough runs out.
Take a banana leaf in the shape of a cone, add sauce and put in the bugis ball, add the coconut milk and cover the leaves by making a fold. Place it in a heated steamer and steam for 15 minutes.
