Ayam Geprek – Crushed Chicken

AYAM GEPREK – CRUSHED CHICKEN

Bahan/ingredients:
2 ekor ayam kampung, potong jd 4. 2pcs farmer chicken, cut on 4,
Minyak utk menggoreng, oil for deep frying
2 btg sereh, keprak. 2 stalk lemongrass, crush.
10 lbr daun jeruk. 10 pcs lime leaves.
4 cm lengkuas, keprak. 3 cm galangal, crush.

Bahan ungkep ayam/stew chicken seasoning:
1 sdm ketumbar bubuk. 1 tbsp coriander.
15 butir bawang merah. 15 pcs shallot.
6 siung bawang putih. 6 cloves garlic.
6 butir kemiri. 6 pcs candle nut.
¼ sdt jintan bubuk. ¼ tsp powdered cumin.
½ sdt merica bubuk. ½ tsp powdered pepper.
Garam secukupnya. Some salt.
1000 ml air kelapa. 100 ml coconut water.

Bahan pelapis/coating ingredients:
4 butir telur ayam, kocok lepas. 4 pcs egg, beaten.
1 sdm air lemon. 1 tbsp lemon juice.
½ sdt garam. ½ tsp salt.
1 sdt bawang putih bubuk. 1 tsp garlic powder.
½ sdt lada bubuk. ½ tsp pepper powder.
50 gr tepung terigu or tepung tapioka. 50 gr cake flour or tapioca
100 gr tepung beras or tepung almon. 100 gr rice flour or almond powder.

Bahan Sambal Geprek:
20 buah cabe rawit merah(sesuai selera). 20 pcs red chili padi (as your desire).
3 siung bawang putih. 3 cloves garlic.
6 buah bawang merah. 6 pcs shallot.
¼ buah tomat, potong. ¼ pcs tomato, cut.
Garam secukupnya. Some salt.
2 buah jeruk limau.
2 cm kencur. 2 cm fragrant ginger.

Cara/method:
1. Membuat Ayam Geprek/how to cooke Crushed Chicken:
** Rebus air kelapa, bersama lengkuas, daun jeruk dan sereh. Masukkan ayam. Boiling coconut water with galangal, line leaves and lemongrass. Add chicken.
** Haluskan bumbu ungkep, tumis dan masukkan ke rebusan ayam. Masak hingga ayam empuk, tiriskan. Ground stew seasoning, saute and add into boiled chicken and strain.
** Panaskan minyak. Heat oil.
** Campur kocokan telur dgn air lemon. Mix beaten egg with lemon juice
** Campur bahan pelapis kering kecuali telur. Mix dried coating ingredients except egg.
** Celupkan ayam pada telur, gulingkan ke pelapis kering ulang hingga 2-3x. Dip the chicken on the egg and roll it into dried dipping up to 2-3 times.
** Masukkan ke dlm minyak panas dan goreng hingga keemasan dan tiriskan. Add into hot oil and frying until golden, strain.
2. Goreng ½ matang semua bahan sambal. Haluskan bahan sambal dan garam dgn cobek, beri air jeruk, sisihkan. Half fried all sambal ingredients. Ground sambal ingredients and salt on cobek, add lime juice, set aside.
3. Letakkan ayam goreng dan pukul ayam diatas sambal. Place fried chicken and crush on sambal.
4. Sajikan dgn nasi hangat dan lalapan. Serve with warm rice and raw veggie.

AYAM COBEK SAMBAL MANADO – CHICKEN COBEK WITH MANADONESE SAMBAL

Bahan/ingredients:
300gr daging ayam dada/paha fillet, potong sesuai selera. 300 gr fillet chicken breast/thigh, cut as your desire.

Bumbu perendam ayam/chicken marinate:
2 siung bawang putih parut. 2 cloves grated garlic.
1 cm jahe diparut. 1 cm grated ginger.
½ sdt garam. ½ tsp salt.
¼ sdt ngohiong bubuk. ¼ tsp fivespices..
¼ sdt lada bubuk. ¼ tsp pepper.

Bahan pencelup/dipping ingredients:
4 sdm tepung beras. 4 tbsp rice flour.
1 sdm tepung tapioka. 1 tbsp tapioka flour.
¼ sdt garam. ¼ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper.
1 sdt bawang putih bubuk. 1 tsp powdered garlic.
80-100 ml air dingin. 80-100 ml cold water.

