COTO MAKASSAR

Bahan/ingredients:
100 gr babat sapi. 100 gr cow tripe.
100 gr hati sapi. 100 gr cow liver.
200 gr daging sapi. 200 gr beef.
100 gr paru sapi. 100 gr cow lungs
100 gr lidah sapi. 100 ox-tongue.
6 cm kayu manis. 6 cm cinnamon..
3 cm jahe. 3 cm ginger.
3 batang sereh, keprak.3 stalks lemongrass.
3 sdm minyak untuk menumis. 3 cm oil for saute.
2 ltr air cucian beras (cucian ke 2 dan 3). 3 ltr washed rice water (the 2 and 3 washed rice)
4 sdt garam, 4 tsp salt.
2 sdt gula. 2 tsp sugar.

Taburan/topping::
Bawang merah goreng. Fried shallot.
Seledri. Scelery.
Buras. Savory rice cake.
Jeruk nipis. Lime
Sambal tauco. Sambal fermented soybean: cabe rawit, taoco, gula, bwg putih dan air. (Didihkan). cayenne pepper, fermented soybean, sugar, white and water. (Boiling)

Bumbu halus/ground spices:
10 btr bawang merah. 10 pcs of shallot.
8 siung siung putih. 8 cloves of garlic
2 cm jahe. 2 cm ginger.
1 sdm ketumbar bubuk. 1 tbsp coriander.
¼ sdt jinten bubuk. ¼ tap cumin.
½ sdt lada bubuk. ½ tsp pepper
50 gr kacang tanah tanpa kulit, sangrai. 50 gr roasted skinless peanut.
2 sdm taoco. 2 tbsp fermented soy bean.

Cara/method:
1. Rebus air bersama jahe hingga mendidih, masukkan semua bahan sapi, rebus selama 15 menit. Buang airnya, tiriskan dan potong kotak. Boiling water with ginger and add all beef, boiling for 15 minutes. Pour out the water, drain the beef and cut cube.
2. Didihkan air cucian beras, masukkan sereh dan kayu manis. Boiling washed rice water, add lemongrass and cinnamon.
3. Tumis bumbu halus hingga harum.
saute ground spices until fragrant.
4. Bila sudah mendidih masukkan bahan sapi dan bumbu tumis. Aduk. When boiling, put in the ingredients of the cow and stir-fry seasoning
5. Masak hingga empuk dgn api kecil, masukkan gula dan garam. (Aku pakai Slow Cooker). Cook until tender with low heat, add sugar and salt. (I used Slow Cooker)
6. Sajikan dgn buras/nasi, jeruk limau dan sambel tauco dan taburi dgn seledri dan bawang goreng. Serve with buras/rice lime and tauco sauce and sprinkle with celery and fried

Note:
Buras adalah lontong khas Makassar dgn rasa gurih bersantan. Buras is a typical Makassar rice cake with a coconut-flavored savory taste.

Sate Sapi Lilit Bambu – Beef Satay Wrapped in Bamboo

SATE SAPI LILIT BAMBU – BEEF SATAY WRAPPED IN BAMBOO

Bahan/ingredients:
500 gr daging giling. 500 gr ground beef.
1 stik fiber cream. 1 stick fiber cream.

10 gr tepung baso. 10 gr beef ball flour. (TFM)
14 tusuk sate bambu secukupnya. Some bamboo skewer.

Bumbu halus/ground spices:
4 siung bawang putih. 4 cloves of garlic
8 buah bawang merah. 8 pcs shallot.
2 butir kemiri. 2 pcs candlenut.
3 cm lengkuas, parut. 3 cm galangal, grated.
2 buah cabe kriting merah, iris. 2 pcs curly red chili, slice.
2 sdt ketumbar bubuk. 2 tsp coriander powder.
1 sdt garam. 1 tsp salt.
½ sdt lada bubuk. ½ tsp pepper powder.
½ sdm gula merah. ½ tbsp brown sugar.
4 lbr daun jeruk, iris halus. 4 pcs lime leaf, finely grated.

Bahan olesan/glaze ingredients:
3 sdm kecap manis. 3 tbsp sweet dark soy sauce. (Tropicana)
2 sdm madu. 2 tbsp honey. (Tropicana)
½ buah jeruk nipis. ½ pcs lime.

Sambal kecap/sambal soy sauce:
Kecap manis sesuai selera. Some sweet dark soy sauce. (Tropicana)
Bawang merah secukupnya. Some shallot.
Cabe secukupnya. Some chili.
Air jeruk nipis secukupnya. Some lime juice.

