Buntut Goreng Sambal Bongkot – Fried Oxtail with Sambal Torch Ginger

BUNTUT PENYET SAMBAL BONGKOT – PRESSED OXTAIL with SAMBAL TORCH GINGER

Bahan/Ingredient:
1000 gr buntut sapi. 1000 gr Oxtail
3 btg seledri (tanpa daunnya). 3 stem of celery, without leaves
2000 ml air panas. 2000 ml hot water.

Rempah utuh/whole herbs:
3 cm kayu manis. 3 cm cinnamon
4 bunga cengkeh. 4 cloves
½ sdm lada hitam. ½ tbsp black pepper
1 buah pala, keprak. 1 pcs nutmeg, crush.
2 sdt garam (sesuai selera). 2 tsp salt (to taste)
2 cm jahe, keprak. 2 cm ginger, crust
1 bongkah utuh bwg putih. A bulb of garlic
2 cm kencur. 2 cm aromatic ginger
6 buah kapulaga. 6 pcs cardamon

Pelapis/coating:
2 btr telur kocok lepas. 2 pcs beaten eggs
5 sdm tepung beras. 5 tbsp rice starch.
2 sdm tepung maizena. 2 tbsp cornstarch.
Garam dan lada secukupnya. Some salt and pepper.

Pelengkap/condiment:
Nasi. Rice.
Lalapan. Raw veggie.
Sup. Soup.
Bawang putih goreng. Fried garlic.
Tahu goreng. Fried tofu.

Sambal bongkot/Sambal Torch Ginger:
2 btg bongkot/kecombrang organic, iris halus bagian yg putih saja. 2 stalk organic torch ginger, finely slice the white part.
10 buah cabe rawit merah organic. 10 pcs organic red chili padi.
8 buah bawang merah, goreng ½ matang. 8 pcs shallot, fried half cook.
3 siung bawang putih, goreng ½ matang. 3 cloves garlic, fried half cook.
¼ sdt garam laut. ¼ tsp sea salt.
3 buah jeruk limau. 3 pcs lime.
¼ sdt terasi bakar. ¼ tsp roasted shrimp paste.

Cara/Method:
1. Rebus buntut 10 menit, buang airnya, didihkan air lagi, masukkan buntut bersama bumbu yg sdh dimasukkan dlm kantung bumbu kecuali garam, masak hingga empuk. Boil water, add oxtail for 10 minutes, pour out the water. Boil water add oxtail and enter the whole seasoning that has been put into the spice pouch, boil until oxtail tender.
2. Campur tepung beras, maizena, garam dan lada. Combine rice starch, corn starch, salt and pepper.
3. Panaskan minyak. Celupkan buntut pada kocokan telur dan gulingkan pada bahan tepung dan masukkan serta goreng buntut hingga kecoklatan (aku hr ini tanpa telur). Preheat oil, dipping oxtail into beaten egg and roll it into mixed flour, add oxtail into hot oil and fried until golden. (Today I don’t use the egg)
4. Haluskan semua bahan sambal. Ground all sambal ingredients.
5. Sajikan buntut goreng dgn cara memenyet nya diatas sambal bongkot dan pelengkapi. Serving fried oxtail with pressed on sambal torch ginger and condiment.

KRECEK PEDAS – SPICY COW SKIN

Bahan/ingredients:
500 ml santan encer dr ½ butir kelapa. 500 ml light coconut milk from ½ pcs coconut
200 ml santan kental dr ½ butir kelapa. 200 ml thick coconut milk from ½ pcs coconut.
2 lbr daun salam. 2 pcs bay leaves
2 cm lengkuas , digeprek. 2 galangal, crust
1 btg sereh, keprak. 1 stalk lemongrass, crust.
30 buah cabe rawit. 30 pcs chilipadi
30 gr kacang tolo. 30 gr red beans.

Bumbu halus/ground spices:
8 buah bawang merah. 8 pcs shallot
5 siung bawang putih. 5 cloves garlic
3 sdm cabe merah halus. 3 tbsp ground red chili.
3 butir kemiri. 3 pcs candle nut.
1 sdt trasi. 1 tsp shrimp paste.
Garam secukupnya. Some salt.
½ sdm gula merah sisir. ½ tbs brown sugar.
¼ sdt jintan. ¼ tsp cumin
¼ sdt lada. ¼ tsp pepper
1 sdt ketumbar bubuk. 1 tsp coriander
powder.

