Churros With Choco Sauce

CHURROS with CHOCO SAUCE

Bahan/ingredients:
60 gr Mentega tawar. 60 gr unsalted butter.
30 gr gula merah. 30 gr brown sugar
300 ml air. 300 ml water
3 gr garam. 3 gr salt
145 gr tepung protein sedang. 145 gr medium gluten flour.
1 sdt vanila. 1 tsp vanilla extract.
3 butir kuning telur. 3 pcs egg yolk.
Minyak utk menggoreng tenggelam. Oil for deep fry.

Taburan/topping:
Gula halus. Castor sugar.
Kayu manis bubuk (boleh tdk pakai). Cinnamon powder. (can be skip)
Saus Coklat (lumerkan 100gr DCC dan 30 gr krim kental). Choco Sauce(melting 100 gr DCC + 30 ml whipping cream)

Cara/method:
1. Campur dan didihkan mentega, gula, garam dan air. Mix and boiling butter, sugar, salt and water.
2. Matikan api, turn off the stove.
3. Masukkan tepung dan aduk cepat hingga tdk lengket. Add flour and stir fastest until not sticky.
4. Masukkan vanila dan kuning telur satu per satu sambil diaduk cepat. Add vanilla and egg yolk one by one with continue stir faster.
5. Masukkan adonan dlm kantung segitiga yg di beri mata spluit bintang. Add the dough into pipping bag with star nozzle.
6. Semprotkan melingkar pada loyang beri choco chip diatasnya dan tutup dgn adonan lagi. Diamkan di frezer 30 menit. circular spray on a baking sheet and let choco chip on top of the lid with dough. let stand on frezzer for 30 minutes.
7. Panaskan minyak, masukkan adonan yg telah beku dan goreng hingga keemasan, tiriskan. Heat oil. Add the frozen dough and frying until golden, strain.
8. Gulingkan pada gula halus bercampur kayumanis bubuk. Dan siap disajikan dgnsaus coklat. roll in powdered sugar mixed with cinnamon mouth and ready to be served with choco sauce.

KUE ALMON COKLAT – ALMOND CHOCO CAKE

Bahan/ingredients:
6 butir kuning telur kampung. 6 pcs farmer egg yolk.
5 butir putih telur kampung. 5 pcs farmer white egg.
120 gr gula merah. 120 gr brown sugar.
100 gr tepung almond. 100 gr almond powder.
40 gr terigu rendah protein. 40 gr low protein flour.
20 gr coklat bubuk. 20 gr cocoa powder.
¼ sdt garam. ¼ tap salt.
½ sdt baking powder. ½ tap baking powder.
150 gr mentega leleh. 150 gr melted butter. (Anchor)

Cara/method:
1. Panaskan oven 180C. Oles loyang hati ukuran 18 dgn mentega, sisihkan. Preheat oven 180 C. Smear love pan size 18 with butter, set aside.
2. Campur almon bubuk, tepung, coklat bubuk, baking powder dan garam, sisihkan. Mix almond powder, flour, cocoa powder, baking powder and salt, set aside,
3. Kocok telur dan gula merah hingga menggembang dgn kecepatan tinggi. Beat the egg and brown sugar until fluffy with high speed
4. Gunakan kecepatan terendah masukkan bahan kering, vanila dan mentega, aduk hingga rata dan matikan mixer. Using slow speed add dried ingredients, vanilla and butter, stir well and switch off mixer.
5. Tuang adonan kedalam loyang. Pour the batter into the pan
6. Oven selama 40 menit. Biarkan suhu ruang, dan iris sebelum disajikan. Baking for 40 minutes. Let it room temperature and slice before serving.

