Soto Ayam Ambengan


SOTO AYAM AMBENGAN

Bahan/ingredients:
1 ekor ayam kampung ukuran besar, potong 4 bagian. 1 chicken big size, cut on 4
2 btg daun bawang, slice. 2 stalk green onion, slice.
2 btg sereh. 2 stalks lemongrass.
10 lbr daun jeruk. 10 pcs lime leaves
3000 ml air. 3000 ml water
3 sdm minyak utk menumis bumbu. 3 tbsp oil for saute herbs

Pelengkap/complimentary:
Sambal. (cabe rawit merah rebus dihaluskan dgn garam secukupnya). Sambal (boiled red cayenne ground with some salt).
Jeruk nipis. Lime
5 telor rebus, iris belah 2. 5 boiling eggs, cut into 2.
Kecap manis (pilihan). Dark soy sauce (optional)
1 buah kentang rebus, iris. 1 pcs boiled potato, slice.
Daun seledri, iris. Celery leaves, slice.
Daun bawang kecil, iris. Scallion, slice.
1 bgks soun, rendam air dan tiriskan 1 pack glass noodle, soak on water and strain.
100 gr toge, seduh air panas dan tiriskan. 100 gr beansprout, pour with hot water, strain.
Koya Kelapa(250 gr kelapa parut, sangrai dan 50 gr bawang putih goreng, dihaluskan). Koya Coconut (250 gr roasted grated coconut and 50 gr fried garlic, ground).
Krupuk pilihan. Your choice crackers.

Bumbu halus/ground spices:
12 bwg merah. 12 shallot
10 bwg putih. 10 cloves garlic
4 cm lengkuas. 4 cm galangal
2 cm jahe. 2 cm ginger
2 cm kencur. 2 cm fragrant ginger
4 cm kunyit. 4 cm turmeric
250 gr udang kecil, goreng kering. 250 gr shrimp small size, fried crispy.
1 sdm ketumbar bubuk. 1 tbsp coriander powder.
½ sdt jintan. ½ tsp cumin.
5 kemiri. 5 candlenut.
Garam secukupnya. Some salt .
1 sdt lada bubuk. 1 tsp pepper.

Cara/methods:
1. Didihkan air, masukkan ayam, daun jeruk dan sereh. Boil water, add chicken, lime leaves and lemongrass
2. Goreng bawang merah, bawang putih, jahe, lengkuas, kencur dan kunyit ½ matang. Haluskan bersama bahan bumbu yg lain, lalu tumis hingga harum dan matang, masukkan ke dlm kuah ayam.
Fried shallot, garlic, ginger, galangal, fragrant ginger and turmeric medium well. Ground with other ingredients of ground spices. Stir Fry until fragrant and well cook, add into chicken soup.
3. Masak hingga ayam empuk, angkat dan iris tipis. Masukkan bawang daun ke dlm sup. Cook until chicken tender. Lift up and thinly slice, add green onion into the soup.
4. Sajikan bersama pelengkap. Serve with complimentary.

Note:
Perbedaan Soto Ayam Lamongan dan Soto Ayam Ambengan adalah pada KOYA. Soto Ayam Ambengan menggunakan campuran kelapa sangrai dan bawang putih goreng, disebut Koya Kelapa. Soto Ayam Lamongan menggunakan campuran kerupuk udang dan bawang putih goreng, disebut Koya krupuk. The difference is Soto Ayam Lamongan and Soto Ayam Ambengan is at the KOYA. Soto Ayam Ambengan uses a mixture of roasted coconut and fried garlic, called Koya Kelapa. Soto Ayam Lamongan uses a mixture of prawn crackers and fried garlic, called Koya krupuk.

SOTO BANGKONG SEMARANG

Bahan/ingredients:
1 ekor ayam kampung, bagi 4. 1 farmer chicken big size, cut on 4.
6 btr telur kampung rebus. 6 pcs boiled farmer egg.
2 btg serah. 2 stalks lemongrass.
2 lbr daun salam. 2 pcs indonesian bayleaf.
8 lbr daun jeruk. 8 pcs lime leaf.
3 cm lengkuas. 3 cm galangal.
2 cm jahe. 2 cm ginger.