Cara/method:
1. Haluskan dan tumis bumbu hingga harum. Ground and saute the spices until fragrant.
2. Aduk rata daging dlm mangkuk bersama bumbu halus, dan bahan lain. Stir well ground beef on bowl with ground spices and other ingredients.
3. Timbang adonan per 35-40 gr dan balutkan pada tusuk sate, lakukan hingga bahan habis. Weight 35-40gr of meat dough and wrap it on a skewer, until the ingredients run out.

4. Panggang sate diatas bara, atau dgn teflon atau dgn air fryer (160C selama 15 menit) hingga 80% matang. Oles dgn bahan olesan bbrp kali sambil di panggang hingga matang. Grill satay over coals, or with Teflon or with air fryer (160C temperature for 15 minutes) until up to 80% cooked. Spread with several times of rubbing while grilling until cooked.

5. Sajikan dgn lontong atau nasi dan sambal kecap bawang. Serve with rice cake or rice and sambal sweet dark soy sauce shallot.

Note:
Fiber cream adalah pengganti santan. Fiber cream is a substitute for coconut milk

Sausage Goulash


SAUSAGE GOULASH

Bahan/ingredients:
5 buah Bockwurst panggang, iris serong. 5 pcs grilled Bockwurst, oblique. Kanzler.

2 buah wortel, kupas dan potong. 2 pcs carrot, peel and cut.
2 lbr roti tawar, disobek. 2 pcs toast bread, pull a part.
200 gr jagung beku. 200 gr frozen corn.
200 gr kacang polong beku. 200 gr frozen green bean.
1 buah bawang bombay ukuran besar, potong. 1 pcs onion big size, cut.
6 siung bawang putih, cincang kasar. 6 pcs of garlic, coarsely chop.
2 buah bawang merah, cincang kasar. 2 pcs shallot, coarsely chop.
40 gr mentega tawar. 40 gr unsalted butter. elle & Vire.
1500 ml air mineral/kaldu daging sapi. 1500 ml mineral water/beef stock.

Bumbu/seasoning:
4 sdm pasta tomat. 4 tbsp tomato paste.
1 sdt lada hitam tumbuk kasar. 1 tsp coarsely black pepper powder.
1 buah pala, haluskan. 1 pcs nutmeg, ground.
1 lbr bayleaf. 1 pcs bayleaf.
1 sdm mustard. 1 tbsp mustard.
Garam secukupnya. Some salt.

Pelengkap/condiment:
Pasta.
Kentang. Potato
Roti bawang. Garlic bread
Krim asam secukupnya (sesuai selera). Some sour cream. (Optional). Elle & Vire
Seledri cincang. Chopped celery

Cara/method:
1. Panaskan mentega. Tumis bawang putih dan bawang merah, hingga harum, masukkan bawang bombay dan bumbu, aduk. Heat butter. Saute garlic and shallot until fragrant, add onion and seasoning, stir.
2. Masukkan sosis, kacang polong, wortel dan jagung. Add sausage and other ingredients.

3. Masukkan roti, aduk dan kecilkan api biarkan hingga mengental.
6. Hidangkan dgn pelengkap pilihan dan beri krim asam diatasnya serta taburi seledri. Serve with condiments your choice and add sour cream over the dish and sprinkle with celery.

Rendang Daging Wagyu – Wagyu Beef Rendang

RENDANG DAGING WAGYU – WAGYU BEEF
RENDANG

Bahan/ingredients:
1000 gr daging wagyu lulur luar, potong sesuai selera. 1000 gr wagyu beef silver side, cut as desire.
400 gr kentang rendang, cuci. 400 gr rendang potatoes, wash.
1000 ml santan kental dr 4 buah kelapa tua. 1000 ml coconut milk from 4 pcs ripe coconut.
4 batang sereh. 4 stalks lemongrass.
4 biji asam kandis. 4 pcs Garcinia xanthochymus.

4 buah pekak. 4 star anis.
5 lembar daun jeruk. 5 pcs lime leaves.
4 lembar daun salam. 4 pcs bay leaf
2 lembar daun kunyit, potong 4cm dan sobek. 2 pcs turmeric leaves, cut on 4 cm and pull away.
300 gr kelapa parut sangrai. 300 gr roasted grated coconut.

