Sankaya – Thai Pumpkin Custard


SANKAYA – THAI PUMPKIN CUSTARD

Bahan/ingredients:
1 buah labu kabocha ukuran kecil. 1 pcs of kabocha, small size.
5 butir telur kampung (aku hanya pakai 2 telur spy Joyku bisa ikut menikmati). 5 pcs farmer eggs. (I only use 2 eggs so my Joy can come enjoy it)
50 ml santan kental . 50 ml coconut milk. (kara)
150 ml air. 150 ml water.
75 gr gula aren. 75 gr palm sugar.
Sejumput garam. A pinch of salt.
½ sdt vanila ekstrak. ½ tsp vanilla extract.

Cara/method:
1. Cuci bersih labu. Potong bagian atas. gunakan pisau yang sangat tajam dan bergerigi untuk membuat lubang. Wash your pumpkin thoroughly. Cut a circular opening in the top. and then use a very sharp and jagged knife to cut it out.

2. Ambil semua bagian dalam labu dan bilas untuk memastikan bagian dalamnya bersih dan halus. Scoop out all of the pumpkin insides and rinse to ensure it’s clean and smooth inside.

3. Campur gula aren, santan, air, garam, dan ekstrak vanila di atas api sedang sampai gula aren larut.diamkan hingga suhu ruang. Mix the palm sugar, coconut milk, water, salt, and vanilla extract over medium heat until the palm sugar dissolves. Let stand up to room temperature.

4. Tambahkan telur ke campuran santan dan aduk rata untuk membentuk puding. Add the eggs to the the coconut milk mixture and mix well to form the custard.

5. Tuang sambil di saring custard ke dalam lubang labu, hanya sampai pada bagian bawah yg terbuka melingkar. Dan buang buihnya dgn sendok. Pour while drain the custard into your hollowed out pumpkin, just to the bottom of the circular opening. And throw away froth with spoon.

6. Letakkan pada kukusan dan kukus selama 45 menit tanpa disentuh. Place in a steamer and let steam for 45 minutes untouched.

7. Setelah matang, biarkan dingin sebelum menyentuh. Potong menjadi 8 bagian. Once it’s done, allow to cool before touching. Slice into 8 pieces.

Choco Coffee Pudding Jelly With Kahlua Sauce


CHOCO COFFEE PUDDING JELLY WITH KAHLUA SAUCE

Bahan/ingredients:
1 bungkus agar2 putih. 1 pack agar plain. (Swallow)
1 bungkus jelly putih. 1 pack jelly plain. (Nutrijel)
1000 ml susu segar tawar. 1000 ml plain fresh milk. (Greenfield)
600 ml krem kental. 600 ml whipping cream. (Greenfield)
160 gr gula pasir (sesuai selera). 160 gr granulated sugar (as your desire)
½ sdt ekstrak vanila. ½ tsp vanilla extract.
20 gr coklat bubuk. 20 gr cocoa. (Hersley’s super dark)
15 gr kopi instant. 15 gr instant coffee. (Nescafe)

Saus Kahlua/Kahlua sauce:
300 ml susu segar tawar. 300 ml plain fresh milk. (Greenfield)
100 ml krem kental. 100 ml whipping cream. (Greenfield)
2 sdm gula pasir.(sesuai selera). 2 tbsp granulated sugar.
2 sdm tepung custard. 2 tbsp custard flour.
2 sdm Kahlua. 2 tbsp Kahlua.