Cara/method:
1. Rebus air santan encer bersama jahe, lengkuas, daun jeruk, daun salam dan sereh. Masukkan krecek. Boiling light coconut milk with ginger, galangal, lime leaves, bay leaf and lemongrass. Add cow skin.
2. Goreng ½ matang bawang merah, bawang putih, kencur. Campur dan haluskan dgn bumbu lain kecuali garam. Tumis hingga harum, masukkan ke dlm rebusan krecek ddan kacang tolo. Half fried shallot, garlic, fragrant ginger. Mix and ground with other spices accept salt. Saute until fragrant, add into boiling chicken leg.
3. Rebus hingga krecek empuk. masukkan garam. Boiling cow skin and add chilipadi until tender and salt.

SATE DAGING BUMBU RUJAK – BEEF SATAY RUJAK SPICES

Bahan/ingredients:
500 gr daging sapi kisi/sengkel, iris setebal 3 ml. 500 gr beef chunks, slice 3 ml.
½ sdt nanas parut. ½ tsp grated pineapple.
1 sdm tepung sagu. 1 tbsp cornstarch

Bumbu perendam sate/satay marinate:
2 sdm cabe merah halus. 2 tbsp ground red chili
½ sdm air asam jawa. ½ tbsp java tammarind water
4 siung bawang putih. 4 cloves garlic.
8 butir bawang merah. 8 pcs shallot.
4 lbr daun jeruk, iris halus. 4 pcs line leave, finely slice,
1 sdt garam. 1 tsp salt.
1 sdt ketumbar bubuk. 1 tsp coriander.
1 pcs sere, iris halus. 1 pcs lemongras, finely slice. 1 cm jahe.
4pcs kemiri. 4 pcs candle nut
2 sdt gula merah. 2 tsp brown sugar.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.
2 sdm santan kental. 2 tbsp coconut milk. (kara)

Bumbu kacang/peanut sauce:
350 ml air panas. 350 ml hot water.
150 gr kacang tanah goreng. 150 gr fried peanut.
Kecap manis secukupnya. Some dark sweet soy sauce.
Garam dan lada bubuk secukupnya. Some salt and pepper.
Minyak sayur secukupnya utk menumis. Some veggie oil for saute.
6 butir bawang merah. 6 pcs shallot.
3 siung bawang putih. 3 cloves garlic.
4 buah cabe merah besar, iris. 4 pcs red chili.
2 butir kemiri 2 pcs candle nut.

Pelengkap/condiment:
Bawang merah secukupnya, slice. Some shallot, iris.
Cabe rawit secukupnya, iris. Some red chili padi, slice.
Lontong atau nasi. Rice cake or rice.
Serundeng. Roasted grated coconut.
Jeruk nipis/limau utk saus kacang. Lime for peanut sauce.

Cara/method:
1. Lumuri daging dgn dgn parutan nanas dan tepung sagu. Marinate beef with ground pineapple and cornstrach.
2. Haluskan semua bumbu perendam dan tumis hingga matang. Diamkan suhu ruang. Ground all marinate afn saute until cooked. Lets room temperature.

3. Campur bumbu perendam dgn daging. Tusuk dgn tusuk sate dan diamkan di lemari es selama 1 jam. Mix marinate with beef. Skewer beef and refrigerate for 1 hour.

4. Membuat saus kacang. How to make peanut sauce:
Goreng ½ matang bawang merah, bawang putih dan cabe kemudian blender hingga halus dgn bahan lain, lalu tumis hingga matang benar, (kecuali kecap manis). Sisihkan. ½ cooked shallot, garlic and chili, and than blender until smooth, saute until cooked. (Except dark sweet sauce)Set aside.
5. Panggang sate hingga matang. Grilled satay until cooked.

6. Campur saus kacang secukupnya dgn kecap manis dan air jeruk nipis. Mix some peanut sauce with dark sweet soy sauce and lime juice
7. Sajikan bersama pelengkap seperti pada foto. Serve with condiment like on picture.

NOTE:
1. Nanas parut tdk boleh melebihi takaran krn akan merusak texture dahing sapi. Don’t use ground pineaple over the mixture because it will damage the texture of meat /crush the meat.
2. Tanpa bumbu kacangpun daging sate ini adh enak sekali. Without peanut sauce this satay verry delicious.

Sup Iga Sapi – Beef Ribs Soup

Proses menggunakan slow cooker selama 3 jam. Procces using slow cooker for about 3 hours.

Bahan/ingredients:
1500 gr iga sapi. 1500 gr beef ribs.
2500 ml air panas. 2500 ml hot water.
2 sdt garam. 2 tsp salt

Bumbu utuh/whole spices:
2 cm jahe. 2 cm ginger.
1 buah cabe jawa. 1 pcs java chili.
5 butir kapulaga. 5 pcs cardamom.
5 butir adas. 5 pcs fennel.
3 cm kayumanis. 3 cm cinnamon.
4 buah bunga cengkeh. 4 pcs cloves.
10 btr lada hitam. 10 pcs black pepper corn.
1 lbr kantong bumbu. 1 pcs spices bag.