Bumbu halus/ground seasoning:
30 buah bawang merah. 30 pcs shallot.
15 siung bawang putih. 15 cloves garlic.
100 gr cabe merah (kriting lbh enak). 100 gr red chili (curly chili better)
3 cm Jahe. 3 cm ginger.
5 cm lengkuas. 5 cm galangal.
1 sendok teh merica bubuk. 1 tsp pepper powder.
2 sdm gula merah. 2 tbsp brown sugar
Garam secukupnya (masuk bila daging sdh empuk 75%). Some salt (add the last time when the beef tender 75%)
6 sdm minyak sayur utk menumis. 6 tbsp veggie oil for stir fry

Cara/method:
1. Goreng ½ matang dan haluskan bawang merah, bawang putih, cabe, jahe, asam kandis dan lengkuas. Half fried and ground shallot, garlic, chili, ginger and galangal.
2. Panaskan minyak. Tumis bumbu halus dan bumbu lainnya hingga harum, masukkan daging sapi, aduk hingga daging berubah warna, masukkan kentang dan masak hingga bumbu mulai kering. Heat oil. Saute ground spices and other spices until fragrant, add beef, stir well until beef changing color, add potato and cook reduce water of spices.
3. Masukkan santan kental, masak hingga mulai tampak berminyak, lanjutkan masak dgn api kecil dan sesekali diaduk spy tdk gosong. Add heavy coconut cream, stir until oily, continue simmer and occasionally stir to prevent from burning.
4. Masukkan kelapa sangrai. Aduk terus dan masak dgn api kecil. (masak memakan waktu minimal 4-5 jam). Add roasted coconut. Stir and simmer. (cooking rendang need minimal 4-5 hour).

Note:
1. Santan segar bisa diganti 2 bungkus kental instan + 100 ml air. Fresh coconut milk can be change with 2 pack coconut milk instant + 100 ml water. KARA
2. Cara ku, setelah mendidih aku pindahkan ke slowcooker. Masak hingga empuk dan air menyusut. Dan sesekali diaduk (Sekitar 4-5 jam)My way, after boiling I move to slow cooker. Cook until tender and reduce the water. And stirring occasionally (Around 4-5 hours)
3. Utk daging wagyu cukup dimasak 2 diproses 2 jam saja dgn slow cooker. For wagyu beef process just 2 hour using slow cooker.

Rib Eye With Brown Sauce

RIB EYE WITH BROWN SAUCE

Bahan/ingredients:
4 potong rib eye Australia, taburi dgn rempah utk steak. (@250 gr per porsi). 4 pcs Australia rib eye, sprinkle with steak spices. (@250gr per each)

Pelengkap/condiment:
100 gr kacang polong beku. 100 gr frozen peas.
100 gr jagung beku. 100 gr frozen corn.
100 gr wortel, potong dadu kecil dan rebus. 100 gr carrot, small cube and boiling.
3 buah kentang ukuran besar, rebus dan tumbuk. 3 pcs potato big size, boiling and mashed,
50 gr mentega tawar. 50 gr unsalted butter. (Elle & Vire)

Bumbu saus coklat/ brown sauce ingredients:
1 buah bawang bombay ukuran kecil cincang. 1 pcs onion small size, chop.
3 siung bawang putih cincang, 3 cloves chopped garlic.
2 sdt kecap inggris. 2 tsp worchester sauce.
1 sdm kecap manis. 1 tbsp dark sweet soy sauce.
1 sdm saus tiram. 1 tbsp oyster sauce.
1 sdm saus tomat. 1 tbsp tomato sauce.
1 sdt lada hitam kasar. 1 tsp roughly ground black pepper.
⅛ sdt jintan bubuk. ⅛ tsp caraway powder.
1 sdm gula merah. 1 tbsp brown sugar.
½ sdt garam. ½ tsp salt.
¼ buah pala. ¼ nutmeg
2 buah bunga cengkeh. 2 pcs cloves.
350 ml kaldu sapi. 350 ml beef stock.
25 gr tepung terigu. (Sy pakai teung keto). 25 gr flour. (I used Keto flour)
30 gr mentega tawar. 30 gr unsalted butter. (Elle & Vire)

Cara/method:
1. Tumis kacang polong, jagung, wortel dgn 20 gr mentega tawar, beri garam dan lada hitam secukupnya. Sisihkan. Saute peas, corn and carrot with unsalted butter, add some salt and black pepper. Set aside.
2. Campur kentang tumbuk dgn 30 gr mentega tawar, tambahkan garam dan lada hitam secukupnya. Combine mashed potato with 30 gr unsalted butter, add some salt and black pepper.
3. Panggang rib eye dgn kematangan yg disesuaikan dgn selera. Grill rib eye with your customized cook.
4. Membuat saus coklat/how to cook brown sauce:
Panaskan mentega, tumis bawang putih dan bawang bombay hingga harum, masukkan tepung, aduk cepat, masukkan kaldu dan bumbu, aduk dan biarkan mengental, heat butter, saute garlic and onion until fragrant, add flour, stir fastest, add beef stock and seasoning, stir and lets it thickens
5. Tata rib eye bakar, pelengkap dan siram dgn saus coklat diatasnya. Place grilled rib eye, condiment and pour brown sauce over the rib eye.

