Roti Isi Coklat Tanpa Telur – Eggless Chocolate Filled Bread


ROTI ISI COKLAT TANPA TELUR – EGGLESS CHOCOLATE FILLED BREAD

Bahan/ingredients:
380 gr tepung tinggi protein. 380 gr high protein flour. Cakra Kembar.
40 gr tepung rendah protein. 40 gr low protein flour. kunci Biru.
50 gr mentega, suhu ruang. 50 gr butter, room temperature Anchor.
5 gr ragi instan. 5 gr instant yeast. Fermipan
20 gr susu bubuk. 20 gr full cream. Dancow
30 gr gula pasir (boleh ditambah). 30 gr granulated sugar (as your desire).
3 gr garam. 3 gr salt.
260 ml air mineral. 260 ml mineral water.
60 ml susu segar tawar. 60 ml plain fresh milk.

Bahan olesan/grease ingredients:
1 butir kuning telur. 1 pcs egg yolk.
2 sdm susu evaporate. 2 tbsp evaporated milk.
*Kocok lepas telur dan campur dgn susu. Beaten egg yolk and mix well with milk*

Isian/filling:
200 gr meses. 200 gr rice choco.

Cara/method:
1. Campur semua bahan kering dalam mangkuk mixer. Gunakan alat pengaduk untuk roti. Combine dried ingredients on a mixer bowl. Using bread tools.

2. Campur susu dan air. Masukkan bertahap ke campuran bahan kering, sambil diaduk dengan kecepatan sedang (speed 4 utk KitchenAid) selama 15 menit. Mix milk and water. Enter gradually into the dry matter mixture, while stirring at medium speed (speed 5 for KitchenAid) for 15 minutes.
3. Bulatkan adonan, letakkan dalam mangkuk dan tutup dengan plastik, biarkan selama 30 menit hingga mengembang. Round the dough and place it in a bowl and cover it with plastic and allow up to 30 minutes of expanding dough.
4. Pukul perlahan adonan agar angin keluar. Bagi 2 adonan, bulatkan dan istirahatkan 10 menit. Gently hit the dough to let the wind out. Divide 2 doughs, round and rest 10 minutes.

5. Pipihkan adonan dengan rolling kayu dan taburi coklat meses dan gulung. Flatten the dough with wood rolling and sprinkle chocolate rice and rolls.

6. Istirahatkan di dalam loyang dan tutup dgn plastik selama 60 menit. Rest inside the pan and cover with plastic for 60 minutes.

7. Panaskan oven 200 C selama 15 menit. Oles permukaan roti dgn bahan olesan dan panggang sekitar 30-35 menit gunakan api atas dan bawah. Preheat oven 200 C for 15 minutes. Rub the surface of the loaf and bake about 30-35 minutes using the top and bottom flames.

8. Keluarkan roti dari oven dan pindahkan ke rak dan biarkan suhu ruang (30 menit)sebelum diiris sesuai selera. Remove the bread from the oven and move it to the rack and let the room temperature (around 30 minutes)before slicing according to taste.

Chinese Char Siu Pancake


CHINESE CHAR SIU PANCAKE

Untuk 6 buah. For 6 pcs.

Bahan/ingredients:
175 gr terigu protein rendah. 175 gr low protein flour (kunci biru)
75 gr tepung tinggi protein. 75 gr high protein flour. (Cakra kembar)
130 ml air hangat. 130 ml warm water.
2 gr ragi instan. 2 gr instant yeast. Fermipan.
½ sdt garam. ½ tsp salt.
¼ sdt lada putih bubuk. ¼ tsp powdered white pepper.
4 siung bawang putih, haluskan. 4 cloves of garlic, ground.

Oles/greaze:
20 gr mentega cair. 20 gr melted butter. Elle & Vire.

Taburan/topping:
20 daun bawang iris halus. 20 gr green onion finely slice.
50 gr Char Siu, potong kecil. Char Siu, tiny cut.

Saus/sauce:
1 sdm kecap asin. 1 tbsp soy sauce.
1 sdt gula. 1 tbsp sugar.
½ sdt cuka hitam. ½ tsp black soy sauce.
1 cm jahe, parut. 1 cm ginger grated.
½ sdt minyak wijen ½ tsp sesame oil.
¼ sdt cabe bubuk. ¼ tsp chili flakes.