Bahan sambal manado/manadonese sambal ingredients:
20 buah cabe rawit merah (sesuai selera). 20 pcs red chili padi.(as your desire)
3 buah tomat ceri. 3 pcs cherry tomato.
10 buah bawang merah. 10 pcs shallot.
1 sdm air jeruk nipis. 1 tbsp lime juice.
¼ sdt garam. ¼ tsp salt.
3 sdm minyak panas.

Cara/method:
1. Campur daging ayam dgn bumbu perendam dan simpan di lemari es selama 1 jam. Marinate chicken and refrigerate for 1 hour.
2. Panaskan minyak utk menggoreng ayam. Heat oil for deep fry.
3. Campur bahan pencelup. Mix dipping ingredients.
4. Celupkan ayam pada adonan pencelup dan masukkan dlm minyak panas, goreng hingga keemasan, tiriskan. Dipping chicken into dipping batter and enter into hot oil, frying unti golden, strain.
5. Haluskan bahan sambal, siram dgn minyak panas, aduk, beri air jeruk nipis dan aduk. Ground sambal ingredients, add hot oil, stir and add lime juice, stir.
6. Sajikan ayam dgn cara dipenyetkan ke sambal dlm cobek. Serving chicken with press on sambal on cobek.
7. Sajikan bersama nasi dan pelengkap pilihan. Serving rice and condiments your choice.

SATE TAICHAN – TAICHAN SATAY

Utk 30 tusuk sate. For 30 satay.
Bahan/ingredients:
500 gr daging dada ayam/paha, potong dadu. 500 gr boneless chicken breast/thigh, cut cube.
½ sdt lada. ½ tsp pepper.
2 siung bawang putih, dihaluskan. 2 cloves garlic, ground.
2 sdt garam. 2 tsp salt.
2 sdm minyak sayur. 2 tbsp veggie oil
2 buah jeruk nipis, ambil airnya. 2 pcs lime, use the water.

Bahan sambal/sambal ingredients:
10 buah cabe rawit merah. (Sesuai selera).10 pcs red chili padi. (As your desire)
2 sdm cabe merah halus. 2 tbsp ground red chili
2 buah tomat ceri. 2 pcs cherry tomato
6 buah bawang merah. 6pcs shallot
4 siung bawang putih. 4 cloves garlic.
50 ml air. 50 ml water.
½ sdt gula merah. ½ tsp brown sugar.
¼ sdt lada. ¼ tsp pepper.
½ sdt garam. ½ tsp salt.
3 sdm minyak sayur untuk menumis, 3 tbsp veggie oil for saute.

Pelengkap/condiment:
Lontong atau nasi. Rice cake or rice.
Irisan tomat dan timun. Sliced of tomato and cucumber.
Kemangi sebagai hiasan. Indonesia basil for garnish.

Cara/method:
1. Campur daging ayam dgn bumbu dan diamkan 2 jam dilemari es. Marinate chicken with seasoning and refrigerate for 2 hour.
2. Haluskan bahan sambal dan tumis hingga matang benar. Beri air jeruk nipis dan aduk rata. Ground all sambal ingredients and saute until cooked. Add lime juice and stir well.
3. Panggang hingga matang.(aku pake airfryer 180C selama 15 menit). Grill until cooked. (I used airfyer 180C for 15 minutes)
4. Saran saji/how to serve:
Letakkan sate diatas piring, beri sambal diatasnya. Sajikan bersama pelengkap. Place satay on dish, pour sambal over the satay. Serve with condiment.

Note:
Utk daging bagian dada beri 1/2 sdm tepung maizena saat merendam spy daging ayam lembut. For chicken first add 1/2 tbsp cornstarch when you marinate….so you get the smooth breast

AYAM JERIT – CHICKEN SCREAM

Bahan/ingredients:
1 ekor ayam kampung utuh . A whole farmer chicken.
20 biji pete, belah 2, 20 pcs sticky bean, cut on 2

Bahan ayam ungkep/stew chicken seasoning:
5 siung bawang putih. 5 cloves garlic
8 buah bawang merah. 8pcs shallot.
1 sdm ketumbar. 1 tbsp coriander.
3 butir kemiri. 3 pcs candle nut
2 cm kunyit dibakar. 2 cm roasted turmeric.
½ sdt lada bubuk. ½ tsp pepper powder.
2 lbr daun salam. 2 pcs indonesia bay leaf.
5 lbr daun jeruk. 5 pcs lime leaves.
3 cm lengkuas, keprak. 3 cm galangal, crust.
1 cm jahe. 1 cm ginger.
2 btg sereh.2 stalks lemongrass.
Garam dan gula secukupnya. Some salt and sugar.
1000ml air kelapa. 1000 ml coconut water.