Note:
Aku mempergunakan air fryer utk memanggang rib eye, 200C selama 5 menit tiap sisinya. Dan menghasilkan kematangan “medium” seperti yg aku harapkan. I used air fryer to cook the rib eye, 200C 5 minutes on each side, to produce “medium” done like what I want.

Pepes Sumsum Sapi – Beef Bone Marrow Wrapped in Banana Leaf

PEPES SUMSUM SAPI BEEF BONE MARROW WRAPPED IN BANANA LEAF

Bahan/ingredients:
2 pak sumsum sapi, cuci dan potong kecil. 2 pack beef bone marrow, wash and small cut (@200gr/pack)
4 buah bawang merah. 4 pcs shallot.
2 siung bawang putih. 2 cloves garlic.
Garam dan lada secukupnya. Some salt and pepper.
Daun pisang utk membungkus. Banana leaf for wrapping.

Cara/method:
1. Panaskan kukusan dan lap daun pisang, sisihkan. Preheat steamer and wiping banana leaf, set aside.
2. Campur sumsum dan bumbu. Combine bone marrow and seasoning.
3. Bungkus dgn daun pisang dan kukus selama 30 menit. Wrapping with banana leaf and steam for 30 minutes.

Buntut Goreng Sambal Bongkot – Fried Oxtail with Sambal Torch Ginger

BUNTUT PENYET SAMBAL BONGKOT – PRESSED OXTAIL with SAMBAL TORCH GINGER

Bahan/Ingredient:
1000 gr buntut sapi. 1000 gr Oxtail
3 btg seledri (tanpa daunnya). 3 stem of celery, without leaves
2000 ml air panas. 2000 ml hot water.

Rempah utuh/whole herbs:
3 cm kayu manis. 3 cm cinnamon
4 bunga cengkeh. 4 cloves
½ sdm lada hitam. ½ tbsp black pepper
1 buah pala, keprak. 1 pcs nutmeg, crush.
2 sdt garam (sesuai selera). 2 tsp salt (to taste)
2 cm jahe, keprak. 2 cm ginger, crust
1 bongkah utuh bwg putih. A bulb of garlic
2 cm kencur. 2 cm aromatic ginger
6 buah kapulaga. 6 pcs cardamon

Pelapis/coating:
2 btr telur kocok lepas. 2 pcs beaten eggs
5 sdm tepung beras. 5 tbsp rice starch.
2 sdm tepung maizena. 2 tbsp cornstarch.
Garam dan lada secukupnya. Some salt and pepper.

Pelengkap/condiment:
Nasi. Rice.
Lalapan. Raw veggie.
Sup. Soup.
Bawang putih goreng. Fried garlic.
Tahu goreng. Fried tofu.

Sambal bongkot/Sambal Torch Ginger:
2 btg bongkot/kecombrang organic, iris halus bagian yg putih saja. 2 stalk organic torch ginger, finely slice the white part.
10 buah cabe rawit merah organic. 10 pcs organic red chili padi.
8 buah bawang merah, goreng ½ matang. 8 pcs shallot, fried half cook.
3 siung bawang putih, goreng ½ matang. 3 cloves garlic, fried half cook.
¼ sdt garam laut. ¼ tsp sea salt.
3 buah jeruk limau. 3 pcs lime.
¼ sdt terasi bakar. ¼ tsp roasted shrimp paste.

Cara/Method:
1. Rebus buntut 10 menit, buang airnya, didihkan air lagi, masukkan buntut bersama bumbu yg sdh dimasukkan dlm kantung bumbu kecuali garam, masak hingga empuk. Boil water, add oxtail for 10 minutes, pour out the water. Boil water add oxtail and enter the whole seasoning that has been put into the spice pouch, boil until oxtail tender.
2. Campur tepung beras, maizena, garam dan lada. Combine rice starch, corn starch, salt and pepper.
3. Panaskan minyak. Celupkan buntut pada kocokan telur dan gulingkan pada bahan tepung dan masukkan serta goreng buntut hingga kecoklatan (aku hr ini tanpa telur). Preheat oil, dipping oxtail into beaten egg and roll it into mixed flour, add oxtail into hot oil and fried until golden. (Today I don’t use the egg)
4. Haluskan semua bahan sambal. Ground all sambal ingredients.
5. Sajikan buntut goreng dgn cara memenyet nya diatas sambal bongkot dan pelengkapi. Serving fried oxtail with pressed on sambal torch ginger and condiment.