Bolu Marmer Jadoel Vanila – Classic Vanilla Marble Cake

Bahan/ingredients:
8 btr kuning telur segar. 8 pcs fersh egg yolk.
6 btr putih telur segar. 6 pcs fresh white egg.
160 gr gula pasir. 160 gr granulated sugar.
180 gr terigu utk kue. 180 gr cake flour.
180 gr mentega leleh. 180 gr melted butter.
⅓ sdt garam. ⅓ tsp salt 1 sdt Vanilla
1 sdm coklat bubuk. 1 tbsp cocoa powder.
1 sdm air. 1tbsp water.
1 sdt ekstrak vanila. 1 tsp vanilla extract

Cara/Method:
1. Panaskan oven 180 C, oles loyang dgn mentega. Preheat oven 180C, brush the pan with butter.
2. Campur coklat bubuk dgn dgn air hingga menjadi pasta, sisihkan. Make a paste with cocoa and water, set aside.
3. Campur tepung dgn garam, sisihkan. Mix flour and salt, set aside.
4. Kocok dgn kecepatan tinggi gula dan telur hingga mengembang. Mixer high speed sugar and eggs until fluffy.
5. Sambil di kocok dgn kecepatan rendah masukkan tepung bertahap. Gradually add flour while mixing in slow speed.
6. Masukkan mentega leleh dan vanila, aduk sebentar dan matikan mixer. Add melted butter and vanilla extract, mixer a while and turn off mixer.
7. Ambil 4 sdm adonan campur dgn pasta coklat. Take 4 tbsp the batter and mix with choco paste.
8. Tuang adonan putih kedalam loyang dan masukkan adonan coklat tanpa diaduk. Pour the white batter into the pan and add choco batter without stir.
9. Oven selama 40-45 menit atau hingga permukaan keemasan. Tes kematangan dgn lidi.
Bake for 40-45 minutes or until it has a golden surface.
10. Keluarkan dr loyang, biarkan 70% hangat baru diiris dan sajikan hangat lbh nikmat. Take out from the pan, lets warm 70% before slice and serve when warm more yummy.

Almond Thai Tea Chiffon Cake

A slice of Almond Thai Tea Chiffon Cake with a cup of black coffee is my morning energizer.

ALMOND THAI TEA CHIFFON CAKE

Bahan/ingredients:
8 btr kuning telur. 8 pcs egg yolks.
8 btr putih telur. 8 pcs white eggs
70 gr terigu rendah protein. 70 gr low protein flour. (Kunci biru)
50 gr almon bubuk. 50 gr almond powder.
80 gr gula pasir. 80 gr granulated sugar.
40 gr gula merah. 40 gr brown sugar.
2 sdm susu kental manis. 2 tbsp condensed milk. (Carnation)
80 ml minyak canola. 80 ml canola oil
100 ml susu evaporate. 100 ml evaporated milk. (Carnation)
½ sdt garam. ½ tsp salt.
1 kantong untuk teh. 1 pcs teabag.
1 sdm thai tea. 1 tbsp thai tea.

½ sdm coklat bubuk campur dgn 1 sdm air. Utk membuat motif. ½ tbsp cocoa powder diluted with 1 tbsp to make pattern.

Cara/method:
1. Panaskan oven 180C. Preheat oven 180C.
2. Rebus susu evaporate dgn thai tea yg sdh dimasukkan dlm kantong teh, sisihkan hingga suhu ruang, saring. Masukkan susu kental manis dan aduk hingga larut. Heat evaporated milk and thai tea on teabag, set aside until room temperarure, strain. Add condenced milk and stir until disolve.
3. Campur dan ayak tepung, almon bubuk, garam, dan sisihkan. Campur thai tea dgn susu kental manis, aduk dan sisihkan. Mix and sift flour, almond powder, salt, and set aside. Mix thai tea and condensed milk, set aside.
3. Kocok putih telur dgn kecepatan tinggi hingga mengembang dan kaku. Sisihkan. (2 menit dgn KitchenAid). Beat the egg with mixer high speed until fluffy and stiff. Set aside.(2 minutes using KitchenAid)
4. Kocok dgn kecepatan tinggi kuning telur dgn gula pasir dan gula merah hingga mengembang, (1,5 menit dgn KitchenAid). Beat with high speed egg yolks with granulated sugar and brown sugar until fluffy (1,5 minutes using KitchenAid)
5. Kocok dgn kecepatan rendah, masukkan campuran tepung dan thai tea bertahap. Masukkan minyak canola. Mixer slow speed, add mix flour and thai tea step by step, add canola oil.
6. Masukkan dan aduk dgn whisk atau ball mixer perlahan putih telur ke adonan kuning telur. Add and gently stir with whisk or mixer ball the white egg into egg yolk mixture
7. Ambil 2 sdm adonan san campur dgn adonan pasta coklat. Take 2 tbsp batter and mix with choco paste.
8. Tuang adonan kedalam loyang sifon 24 inch dan tuang adoanan coklat. Dan oven selama 45-50 menit. Pour into chiffon pan 25 inchand choco batter too. Bake for 45-50 minutes.
9. Keluarkan loyang dr oven dan balik loyang hingga cake dingin,keluarkan dr loyang dan potong sebelum disajikan. Take out the pan from oven and turning the pan dan leave to cool. Remove cake from pan, and slice before serving.