Cara/method:
1. Campur tepung, garam, lada, ragi dan bawang putih halus. Combine flour, salt, pepper, yeast and ground garlic
2. Masukkan air hangat bertahap sambil di aduk dan uleni hingga adonan kalis. Istirahatkan adonan selama 20 menit, tutup dgn plastik. Enter the warm water gradually while stirring and knead until the dough is smooth. Rest the dough for 20 minutes, cover with plastik.

2. Bagi adonan dlm 2 bagian, pipihkan dan oles dengan mentega, taburi bawang daun dan char siu, lipat oles mentega smp 3-4x dan bentuk bulat pipihkan lagi sisihkan dan lakukan hingga bahan habis. Seperti pada video dibawah ini. Divide the dough in 2 parts, peel and smear it with butter, sprinkle onion and char siu, fold the butter for 3-4 times and split the round again set aside and do until the ingredients run out. As in the video below.

3. Panaskan penggorengan tanpa minyak, letakkan pancake dan proses hingga keemasan. Heat pan without oil, place the pancake and process until golden.

4. Campur bahan saus, Sajikan pancake dengan saus. Mix sauce ingredients. Served pancake with sauce.

Roti Bawang Isi Ayam – Chicken stuffed Garlic Bread


ROTI BAWANG ISI AYAM – CHICKEN STUFFED GARLIC BREAD.

Bahan/ingredients:
1 buah roti prancis. 1 pcs france baguette.
200 gr dada ayam, potong dan raburi garam laut, bawang putih bubuk dan lada hitam bubuk. 200 gr chicken breast, cut and marinade with sea salt, garlic powder and ground black pepper.
Keju cedar lempeng secukupnya. Some sliced cheddar cheese.
1 butir telur. 1 pcs egg,
Tepung almond secukupnya. Some almond powder.
Minyak utk menggoreng. Oil for deep fry.

Taburan/topping:
50 gr mentega tawar leleh. 50 gr melted unsalted butter. (Anchor)
Daun seledri secukupnya, cincang. Some chopped celery.
4 siung bwg putih cincang halus. 4 cloves of garlic, finely chop.
Sejumput garam laut dan lada bubuk. A pinch of sea salt and pepper powder.

Cara/method:
1. Panas oven 180C. Preheat oven 180C.
2. Potong 4 bagian roti dan buat lubang, sisihkan. Cut on 4 the bread and make a hole, set aside.

3. Panaskan minyak, celupkan ayam ke dlm telur kocok dan gulirkan ke tepung almond, masukkan ke dlm minyak panas dan goreng hingga keemasan, sisihkan. Heat oil, dipping chicken on beaten egg, rolling it into almond powder and add into hot oil, frying until holden, strain.

4. Gulung ayam dgn keju cedar dan masukkan ke dalam lubang roti. Rolling the fried chicken with cheddar and stuffing into the bread.

5. Campur bahan taburan dan sisihkan. Combine topping ingredients and set aside.

6. Potong menjadi 4. Letakkan diatas loyang dan taburi dgn bahan taburan. Cut on 4. Place on a pan and sprinkle with toppng in top.

7. Oven selama 15 menit dan siap disajikan. Baking for 15 minutes and ready to serve.

GYERAN PPANG – EGG BREAD KOREAN

Bahan/ingredients:
25 gr mentega tawar leleh. 25 gr melted unsalted butter. (Anchor)
65 gr gula pasir. 65 gr sugar.
160 ml susu segar. 160 ml fresh milk.
70 gr cream cheese. (phildhelphia brand)
1 sdt vanila. 1 tsp vanilla.
2 sdt minyak sayur. 2 tsp veggie oil.
2 btr telur. 2 pcs egg.
175 gr tepung rendah protein. 175 gr low protein flour. (segitiga biru)
2 sdt baking powder. 2 tsp baking powder.
½ sdt garam. ½ tsp salt.
Keju cedar utk taburan. Cheddar
cheese for topping
3 btr telur utk diatas cake. 3 pcs egg for topping.

