Burung Puyuh Goreng – Fried Quail


BURUNG PUYUH GORENG – FRIED QUAIL

Bahan/ingredients:
5 ekor burung puyuh, bersihkan dan belah bagian dada. 5 quails, clean and part the chest.
Air kelapa dr 2 buah kelapa. Coconut water from 2 coconut.
3 batang sereh, keprak. 3 stalks lemongrass, crust.
2 cm lengkuas, keprak. 2 cm galangal, crust.
2 cm jahe, keprak. 2 cm ginger, crust
10 lbr daun jeruk. 10 pcs lime leaves.
2 lbr daun salam. 2 pcs bay leaf.

Bumbu/spices:
8 buah bawang merah. 8 pcs shallot.
6 siung bawang putih. 6 cloves garlic.
1 sdm ketumbar bubuk. 1 tbsp powdered coriander.
5 buah kemiri sangrai. 5 pcs candle nut, roasted.
2 cm kencur. 2 cm fragrant ginger.
3 cm kunyit, bakar dan kupas. 3 cm turmeric, roasted and pell off.
Garam secukupnya.

Adonan pencelup/dipping mixture:
5 sdm tepung beras, 5 tbsp rice flour.
1 sdm tepung tapioka. 1 tbsp tapioca flour.
1 sdt ketumbar. 1 tsp powdered coriander.
½ sdt kunyit bubuk. ½ tsp powdered turmeric.
½ sdt baking soda. ½ tsp baking soda.
1 butir telur. 1 egg.
Garam dan lada secukupnya. Some salt and pepper.
100-150 ml air es. 100-150 ml cold water.

Cara/method:
1. Rebus air kelapa bersama jahe, lengkuas, daun jeruk, daun salam dan sereh. Masukkan puyuh. Boiling coconut water with ginger. Galangal, lime leaves, bay leaf and lemongrass. Add quail.
2. Goreng ½ matang bawang merah, bawang putih, kencur. Campur dan haluskan dgn bumbu lain kecuali gara. Tumis hingga harum, masukkan ke dlm rebusan ayam. Half fried shallot, garlic, fragrant ginger. Mix and ground with other spices except salt. Saute until fragrant, add into boiling chicken.
3. Rebus puyuh hingga empuk 75%, masukkan garam, rebus hingga empuk. Angkat puyuh dan tiriskan. Boiling quail until tender. Lift up quil and strain.
4. Campur semua bahan pencelup. Mix all dipping ingredients.
5. Panaskan minyak, celupkan puyuh ke adonan pencelup dan masukkan ke minyak panas, goreng hingga keemasan, tiriskan. Heat the oil, dip the quail in the dipping mixture and put it in hot oil, fry until golden, drain.

6. Sajikan dgn lalapan dan sambal pilihan. Serve with salad and sambal your choice.