Bumbu halus/ground spices:
15 siung bawang putih. 15 cloves garlic.
10 buah bawang merah. 10 pcs shallot.
1 btr biji pala. 1 pcs nutmeg.

Pelengkap/condiments::
Nasi putih. Rice.
1 buah tomat segar, potong. 1 pcs fresh tonato, cut.
2 buah wortel, kupas, potong dan rebus. 2 pcs carrot, peel off, cut and boiling.
1 buah kentang besar, kupas, potong dan rebus. 1 pcs potato big size, peel off, cut and boiling.
1 buah brokoli, potong dan rebus. 1 pcs broccoli, cut and boiling.
2 btg daun bawang, iris. 2 stalks spring onion, slice.
Bawang merah goreng secukupnya. Some fried shallot.
Bawang putih goreng secukupnya. Some fried garlic.
Seledri, iris. Celery, slice.
Sambal.
Jeruk nipis secukupnya. Some lime.

Cara/method:
1. Masukkan bumbu utuh kedalam kantung bunbu. Add all whole spices into spice bag.
2. Masukkan kantong bumbu dan iga kedlm slow cooker. Add spices bag and beef ribs into slow cooker.
3. Masukkan air mendidih ke dlm slow cooker dan setting di high selama 3jam. Add hot warer into slow cooker and setting high for 3 hours.
4. Goreng ½ matang bawang merah dan bawang putih, haluskan bersama pala dan masukkan ke dlm slow cooker, aduk. Half fried shallot and garlic, ground with nutmeg and add into slow cooker, stir.
5. Ketika iga empuk masukkan garam dan aduk. When the ribs tender add salt and stir.
6. Sup iga siap disajikan panas bersama pelengkap. Beef ribs soup ready to serving hot with the condiment.

DAGING SAPI LADA HITAM – BEEF BLACK PEPPER

Bahan/ingredients:
300 gr daging sapi, potong sesuai selera. 300 gr beef, cut as your desire.
½ sdt nanas parut. ½ tsp grated pineapple.
1 buah bwg bombay, potong. 1 pcs onion, cut.
4 siung bwg putih, keprak. 4 cloves garlic, crust.
1 buah cabe merah besar, buang biji, potong.1 pcs red chili, seedless, cut.
1 buah cabe hijau besar, buang biji, potong. 1 pcs green chili, seedless, cut.
2 sdm minyak sayur. 2 tbsp veggie oil.

Bumbu/seasoning:
1 sdm kecap manis. 1 tbsp dark sweet soy sauce.
½ sdm saus tiram. ½ tbsp oyster saus.
½ sdm kecap cap jamur. ½ tbsp mushroom soy sauce.
½ sdm kecap raja rasa. ½ tbsp raja rasa soy sauce.
½ sdm saus ingris. ½ tbsp worchester sauce.
1 sdt lada hitam kasar. 1 tsp rough black pepper.

Cara/method:
1. Bumbui daging dgn ½ sdt nanas parut, 1 sdt kecap asin, ⅛ sdt lada hitam dan 1 sdm tepung sagu. Diamkan semalam. Marinate with ½ tsp grated pineapple, 1 tsp soy sauce, ⅛ tsp black pepper dan 1 tbsp corn strach.
2. Panaskan minyak. Masukkan bwg putih tumis hingga harum, masukkan daging dan tumis hingga berubah warna, Heat oil. Add garlic saute until garlic, add beef and saute until changing color.
3. Masukkan semua bahan dan bumbu, tumis selama 5 menit. Add the beef and seasoning, saute for 5 minutes.
4. Sajikan bersama nasi. Serve with rice.

SATE KELAPA MADURA – MADURESE BEEF COCONUT SATAY

Untuk 30 tusuk. For 30 skewers.

Bahan/ingredients:
400 gr daging sapi has luar, dipotong-potong. 400 gr sirloin, cut.
½ sdt garam. ½ tsp salt.
¼ sdt lada bubuk. ¼ tsp pepper powder.
½ sdt ketumbar. ½ tsp coriander.
¼ sdt jintan bubuk. ¼ tsp cumin powder.
2 sdt nanas parut. 2 tsp grated pineapple.
Tusuk sate secukupnya. Some skewer.
200 gr kelapa parut kasar. 200 gr roughly grated coconut.

Bumbu utk kelapa/spices for coconut:
10 btr bawang merah. 10 pcs shallot.
5 siung bawang putih. 5 cloves garlic
4 cm kunyit bakar. 4 cm roasted turmeric.
2 sdt ketumbar. 2 tsp coriander.
1½ sdt garam. 1½ tsp salt.
½ sdm gula pasir. ½ tbsp sugar.

