Bubur Sawi Asin – Fermented Veggie Porridge

BUBUR SAWI ASIN – FERMENTED VEGGIE PORRIDGE

Bahan/ingredients:
1 cup beras, cuci dan rendam semalam. 1 cup rice, wash and lets stand for a nite.
1500 ml air panas. 1500 ml hot water.
2 lbr daun salam. 2 pcs indonesian bay leaf.
1 btg sereh. 1 stalk lemongrass.
Garam dan lada secukupnya. Some salt and pepper
½ sdm minyak wijen. ½ tbsp minyak wijen.

Tumis Sawi Asin dan Tahu Kuning/Sauteed Fermented Veggie and Yellow Tofu:
1 ikat sawi asin, iris tipis dan cuci 3 kali utk mengurangi rasa asam. 1 bulb of fermented veggie, finely slice and wash 3 times for reduced sour.
1 buah tahu kuning, iris dan goreng ½ matang. 1 pcs yellow tofu, slice and half fried.
2 siung bawang putih, iris tipis. 2 cloves garlic, finely slice.
½ buah cabe merah besar, iris korek api. ½ pcs re chili, julienne.
2 sdt minyak wijen. 2 tsp sesame oil.
2 sdt kecap manis. 2 tsp dark sweet soy sauce.

Pelengkap/condiment:
Ikan asin goreng. Fried salted fish.
Cakue.
Bawang daun. Scallion.
Seledri. Celery.
Telur asin rebus. Boiled salted duck egg.
Sambal.

Cara/ingredients:
1. Membuat bubur dgn slow cooker/how to process porridge with slow cooker:
Masukkan semua bahan bubur ke dlm slow cooker proses dgn setting high selama 2 jam kemudian alihkan setting warm. Bubur akan matang lembut. Tambahkan minyak wijen dan aduk. Add all porridge on slow cooker and setting to high for 2 hours and then setting to warm. Porridge will be soften.
2. Menumis Sawi Asin dan Tahu Kuning/How to sauteed fermented veggie and yellow tofu:
Panaskan minyak wijen, tumis bawang putih hingga harum. Masukkan sawi asin, tahu, cabe merah, dan kecap manis. Aduk rata. Siap disajikan. Heat sesame oil, saute garlic until fragrant. Add fermented veggie, tofu, red chili and dark sweet soy sauce. Stir well. Ready to serve.
3. Sajikan panas bubur dgn pelengkap. Serve hot the porridge with condiment.

Note:
Aku mulai proses masak bubur pkl 22:00-24:00 di setting HIGH. Pkl 24:00 sblm tidur aku setting di warm, pagi hari bubur sdh siap di konsum. I processed porridge on 22:00-24-00 setting HIGH. Before slept I’m setting on warm, this morning porridge ready to consume.

Roti Bawang Isi Ayam – Chicken stuffed Garlic Bread


ROTI BAWANG ISI AYAM – CHICKEN STUFFED GARLIC BREAD.

Bahan/ingredients:
1 buah roti prancis. 1 pcs france baguette.
200 gr dada ayam, potong dan raburi garam laut, bawang putih bubuk dan lada hitam bubuk. 200 gr chicken breast, cut and marinade with sea salt, garlic powder and ground black pepper.
Keju cedar lempeng secukupnya. Some sliced cheddar cheese.
1 butir telur. 1 pcs egg,
Tepung almond secukupnya. Some almond powder.
Minyak utk menggoreng. Oil for deep fry.

Taburan/topping:
50 gr mentega tawar leleh. 50 gr melted unsalted butter. (Anchor)
Daun seledri secukupnya, cincang. Some chopped celery.
4 siung bwg putih cincang halus. 4 cloves of garlic, finely chop.
Sejumput garam laut dan lada bubuk. A pinch of sea salt and pepper powder.

Cara/method:
1. Panas oven 180C. Preheat oven 180C.
2. Potong 4 bagian roti dan buat lubang, sisihkan. Cut on 4 the bread and make a hole, set aside.

3. Panaskan minyak, celupkan ayam ke dlm telur kocok dan gulirkan ke tepung almond, masukkan ke dlm minyak panas dan goreng hingga keemasan, sisihkan. Heat oil, dipping chicken on beaten egg, rolling it into almond powder and add into hot oil, frying until holden, strain.

4. Gulung ayam dgn keju cedar dan masukkan ke dalam lubang roti. Rolling the fried chicken with cheddar and stuffing into the bread.

5. Campur bahan taburan dan sisihkan. Combine topping ingredients and set aside.

6. Potong menjadi 4. Letakkan diatas loyang dan taburi dgn bahan taburan. Cut on 4. Place on a pan and sprinkle with toppng in top.