Bahansambal/sambal ingredients:
5 buah cabe merah, haluskan kasar. 5 pcs red chili, roughly ground.
15-20 buah cabe rawit merah organic, haluskan kasar. (Sesuai selera). 15-20 pcs organic red chili padi, roughly ground. (As your desire)
10 buah bawang merah. 10 pcs shallot.
5 siung bawang putih. 5 cloves garlic.
6 lembar daun jeruk. 6 pcs lime leaves
4 buah belimbing wuluh. 4 pcs sour star fruits.
2 batang sereh, keprak. 2 stalks lemongrass, crust.
2 lembar daun salam. 2 pcs indonesia bayleaf.
4 buah jeruk limau. 4 pcs lime
1 cm kencur, iris tipis. 1 cm fragrant, finely slice.
1 cm lengkuas, iris tipis. 1 cm galangal finely slice.
Garam dan gula merah secukupnya. Some salt and brown sugar.

Cara/method:
1. Potong jd 4 bagian dan cuci ayam. Rebus dgn bumbu ungkep utk ayam goreng hingga empuk. Cut on 4 and wash chicken. Stew chicken with stew chicken seasoning until tender.
2. Goreng ayam, tiriskan dan suwir kasar. Fried, drain chicken, and roughly shredded the chicken
3. Goreng ½ matang bawang merah, bawang putih, kencur dan lengkuas. dan haluskan. Half cook shallot, garlic, fragrant ginger and galangal and ground.
4. Tumis semua bumbu halus, cabe, daun jeruk, daun salam dan sereh hingga harum dan matang. Masukkan ayam suwir, air jeruk limau, blimbing wiluh dan pete, aduk rata. Saute ground spices, chillies, lime leaves, indonesia bayleaf and lemongrass until fragrant and well cook. Add shredded chicken, lime juice, sour star fruit and sticky bean, stir well.
5. Siap dihidangkan dgn nasi dan lalapan. Ready to serve with rice and row veggie.

Note:
Bila menggunakan ayam negri/boiler, tdk perlu direbus, ambil dagingnya dan lumuri bumbu ayam diamkan semalam. Lgsg goreng dan suwir dan proses dgn sambal. If you use chicken boiler, no need to boiling, just use chicken boneless and marinate with stew chicken seasoning and refrigerate for a nite. And frying chicken, shredded and process with sambal.

Nasi Ayam Hainan – Hainan Chicken Rice


NASI AYAM HAINAN – HAINAN CHICKEN RICE

Bahan/ingredients:
1 ekor ayam probiotik utuh, bersihkan isi perut potong kaki. 1 pcs probiotic chicken, clean the stomach, cut out the leg.
4 iris jahe. 4slices ginger.
2 buah daun bawang, ikat. 2 stalks spring onion, tied.
6 sung bwg putih. 6 cloves garlic
Garam secukupnya utk melumuri ayam. Some salt for marinate chicken.
2000 ml air utk merebus ayam. 2000 aml water for boiling chicken.

Saus merah/Red sauce:
2 buah cabe merah, buang biji. 2 pcs red chili, seedless.
4 buah cabe merah kriting. 4 pcs curly red chili.
6 siung bwg putih. 6 cloves garlic.
6 iris jahe kupas. 6 slices peeled garlic.
6 buah jeruk kasturi, ambil airnya. 6 pcs calamansi juice.
1 sdt garam. 1 tsp salt.
1 sdt gula. 1 tsp sugar.
80 ml kaldu ayam. 80 ml chicken stock
½ sdm minyak wijen. ½ tbsp sesame oil.

Saus jahe/Ginger sauce:
2 cm jahe kupas. 2 cm peeled ginger
5 siung bwg putih. 5 cloves garlic.
4 buah bwg merah. 4 pcs shallot.
½ sdm minyak wijen. ½ tbsp sesame oil.
2 sdm minyak salad. 2 tbsp salad oil.
½ sdt garam. ½ tsp salt
¾ sdt gula. ¾ tsp sugar.
30 ml kaldu ayam. 30 ml chicken stock.