Saus kacang/peanut sauce:
200 gr kacang tanah kulit, digoreng, haluskan. 200 gr peanut without skin, fried
4 buah cabe merah keriting, 4 pcs curly red chili.
4 buah bwg merah. 4 pcs shallot.
2 buah bwg putih. 2 pcs garlicyŤP
50 gr gula merah. 50 gr brown sugar.
1 sdt garam. 1 sdt salt.
300 ml air panas. 300ml hot water.

Pelengkap/complimentary:
Bawang merah iris secukupnya. Some sliced shallot.
Kecap manis secukupnya. Some dark sweet soy sauce.
Cabe rawit secukupnya. Some chili padi.
Jeruk nipis secukupnya. Some lime juice.
Lontong atau nasi. Rice cake or rice.
Srundeng.

Cara/method:
1. Lumuri daging sapi dgn garam, ketumbar, jintan, nanas parut dan lada. Diamkan 1 jam atau semalam di lemari es. Marinate beef with salt, coriander, cumin, grated pineapple and pepper. Refrigerate for 1 hour or a nite.
2. Tusuk daging sapi dgn tusuk sate. Sisihkan. Skewer the beef, set aside.
3. Membuat kelapa berbumbu/how to make spiced coconut: haluskan bumbu dan aduk rata pada kelapa parut. Grind the spice and stir well with grated coconut.
4. Bungkus sate daging dgn kelapa berbumbu. Sisa kelapa berbumbu sangrai kering utk srundeng. Cover beef satay with spiced coconut. The rest of spiced coconut, roasted to dry to srundeng.

5. Bakar sate hingga matang dan harum. Grill satay till well done and fragrant.

6. Membuat saus kacang/how to cook peanut sauce: goreng cabe, bwg merah dan bwg putih, tiris. Masukkan semua bahan saus kacang pada blender dan proses hingga halus. Frying chili, shallot and garlic. Enter and process all peanut sauce ingredients with blender til smooth.
7. Sajikan sate daging kelapa bersama bumbu kacang yg di campur dgn kecap manis & jeruk nipis serta pelengkapnya. Serve beef coconut satay with peanut sauce mix with dark sweet soy sauce & lime and complimentary.

Daging Sapi Goreng Saus Telur Asin – Fried Beef with Salted Egg Sauce

DAGING SAPI GORENG SAUS TELUS ASIN – FRIED BEEF with SALTED EGG SAUCE

Bahan/ingredients:
400 gr daging sapi lulur luar/gandik, iris tipis dan pukul. 400 gr sirloin, finely slice and poke.
1 btr telur. 1 pcs egg.
20 lbr daun kare. 20 pcs curry leaf
30 gr tepung terigu. 30 gr flour.
30 gr tepung maizena. 30 gr corn flour.
20 gr tepung beras. 20 gr rice flour.

Bumbu perendam/marinade:
1 sdm nanas parut. 1 tbsp grates pineapple.
4 siung bawang putih, parut. 4 cloves grated garlic.
½ sdt jahe bubuk. ½ tsp ginger powder.
½ sdt ngohiong bubuk. ½ tsp five spices powder.
1 sdm kecap raja rasa. 1 tbsp raja rasa soy sauce
2 sdm kecap asin. 2 tbsp soy sauce.
¼ sdt lada bubuk. ¼ tsp pepper powder
½ sdt ketumbar bubuk. ½ tsp coriander powder.
2 sdt madu. 2 tsp honey.

Taburan/topping:
Biji wijen sangrai. Roasted sesame seed
Paprika merah secukupnya, potong kotak kecil. Some red bell pepper, cut small square

Bahan saus/sauce ingredients:
3 sdm mentega tawar. 3 tbsp unsalted butter.
4 btr kuning telur asin rebus, hancurkan. 4 pcs boiled salted egg, ground.

Cara/method:
1. Campur bumbu perendam dan daging sapi. Mix and marinade beef.
2. Masukkan telur dan aduk rata, diamkan 30 menit di lemari es. Add egg and stir well, refrigerate for 30 minutes.
3. Campur bahan tepung dan lumurkan pada daging berbumbu hingga rata. Mix the flour and cover well the beef.
4. Panaskan minyak. Masukkan satu per satu daging sapi dan goreng hingga keemasan, tiriskan. Head oil. Add one by one the beef and frying until golden, strain.
5. Membuat saus telor asin/how to cook salted egg sauce:
**Panaskan mentega, masukkan daun kare dan telur asin, aduk rata hingga lumer. Masukkan daging goreng aduk rata. Head butter, add curry leaf and salted egg, stir well until melted. Add fried beef, stir well.
**Letakkan diatas piring saji. Taburi biji wijen dan paprika. Place on dish. Sprinkle with sesame seed and red bell pepper.