Coffee Chiffon Cake


COFFEE CHIFFON 🎂CAKE

Bahan/ingredients:
8 btr kuning telur. 8 pcs egg yolks.
8 btr putel. 8 pcs white eggs
120 gr terigu serba guna. 120 gr all purpose flour. (segitiga biru or kunci biru)
160 gr gula merah. 160 gr brown sugar.
20 gr susu bubuk. 20 gr milk powder.
1 sdm coklat bubuk AFRICAN (utk pewarna). 1 tbsp choco powder AFRICAN. (for coloring)
80 ml minyak canola. 80 ml canolla oil
100 ml kopi hangat (air panas + 3 sdm kopi instant). 100 ml warm coffee(hot water + 3 tbsp coffee instant)
½ sdt garam. ½ tsp salt.

Cara/method:
1. Panaskan oven 180C. Preheat oven 180C.
2. Campur dan ayak tepung, garam, susu bubuk, coklat bubuk dan sisihkan . Mix and sift flour, salt, milk powder, choco powder and set aside.
3. Mixer putih telur dgn kecepatan tinggi hingga mengembang dan kaku. Sisihkan. (2 menit dgn KitchenAid). Beat white egg with mixer high speed until fluffy and stiff. Set aside.(2 minutes using KitchenAid)
4. Kocok dgn kecepatan tinggi kuning telur dan gula palem hingga mengembang, (2 menit dgn KitchenAid). Beat with high speed egg yolks and palm sugar until fluffy (2 minutes using KitchenAid)
5. Kocok dgn kecepatan rendah, masukkan campuran tepung dan kopi bertahap. Masukkan minyak canola. Mixer slow speed, add mix flour and coffee step by step, add canola oil.
6. Masukkan dan aduk dgn whisk bertahap putih telur ke adonan kuning telur. Add and stir well with whisk white egg into egg yolk mixture
7. Tuang adonan kedalam loyang sifon 24 inch. Dan oven selama 45-50 menit. Pour into chiffon pan 24 inch. Bake for 45-50 minutes.
8. Keluarkan loyang dr oven dan balikkan loyang hingga suhu ruang .Keluarkan cake dr loyang dan iris. Remove the baking pan and turn the pan to room temperature. Remove the cake from the pan and sliced

SIFFON KETAN HITAM – BLACK GLUTINOUS CHIFFON CAKE

Bahan/ingredients:
8 btr putih telur segar. 8 pcs fresh white egg.
8 btr kuning telur. 8 pcs egg yolk.
175gr gula merah. 175gr brown sugar.
115gr tepung ketan hitam. 115 gr black glutinous flour.
80 ml air kelapa. 80 ml coconut water. (HydroCoco)
100ml minyak canola. 100 ml canola oil.
½ sdt garam. ½ tsp salt.
1 sdt ekstrak vanila. 1 tsp vanilla extract.

Cara/Method:
1. Panaskan oven 180C. Preheat oven 180C.
2. Campur tepung dgn garam, sisihkan. Mix flour and salt.
3. Kocok dgn kecepatan tinggi putih telur hingga kaku, sisihkan. Mixer with high speed white egg until stiff, sed aside.
4. Kocok dgn kecepatan tinggi kuning telur dan gula hingga mengembang. Mixer with high speed egg yolk and sugar until fluffy.
5. Masukkan tepung bertahap sambil dikocok kecepatan rendah. Add the flour step by step while mixing with low speed.
6. Dan masukkan juga air kelapa, vanila estrak dan minyak. Matikan mixer. Add coconut water, extract vanilla and oil. Turn off mixer.
7. Campur putih telur dan adonan kuning telur bertahap dan aduk rata dgn whisk. Mix white egg and egg yolk, batter and stir well with whisk.
9. Tuang adonan kedalam loyang siffon ukuran 20inch. Oven selama 45 menit. Pour the batter into chiffon pan size 20 inch. Bake for 45 minutes.
10. Keluarkan kue dr oven dan balikkan loyang hingga cake suhu ruang. Remove the cake from the oven and turn the pan until the cake on room temperature.
11. Iris siffon sebelum disajikan. Slice chiffon cake before serve.