Nasi hainan/hainanese rice:
450 gr beras. 450 gr rice
50 gr ketan. 50 gr glutinous rice
Cuci dan rendam air 1 jam. Wash and soak in the water for 1 hour.
1 bongkah bwg putih belah tanpa kupas. A bulb of garlic, cut a half with put peel the skin.
4 lbr daun pandan. 4 pcs pandan leaf.
3 iris jahe. 3 slice ginger.
2 iris kencur. 2 slice fragrant ginger.
3 iris lengkuas. 3 slices galangal.
550 ml kaldu ayam. 550 ml chicken stock.
1 sdm minyak sayur. 1 tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.

Saus utk ayam/sauce for chicken:
¼ cup kaldu ayam. ¼ cup chicken stock.
1 sdm kecap asin. 1 tbsp soy sauce.
1 sdt gula. 1 tsp sugar.
1 sdt minyak wijen. 1 tsp sesame oil.

Pelengkap/complimentary:
Daun ketumbar. Cilantro
Timun, belah 2, iris halus. Cucumber, cut on 2, finely slice

Cara/method:
1. Lumuri ayam bag dalam dan luar dgn garam. Masukkan jahe, daun bawang dan bwg putih ke perut ayam, semat rapat dgn tusuk gigi.. Marinate in and out side of chicken with salt. Enter ginger, spring onion and garlic, pin-tight with a toothpick.
2. Didihkan air. Pegang 1 bagian kaki ayam dan siram dgn air mendidih. Masukkan ayam dan rebus hingga mendidih selama 10 menit. Matikan api dan tutup kompor biarkan ayam di dalam panci selama 1 jam atau lebih. Boiling water. Hold a part of chicken leg, pour all body of chicken with hot water. Add chicken into boiling water, and boiling for 10 minutes. Turn off the stove and cover a pan, let’s stand chicken for an hour or more.
3. Cuci dan rendam beras dan ketan selama 1 jam, tiriskan. Wash and soak rice and glutinous for an hour. Strain.
4. Panaskan minyak sayur dan minyak wijen. Masukkan dan tumis jahe, lengkuas, kencur dan bwg putih hingga harum. Masukkan beras dan timis hingga harum, pindahkan ke dlm rice cooker, tambahkan pandan dan kaldu ayam, heat veggie oil and sesame oil. Add and saute ginger and garlic until fragrant. Add rice and saute until fragrant, transfer the rice into rice cooker,add pandan leaf and chicken stock.

5. Membuat sambal merah/how to cook red sambal: blender cabe, bwg putih, jahe, garam, gula dan kaldu ayam hingga halus dan didihkan. Tambahkan air jeruk kasturi, aduk rata. Blender chili, garlic, ginger, salt, sugar and chicken stok until smooth and boiling. Add calamansi juice, stir well.
6. Memasak saus jahe/how to cook ginger sauce: blender halus semua bahan saus jahe. Dan rebus hingga didih. Finely blender all ingredients of ginger saus. And boiling awhile.
7. Siapkan air es. Angkat ayam dan masukkan dlm air es, diamkan selama 15 menit, tiriskan. Prepare ice water. Lift up chicken and enter into ice water, let’s stand for 15 minutes, strain.

8. Keluarkan jahe, bwg putih, dan bwg daun dr perut ayam, potong ayam. Take out ginger, garlic and spring onion from chicken stomach, cut chicken.
9. Iris timun tipis dan letakkan di pinggir piring. Letakkan irisan ayam di piring. Finely slice cucumber and put on side of dish. Place the chicken on dish.
10. Campur bahan saus ayam dan siramkan diatas ayam. Hias dgn daun ketumbar. Sajikan bersama nasi hainan, sup dan saus sambal. Mix sauce ingredients and pour on top of chicken. Garnish with cilantro and serving with hainan rice, soup, red sauce and ginger sauce.

Note:
Utk ayam kampung besar di rebus 15-20menit. For farmer chicken big size, boiling for 15-20 minutes

SROTO SOKARAJA BANYUMAS

Bahan/ingredients:
1 ekor ayam kampung besar. 1 pcs big size farmer chicken.
2000 ml air. 2000 ml water
2 cm lengkuas, keprak. 2 cm galangal, crust.
4 lbr daun salam. 4 lbr bayleaf.
2 cm jahe, keprak. 3 cm ginger, crust.
2 btg sereh, keprak. 2 stalks lemongrass
Minyak utk menggoreng ayam. Oil for frying chicken.

Bumbu halus/ground spices:
Garam dan gula secukupnya. Some salt and sugar.
70 gr bawang merah. 70 gr shallot.
30 gr bawang putih. 30 gr garlic.
6 butir kemiri. 6 pcs candle nut.
3 cm kunyit bakar. 3 cm roasted turmeric.
1 sdt lada bubuk. 1 tsp pepper powder.
2 sdm minyak utk menumis. 2 tbsp oil for saute.