Cara/method:
1. Panaskan oven 200C. Preheat oven 200C.
2. Oles loyang ukuran 21x11x8 dgn mentega. Greasing 4 pcs pan size 21x11x8 with butter.
3. Campur dan ayak tepung, garam dan baking powder, sisihkan. Mix and sift flour, salt and baking powder. Set aside.
4. Masukkan dlm mangkuk besar mentega cair, gula, susu segar dan cream cheese. Aduk dgn whisk hingga rata. Place on a big bowl melted butter, sugar, fresh milk and cream cheese. Stir well with whisk..
5. Tambahkan vanila dan minyak sayur. Aduk rata. Add vanilla and veggie oil. Stir well.
6. Kocok telur dgn whisk, dan masukkan ke adonan. Aduk. Beaten egg with whisk and enter into the batter. Stir well.
7. Masukkan tepung dan aduk rata. Add flour and stir well.
8. Tuang adonan dlm loyang dan pecahkan diatasnya masing2 1 butir telur. Pour the batter into the pan and broke one egg on each pan.
9. Oven selama 20 menit. Bake for 20 minutes.

Note:
1. Harusnya pake loyang loaf personal 12x6x3 letakkan 1 btr ayam kampung. Supposed to use a personal loaf pan 12x6x3 use farmer egg on top.
2. Tapi kalo loyang loaf mini diatasnya ditaruh telur puyuh. If you use a personal mini pan, use quail eggs instead.

2 lbr roti tawar. 2 pcs toasted bread. (6 pcs per pack)
1 sdm mentega tawar. 1 tbsp unsalted butter. (Elle & Vire)
6 iris keju mozzarella (setebal 2ml). 6 thin sliced mozzarella cheese. (around 2 ml)
Susu kental manis secukupnya. Some condensed milk.
2 sdm keju cedar parut. 2 tbsp grated cheddar cheese.

Cara/method:
1. Panaskan teflon tanpa minyak atau mentega panggang 2 sisi roti hingga keemasan. Heat pan without oil or butter, toast 2 side of bread until golden
2. Oles dgn mentega dan susu kental manis, letakkan irisan keju mozzarella, oles lagi dgn mentega dan susu kental manis. Spread bread with butter and condensed milk, place sliced mozzarella cheese, spread butter and condensed milk again.
3. Panggang selembar roti hingga keemasan dan letakkan diatas roti dgn keju. Toast another piece of bread until golden and place on top of the bread with cheese.
4. Saat memanggang roti ke 2, panaskan teflon persegi taburi keju cedar parut, biarkan hingga keju keemasan dan balik. Angkat dan potong menjadi 6. When toasting the second pcs of bread, heat the square pan, sprinkle with grated cheddar cheese, let stand until the cheese turn golden and and turn it. Remove the cheese and cut into 6.
5. Bungkus tumpukan roti dgn almunium foil dan masukkan ke airfryer dgn suhu 200C selama 5 menit spy mozarelanya lumer sempurna. Atau di oven dgn cara dibungkus suhu 200C selama 5menit. Wrap the sandwich in aluminum foil and put inside the airfryer in 200C for 5 minutes. This will let the mozarella to melt. You can also oven it with the same way in 200C for 5 minutes
6. Potong roti menjadi 6 bagian dan letakkan keju garing diatasnya. Cut the bread into 6 and place the crispy cheese on top.

Bahan roti/dough ingredients:
*Water Roux
50 gr tepung tinggi protein. 50 gr high protein flour (cakra kembar)
250 ml air panas. 250 ml hot water.

*Bahan roti/dough ingredients:
300 gr tepung tinggi protein. 300 gr high protein flour.
300 gr tepung protein sedang. 300 gr medium protein flour. (segitiga biru)
3 sdm susu full cream. 3 tbsp full cream milk.
1 bgks (11 gr) ragi instan. 1 pack (11 gr) instant yeast. (fermipan)
100 gr gula pasir. 100 gr granulated sugar.
1 sdt garam. 1 tsp salt.

1. Membuat water roux/how to cook water roux:

2. Campur water roux dan semua bahan roti kecuali garam dan mentega, aduk hingga tercampur rata dan kalis. Masukkan mentega aduk rata dan masukkan garam, mixer hingga kalis, tutup dgn plastik.