7. Oven selama 15 menit dan siap disajikan. Baking for 15 minutes and ready to serve.

Nasi Goreng Kacang Polong & Lapjiong – Peas & Lapjiong Fried Rice

NASI GORENG KACANG POLONG & LAPJIONG -PEAS & LAPJIONG FRIED RICE

Bahan/ingredients:
2 porsi nasi. 2 portion rice.
100 gr kacang polong beku, rendam air panas, sisihkan. 100 gr frozen peas, soak on hot water, strain.
2 btg sosis babi/lapjiong, iris. 2 stalks pork sausage/lapjiong, slice.
2 btr telur kampung, kocok lepas. 2 pcs farmer egg, beaten.
2 buah bawang merah, cincang. 2 pcs shallot, chop.
4 siung bawang putih, cincang. 4 cloves garlic.
Garam dan pada secukupnya. Some salt and pepper.
2 sdt kecap ikan. 2 tap fish sauce.
1 sdm minyak sayur. 1 tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.
½ sdm sambal AFA. (Sesuai selera) ½ tbsp Sambal AFA (as your desire)(wa Lam Djin Fa 0812 3227679

Cara/method:
1. Panaskan minyak sayur dan minyak wijen. Heat veggie oil and sesame oil.
2. Masukkan bawang merah dan bawang putih. Tumis hingga harum, masukkan lapjiong dan kacang polong, aduk 1 menit. Sisihkan di tepi wajan.. Add shallot and garlic, saute until fragrant, add lapjiong and peas, saute for 1 minute. Set aside on the edge of the frying pan.
3. Masukkan telur kocok diamkan 30 detik. Aduk bersama bahan lain. Masukkan nasi aduk, kecap ikan, garam, lada dan sambal AFA, aduk rata (boleh masukkan cabe rawit merah sesuai selera). Add beaten egg let stand for 30 second. Stir with other ingredients. Add rice, fish sauce, salt, pepper and Sambal AFA, stir well. (Can be add some red chili padi as your desire)
4. Nasi Goreng siap dihidangkan panas. Fried rice ready to serve hot.

Note:
Lapjiong bisa diganti dgn sosis sapi or ayam. Lapjiong can be change with beef or chicken sausage

Bahan/ingredients:
4 porsi nasi. 4 portion rice.
60 gr kacang polong beku. 60 gr frozen green beans.
¼ buah paprika merah, potong kecil. ¼ pcs red bell pepper, small cut.
100 gr daging salmon rebus. 100 gr boiled salmon.
4 siung bawang putih, cincang halus. 4 cloves garlic, finely chop.
2 btg daun bwg, iris. 2 stalks scallion, slice.
1 sdm minyak sayur. 1 tbsp veggie oil

Bumbu halus/ground spices:
½ sdm cabe merah halus. ½ tbsp ground red chili.
8 buah bawang merah. 8 pcs shallot.
4 siung bawang putih. 4 cloves garlic.
½ sdt lada bubuk. ½ tsp powdered pepper.
½ sdm garam. ½ tbsp salt.
5 buah kemiri. 5 pcs candle nut.
4 cm kunyit kupas, potong. 4 cm peeled turmeric, cut.
2 cm kencur, kupas. 2 cm fragrant ginger, peel
1 sdm ebi bubuk. 1 tbsp ground dried shrimp.
4 sdm minyak sayur utk menumis. 4 tbsp veggie oil for saute.

Cara/method:
1. Goreng ½ matang bawang merah, bawang putih, kunyit dan kencur. Tiriskan.Half fried shallot, garlic, turmeric and fragrant ginger. Strain.
3. Haluskan semua bahan bumbu dan tumis hingga matang. Ground all spices ingredients and saute well done.
4. Panaskan 1 sdm minyak sayur. Masukkan bawang putih dan 2 sdm bumbu halus, tumis hingga harum. Masukkan kacang polong dan salmon, tumis selama 5 menit. Masukkan nasi, paprika dan daun bawang, aduk rata. Bila suka pedas tambahkan irisan cabe rawit. Heat 1 tbsp veggie oil. Add chopped garlic and ground spices, saute until fragrant. Add green beans and salmon, saute for 5 minutes. Add rice, bell pepper dan scallion, stir well. You may add chili padi.
6. Nasi goreng salmon rempah siap disajikan dgn pendamping sesuai selera. Spices salmon fried rice ready for serving with condiment as your desire.

Utk 4-5 porsi. For 4-5 serving.