Bumbu halus/ground seasoning:
10 btr bawang merah. 10 pcs shallot.
5 siung bawang putih. 5 cloves garlic.
2 btr kemiri. 2 pcs candlenut.
½ sdt jinten. ½ sdt caraway.
½ sdm ketumbar. ½ tsp coriander.
2 sdt garam (sesuai selera).2 tsp salt. (As your desire).
¼ sdt lada. ¼ tsp pepper.
Gula secukupnya. Some sugar.

Pelengkap/condiment:
Nasi. Rice
Toge. Beansprout.
Soun. Glass noodle.
Daun bawang iris. Sliced spring onion.
Seledri iris. Sliced celery.
Jeruk nipis. Lime
Bawang putih goreng. Fried garlic.
Sambal. Sambal.
Krupuk pilihan. Choice of crackers.
Kecap manis. Sweet dark soy sauce.
Dan lainnya. And others.

Cara/method:
1. Rebus air dan masukkan ayam bersama jahe, daun salam, daun jeruk, lengkuas dan sereh. Boiling water and add chicken with ginger, indonesian bayleaf, lime leaf, galangal and lemongrass.
2. Tumis bumbu halus hingga harum, masukkan kedalam rebusan ayam. Saute ground seasoning until fragrant, add into boiling chicken.
3. Rebus hingga ayam empuk, angkat dan suwir. Boiling until chicken tender, lift up and shredded.
4. Sajikan bersama pelengkap.

Sayap Ayam Pedas dan Asam – Spicy and Sour Chicken Wings

SAYAP AYAM PEDAS & ASAM – SPICY & SOUR CHICKEN WINGS

Bahan/ingredients:
1000 gr sayap ayam, cuci bersih dan potong 2. 1000 gr chicken wings, wash and cut on 2

Bumbu perendam/marinate:
½ sdm bawang putih bubuk. ½ tbsp garlic powder.
1 sdm gula merah. 1 tbsp brown sugar.
6 buah adas, ambil bijinya. 6 pcs fennel, just take the seed.
200 gr saus tomat. 200 gr tomato sauce (delmonte)
50 gr saus sambal. 50 gr chili sauce.
4 sdm saus inggris. 4 tbsp worcestershire sauce.
20 ml saus tabasco. 20 ml tabasco sauce.
½ sdt jinten bubuk. ½ tsp cumin powder.
2 sdt lada hitam bubuk. 2 tsp black pepper powder.
1 sdm cabe bubuk. 1 tbsp chilli flake.

Cara/method:
1. Haluskan biji adas, campur dgn bumbu. Rendam sayap ayam dgn bumbu simpan semalam di kulkas. Ground fennel, mix with other spice, refrigerate for a nite.
2. Proses dgn airfryer 200C selama 15 menit. Process with airfryer 200C for 15 minutes.

Bebek Goreng Sambal Kedondong – Fried Duck Sambal Ambarella

BEBEK GORENG SAMBAL KEDONDONG – FRIED DUCK SAMBAL AMBARELLA

Bahan/ingredients:
1 ekor bebek cuci dan potong 8 bagian. Lumuri air jeruk nipis dan diamkan 30 menit. 1 duck, wash and cut 8 part. Marinate with lime and let’s stand for 30 minutes.
1 btg sereh keprak. 1 stalk lemongrass, crush.
2 cm lengkuas, keprak. 3 cm galangal, crush.
4 lbr daun jeruk. 4 pcs lime leaf.

Bumbu/seasoning:
12 buah bawang merah. 12 pcs shallot.
8 siung bawang putih. 8 cloves garlic.
2 btg serai, iris halus. 2 stalks lemongrass, finely slice.
4 lbr daun jeruk. 4 pcs lime leaf.
8 pcs kemiri. 8 pcs candlenut
½ sdm ketumbar. ½ tbsp coriander.
1 sdt merica. 1 tsp pepper
3 cm kunyit. 3 cm turmeric.
3 cm lengkuas. 3 cm galangal.
2 cm jahe. 2 cm ginger.
½ sdm gula merah. ½ tbsp brown sugar.