Sambal kacang/Sambal peanut:
100 gr kacang tanah sangrai. 100 gr roasted peanut.
6 btr bawang merah. 6 pcs shallot.
4 siung bawang putih. 4 cloves garlic.
8 buah cabai rawit. 8 pcs chili padi.
2 cm kencur. 2 cm fragrant ginger.
1 sdt garam. 1 tsp salt.
½ sdt gula merah. ½ tsp brown sugar.
140 ml air panas. 140 ml hot water
½ sdm minyak utk menumis. ½ tbsp oil for saute

Sambal Rawit/sambal chili padi:
100 gr rawit merah. 100 gr red chili padi.
4 siung bawang putih. 4 cloves garlic.
4 btr bawang merah. 4 pcs shallot.
½ sdt garam. ½ tsp salt.

Pelengkap/complementary:
100 gr mie soun. 100 gr glass noodle
100 gr touge. 100 gr bean sprout
4 buah telur rebus, bagi 2. 4 pcs boiled egg, cut on 2.
Jeruk karturi/nipis. Calamansi/lime
Lontong/nasi. Rice cake/rice.

Taburan/topping:
Seledri. Celery
Daun bawang. Scallion.
Bawang putih goreng. Fried garlic
50 gr kacang kedelai sangrai (selera, aku ga pakai). 50 gr fried soya bean.(Optional, I don’t use)
Kerupuk kanji warna merah(boleh diganti). Red sago cracker. (optional). Aku pakai emping. I use emping crackers.

Cara/method:
1. Didihkan air dan masukkan ayam bersama sereh, lengkuas, daun salam, jahe. Boiling water and add chicken with lemongrass galangal, bayleaf, ginger.
2. Haluskan dan tumis bumbu halus hingga halus, masukkan dlm sup dan masak dgn api kecil hingga ayam empuk. Ground and saute ground spices until fragrant, add in chicken soup, simmer until chicken tender.
3. Panaskan minyak, goreng ayam dan suwir. Heat oil, fried chicken and shrended.
4. Haluskan bumbu kacang dan tumis. Ground sambal peanut and saute.
5. Kukus cabe, bawang merah dan bawang putih. Haluskan bersama garam. Steam chili padi, shallot and garlic. Ground with salt.
6. Sajikan sroto panas bersama nasi/lontong, pelengkap serta taburan serve sroto hot with rice/rice cake, complementary, and topping.

AYAM GORENG KANTON – CANTONESE FRIED CHICKEN

Bahan/ingredients:
1 ekor ayam probiotik.1 pcs probiotik whole chickens
Minyak utk menggoreng. Oil for deep fry

Bumbu perendam/marinade seasoning:
1 sdt garam. 1 tsp salt.
½ sdt lada putih. 1⁄2 tsp white pepper.
½ sdt jahe bubuk. ½ tsp ginger powder.
1 sdt bwg putih bubuk. 1 tsp garlic powder.
½ sdt ngohiong bubuk. ½ tsp chinese five spices

1 sdm kecap asin. 1 tbsp soy sauce.
2 tsp shaoxing wine

Pelengkap/complimentary
Campuran garam, ngohiong
bubuk dan lada.
Daun ketumbar. Cilantro.
Jeruk nipis. Lime.
Krupuk. Crackers.

Cara/method:

1. Belah ayam menjadi 2 bagian, keringkan dgn tisu dapur dan lumuri dgn ngohiong, garam, bwg putih bubuk, jahe bubuk dan oles dgn campuran kecap asin dan arak shao hsing, diamkan di kulkas semalam tanpa ditutup, letakkan ayam diatas rak dgn posisi kulit diatas. Fillet chicken into 2 part, pat it dry with kitchen towel and marinade with chinese five spices, salt, garlic powder, and ginger powder and brushing with mixed soy sauce and wine shao hsing. Let it sit in the fridge overnight without covering it, place the chicken with the skin side up.

2. Oven ayam selama 1 jam dgn suhu 200 C. Oven the chicken for an hour in 200 C
3. Siapkan minyak panas, masukkan ayam dan goreng hingga kecoklatan. Heat up oil and fry chicken until it turns brown
4. Sangrai lada bubuk, ngohiong dan garam. Roast grinded black pepper, chinese five spices, and salt.
5. Potong2 ayam dan sajikan dgn pelengkap. Cut the chicken in pieces and serve complimentary.