Bahan/ingredients:
4 porsi nasi putih. 4 portion rice.
1 bongkah sawi hijau, iris. A bunddle green mustard, slice.
200 gr daging sapi, iris tipis. 200 gr beef, finely slice.
2 sdt kecap asin. 2 tsp soy sauce.
Lada secukupnya. Some pepper.
1 sdt bwg putih bubuk. 1 tsp garlic powder.
1 sdm tepung sagu. 1 tbsp cornstarch.
1 sdm minyak sayur utk menumis daging.1 tbsp veggie oil for saute the beef.

Bumbu halus/ground spices:
½ sdm cabe merah halus. ½ tbsp ground red chili.
8 buah bawang merah. 8 pcs shallot.
4 siung bawang putih. 4 cloves garlic.
½ sdt lada bubuk. ½ tsp powdered pepper.
½ sdm garam. ½ tbsp salt.
5 buah kemiri. 5 pcs candle nut.
4 cm kunyit kupas, potong. 4 cm peeled turmeric, cut.
2 cm kencur, kupas. 2 cm fragrant ginger, peel
1 sdm ebi bubuk. 1 tbsp ground dried shrimp.
4 sdm minyak sayur utk menumis. 4 tbsp veggie oil for saute.

Cara/method:
1. Bumbui daging dengan kecap asin, lada dan bwg putih bubuk, aduk rata, campur dengan tepung sagu. Diamkan 30 menit. Marinate well the beef with soy sauce, pepper and powdered garlic, mix well with cornstarch and let stand for 30 minutes.
2. Goreng ½ matang bawang merah, bawang putih, kunyit dan kencur. Tiriskan.Half fried shallot, garlic, turmeric and fragrant ginger. Strain.
3. Haluskan semua bahan bumbu dan tumis hingga matang. Ground all spices ingredients and saute well done.
4. Panaskan 1 sdm minyak sayur. Masukkan satu per satu daging sapi, tumis hingga berubah warna. Angkat dan sisihkan. Heat 1 tbsp veggie oil. Add one by one the beef, saute until changing color. Lift up and set aside.
5. Masukkan 2 sdm bumbu nasi goreng dlm wajan panas. Masukkan nasi dan batang sawi, aduk rata. Masukkan daging dan daun sawi, aduk rata selama 5 menit. Add 2 tbsp fried rice spices in hot wok. Add rice and green mustard stem, stirring well. Add the beef and green mustard leaves, stirring for 5 minutes.
6. Nasi goreng rempah daging sapi siap disajikan dgn pendamping sesuai selera. Beef spices fried rice ready for serving with complimentary as your desire.

BUBUR IKAN KAKAP – SNAPPER PORRIAGE

Bahan/ingredients:
1 cup beras, cuci dan rendam semalam. 1 cup rice, wash and lets stand for a nite.
1500 ml air panas. 1500 ml hot water.
1 lbr daun salam. 1 pcs indonesian bayleaf.
3 iris lengkuas. 3 slices galangal.
2 iris jahe. 2 slices ginger.
1 cm kencur. 1 cm fragrant ginger.
Garam dan lada secukupnya.
½ sdm minyak wijen. ½ tbsp minyak wijen.

Bumbu utk ikan/marinade fish:
300 gr ikan kakap, iris. 300 gr snapper, slice.
1 siung bwg putih, parut. 1 cloves grated garlic.
½ sdt jahe parut. ½ tsp grated ginger.
½ sdm arak shao shing. ½ tbsp wine shao shing.
Garam dan lada secukupnya. Some salt and pepper.
1 sdm tpg sagu. 1 tbsp corn strach.

Pelengkap/complimentary:
Bwg daun, iris. Scallion, slice.
Bwg putih, cincang halus. Finely chopped garlic.
Jahe, iris korek api halus. Finely slice jullian ginger.
Tong chai. Fermented chinese radish.
Sambal. .
Cakwe, iris. Cakwe, slice.

Cara/method:
1. Letakkan bahan bubur dlm slowcooker. Tuang air panas, setting di high (selama 3 jam). Enter all ingredients or porridge on slowcooker. Pour with hot water, setting high. (around 3 hours)
2. Bumbui daging ikan dan balur tipis dgn tpg sagu. Diamkan 30 menit. Marinate fish and finely covered with corn starch.
3. Aduk bubur dan masukkan ikan,, diamkan 15 menit sebelum dihidangkan.. Stir the porriage and add the fish, lets stand for 15 minutes before serving.
4. Sajikan bubur panas dlm mangkuk dan taburi dgn pelengkap. Serve hot the porriage on a bowl and sprinkle with the complementary.