Sambal Kedondong/Sambal Ambarella:
1 buah kedondong, kupas dan parut kasar. 1 pcs ambarella, peel and roughly grated.
5 buah cabe rawit merah(sesuai selera). 5 pcs red cayenne.(as your desire)
3 buah bawang merah. 3 pcs shallot.
1 siung bawang putih. 1 clove garlic.
Garam secukupnya. Some salt.
1 sdt gula merah. 1 tap brown sugar.
½ sdt terasi bakar. ½ tsp roasted belacan.
1 sdm minyak panas. 1 tbsp hot oil.

Pelengkap/condiment:
Bumbu sangrai. Roasted spices.
Kemangi. Indonesia Basil.
Pete. Sticky bean.
Timun. Cucumber.
Nasi. Rice.
Kuah sisa rebusan. Remaining broth.

Cara/method:
1. Haluskan bumbu dan lumuri bebek inapkan semalam di kulkas. Ground the seasoning and marinade the duck, refrigerate for a nite.
2. Rebus bebek dgn sereh, lengkuas dan daun jeruk hingga bebek empuk dan air menyusut dgn api kecil. Boiling the duck with lemongrass, galangal and lime leaf until the duck tender and reduce the water.
3. Angkat bebek dan saring bumbunya, kemudian sangrai hingga bumbu kering. Lift up the duck and strain the seasoning, and then roasted the seasoning until dried.
4. Haluskan cabe rawit, bawang merah dan bawang putih, tambahkan gula merah, garam dan terasi, siram minyak panas, aduk, masukkan kedondong dan aduk rata. Ground cayenne, shallot and garlic, add brown sugar, salt ans belacan, pour hot oil, stir, add ambarella and stir well.
5. Panaskan minyak dan goreng bebek, sajikan bebek goreng dgn nasi yg disiram kaldu bebek dan pelengkap. Heat oil and frying the duck. Serving the duck with duck broth over the rice and condiment.

Note:
Aku tidak menggoreng bebek nya, tetapi aku memproses nya dgn AIR FRYER dgn suhu180C selama 15 menit. I didn’t fry the duck, but I processed with AIR FRYER with temperature 180C for 15 minutes.

INGKUNG AYAM PEDAS JOGJAKARTA – JOGJAKARTA SPICY INGKUNG CHICKEN

Bahan/ingredients:
1 ekor ayam kampung utuh belah dadanya. 1 pcs farmer chicken, cut the breast.
300 ml santan dr ½ buah kelapa (saya pakai 200 ml santan KARA). 300 ml coconut milk form ½ coconut. (I use 200 ml KARA coconut milk)
2 lbr daun salam. 2 pcs indonesia bayleaf.
1 btg sereh, keprak.1 stalks lemongrass, crush.
4 lbr daun jeruk. 4 pcs lime leaves.
400 ml air panas. 400 ml hot water
1 sdm air asam jawa. 1 tbsp java tamarind water.

Bumbu/spices:
10 buah cabe kriting. 10 pcs curly chili.
5 buah cabe rawit merah. (Sesuai selera). 5 pcs red cayenne (as your desire).
8 buah bawang merah. 8 pcs shallot.
5 siung bawang putih. 5 cloves garlic.
2 cm kunyit. 2 cm turmeric.
1 cm kencur. 1 cm fragrant ginger.
½ sdm ketumbar. ½ tbsp coriander.
½ sdt merica. ½ tsp pepper.
3 butir kemiri. 3 pcs candlenut.
2 cm jahe. 2 cm ginger.
3 cm lengkuas. 3 cm galangal.
½ sdm gula merah. ½ tbsp brown sugar.
1 sdt garam. 1 tsp salt.