Honey Almond Meal CupCakes


HONEY ALMOND MEAL CUPCAKES
Utk 5 buah cupcakes. For 5 pcs cupcakes

Cupcakes:
175 gr almond. 175 gr almond meal
25 gr coklat bubuk. 25gr cacao powder
½ sdt garam laut. ½ tsp sea salt
2 btr telur. 2 pcs eggs.
60 ml minyak canola. 60 ml canola oil.
70 ml air kelapa. 70 ml coconut water. (WRP Active Coco Splash)

75 ml madu. 75 ml honey.
1 sdt estrak vanila. 1 tsp vanilla bean extract.


Frosting:
80 gr dark choco, lumerkan. 80 gr dark chocolate, melted
70 gr mentega, potong kotak kecil. 70gr butter, chopped into chunks. (Elle & Vire)
2 sdm cream cheese. 2 tbsp cream cheese. (philadhelpia)
80 gr gula icing. 80 gr icing sugar,
2 sdm whipping cream. 2 tbsp whipping cream (Elle & Vire)

Cara/Method:
A. Membuat Cupcake/how to make Cupcakes:
1. Panaskan oven 180C dan beri kertas cupcake pada cetakan cupcake, sisihkan. Preheat oven to 180ºC and line a cupcake pan with patty liners, set aside.
2. Dalam mangkuk besar campur rata almond bubuk, coklat, baking soda dan garam, sisihkan. In a large mixing bowl, combine almond meal, cacao, baking soda and salt until well combined, set aside.
3. Dalam mangkuk berbeda kocok telur, madu, air kelapa dan estrak vanila. In a separate mixing bowl, whisk together eggs, honey, water and vanilla.
4. Perlahan campur adonan basah ke adonan kering hingga tercampur rata dan lembut. Gently fold wet mixture into dry, mixing until well combined and smooth.
5. Ambil adonan dgn sendok dan letakkan dlm mangkuk kertas hingga mendekati batas atas kertas. Spoon batter evenly among the cupcake liners, filling each liner nearly to the top rim.
6. Oven selama 25 menit atau dgn tes tusuk ditengah cake bila tidak lengket berarti sdh matang. Bake for 25 minutes or until a skewer inserted into the middle comes out clean.
7. Biarkan dingin sekitar 10 menit. Cool in pan for 10 minutes
8. Ambil dan letakkan cake diatas rak hingga benar2 cake dingin suhu ruang. Remove and transfer to a wire rack to cool completely (room temperature)

B. Membuat frosting/how to make frosting:
1. Dgn 2 panci letakkan dark choco dan masak dgn api sedang sambil diaduk hingga lumer, sisihkan. In a double boiler over low-medium heat, melt dark chocolate. Begin frosting whilst chocolate melts, occasionally stirring, set aside.
2. Kocok mentega hingga lembut dgn mixer selama 30 detik atau hingga lembut. In the bowl of a stand mixer add butter. Using the whisk attachment, whisk the butter for 30 seconds or until just soft.
3. Bertahap masukkan 1 cup gula icing. Gradually add icing sugar, 1 cup at a time.
4. Masukkan 1 sdm whipping cream setelah mentega lembut dan kocok perlahan. Add 1 tbsp whipping cream after each addition of icing sugar until mixture is smooth and comes together.
5. Masukkan coklat leleh dan kocok hingga mengkilat dan mengembang sekitar 2 menit Add melted dark chocolate and beat mixture for a further 2 minutes or until light and fluffy.
6. Tambahkan gula icing atau whipping cream hingga sesuai selera. dan frosting lembut, mudah utk di semprotkan dan bentuk. Add more icing sugar or whipping cream until desired consistency. Frosting should be smooth, easy to pipe and holds it’s shape.
7. Masukkan frosting ke dalam kantung. Add frosting into pipping bag.
8.Gunakan spluit sesuai selera utk menghias cupcake. Using your choice of nozzle for garnish your cupcakes