Cara/method:
1. Goreng ½ matang semua bahan bumbu dan haluskan. (Aku pakai blender khusus bumbu). Half cooked all spices and ground the spices. (I used spices blender)
2. Tumis bumbu, dgn sereh, daun salam dan daun jeruk hingga harum, tambah garam dan gula merah. Tuang air panas dan aduk. Saute the spices with sereh, bayleaf and lime leaves until fragrant. Add salt and brown sugar, pour hot water and stirring.
3. Masukkan air asam dan ayam. Rebus hingga air berkurang. Add tamarind water and chicken. Boiling until reduce the water.
4. Masukkan santan dan didihkan hingga ayam empuk. Add coconut milk and boiling until chicken tender.
5. Setelah ayam empuk pindahkan ayam ke piring saji dan sisa kuah santan sajikan terpisah bersama sambal trasi dan nasi. After chicken tender place on dish and serving with remaining coconut soup, sambal belacan and rice.

3. Masukkan air asam dan ayam. Rebus hingga air berkurang. Add tamarind water and chicken. Boiling until reduce the water.
4. Masukkan santan dan didihkan hingga ayam empuk. Add coconut milk and boiling until chicken tender.
5. Setelah ayam empuk pindahkan ayam ke piring saji dan sisa kuah santan sajikan terpisah bersama sambal trasi dan nasi. After chicken tender place on dish and serving with remaining coconut soup, sambal belacan and rice.

Note:
Kuah santan sisa rebusan bisa utk makan bubur atau utk areh gudeq. Remaining coconut milk soup can be eat with porridge or areh gudeq.

Nasi Karaage Saus Telur Asin – Karaage in Salted Egg Sauce Rice

NASI KARAAGE SAUS TELUR ASIN – KARAAGE IN SALTED EGG SAUCE RICE

Untuk sajian per porsi. For personal serving

Bahan/ingredients:
1 buah paha ayam probiotik tanpa tulang, potong kotak. 1 pcs boneless probiotik chicken thigh, cut cube.

Bumbu perendam/marinate:
1 siung bawang putih, haluskan. 1 cloves garlic, ground.
⅛ sdt garam, ⅛ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper powder.
⅛ sdt ngohiong bubuk. ⅛ tsp five spice powder.
½ sdm mirin. ½ tbsp mirin.
1 sdm sake. 1 tbsp sake.

Bahan saus/sauce ingredients:
1 butir kuning telur asin matang, haluskan. 1 pcs cooked salted egg yolk, mashed.
2 sdm mentega tawar. 2 tbsp unsalted butter. (Elle & Vire)

Bahan pencelup kering/dried dipping ingredients:
2 sdm tepung beras. 2 tbsp rice flour.
1 sdm tepung maizena. 1 tbsp corn starch.
¼ sdt garam. ¼ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper powder.

Pelengkap/condiment:
Semangkuk nasi panas. A bowl of hot rice.
Nori secukupnya. Some seaweed/nori.
Biji wijen secukupnya. Some sesame seed.
Acar jahe merah. Pickled red ginger. (gari in Japanese)
2 buah cabe rawit merah, iris. 2 pcs red cayanne, slice
Semangkuk miso sup. A bowl of miso soup.

Cara/Method:
1. Campur daging ayam dgn bumbu perendam dan diamkan di lemari es selama 2 jam. Marinate chicken and refrigerate for 2 hours.
2. Panaskan minyak dan campur bahan kering. Head oil and combine dried ingredients.
3. Campur daging ayam dgn bahan kering dan masukkan ke dalam minyak panas, goreng hingga kecoklatan dan tiriskan. Combine chicken with dried ingredients and enter into hot oil, frying until golden and strain.
4. Panaskan mentega, masukkan kuning telur asin, aduk hingga rata. Masukkan karaage dan aduk rata. Heat butter, add mashed salted egg, stirring. Add karaage and stir well.
5. Siapkan nasi panas dlm mangkuk saji, letakkan karaage saus telur asin diatasnya lalu taburi pelengkap seperti pada foto dan sajikan dgn miso sup. Prepare hot rice on a bowl, place karaage in salted egg sauce on rice, and then sprinkle with other condiment look like in photo and serving with miso soup.