Cara/method:
1. Membuat puding/ how to make pudding:
** Campur susu, krem kental, gula, jelly dan agar2. Masak sambil aduk hingga mendidih dgn api sedang. . Combine fresh milk, whipping cream, sugar, jelly and agar. Cook while stirring until boiling with medium heat.
** Campur kopi dgn 20 ml air panas hingga cair. Sisihkan. Combine coffee with 20 ml hot water until liquidfired. Set aside.
** Campur coklat dgn 40 ml air, aduk hingga bertekstur pasta. Sisihkan. Combine cocoa with 40 ml water, stirring until paste textured. Set aside.
** Adonan puding yg sdh mendidih bagi menjadi 3 bagian/separated into 3 part of pudding mixture:
-600 ml adonan puding di campur dgn pasta coklat. Aduk rata dan pastikan panasnya terjaga. Combine 600 ml pudding mixture with choco paste. Stir well and make sure heat is maintained.
-600 ml adonan puding campur dgn kopi. Pastikan panasnya terjaga. Combine 600 ml pudding mixture with coffee. Make sure heat is maintained.
-400 ml adonan puding, beri 1 sdm adonan kopi dan beri vanila, aduk hingga rata, pastikan panasnya terjaga. Combine 400 ml pudding mixture, add 1 tbsp coffee mixture and add vanilla, stir and make sure heat is maintained.
2. Cara membentuk lapisan/how to make the layer:
Basahkan loyang ukuran 20x15x20cm spy puding mudah lepas nantinya. Wash loaf pan size 20x15x20cm so pudding easily lose later.
Tuang adonan coklat, biarkan agak dingin tuang adonan vanila, bila sdh mulai dingin tuang adonan kopi dan lakukan terus selang seling hingga seluruh adonan habis. Simpan di lemari es 2 jam sebelum disajikan. Pour the choco mixture, let a little chill pour vanilla mixture, when it is cold start pour the coffee mixture and do continue to alternate hose until the mixture runs out. Store in the fridge 2 hours before serving.
3. Membuat saus Kahlua/How to make Kahlua Sauce:
Campur semua bahan saus kecuali Kahlua dan panaskan sambil diaduk, matikan api bila adonan meletup dan beri kahlua, aduk. Matikan api. Mix all sauce ingredients except kahlua and heat while stirring, turn off the heat when the mixture explodes. Turn off the fire and add kahlua, stir.
4. Sajikan puding dgn saus kahlua. Serve cold the pudding and add some kahlua sauce.

Blueberry Tiramisu

Bahan/ingredients:
300 gr blueberry segar. 300 gr fresh blueberry.
3 sdm gula putih. 3 tbsp granulated sugar.

400 ml whipping cream cair. 400 ml liquid whipping cream. (Greenfield)
250 gr mascarpone. 250 gr mascarpone. (Tatua)
50 gr cream cheese. 50 gr cream cheese. (Philadelphia)
75 gr gula halus. 7 gr caster sugar.
6 sdm kahlua. 6 tbsp kahlua.

16 btg kukis ladyfingers. 16 stalks ladyfingers cookies.
3 sdm kopi instan. 3 tbsp instant coffee.
4 sdm gula pasir. 4 tbsp granulated sugar.
300 ml air panas. 300 ml hot water.

Pelengkap/condiment:
Coklat bubuk secukupnya. Some cocoa powder.

Cara/method:
1. Campur kopi instan, gula pasir dan air panas, aduk dan sisihkan. combine instant coffee, granulated sugar and hot water, stir and set aside.
2. Campur blueberry segar dan gula putih, aduk dan panaskan hingga 80 C, gencet blueberry spy hancur, sisihkan. Combine fresh blueberry and granulated sugar, stir and heat for 80C, crush blueberry, set aside.
3. Kocok hingga lembut mascarpone dan cream cheese, simpan di lemari es. Beaten until soften mascarpone and cream cheese, refrigerate..
4. Kocok kecepatan tinggi whipping cream dan gula halus hingga mengembang dan kaku. Beat high-speed whipping cream and caster sugar until fluffy and stiff.
5. Campur whipping cream dan mascarpone, tambahkan kahlua, kocok hingga tercampur rata. Combine whipping cream and mascarpone, add kahlua, beat until mix well.
6. Cara menata tiramisu dlm wadah/how to set up tiramisu in container:
A.. Celupkan kukis ladyfingers ke dlm kopi hingga basah, angkat dan letakkan dlm wadah hingga seluruh dasar wadah tertutup. Dip the ladyfingers cookies into the coffee until wet, lift and place in the container until the bottom of the container is closed.
B, Taruh dan ratakan adonan tiramisu diatasnya, Place and flatten the tiramisu mixture on top of it,
C. Taruh selai blueberry diatasnya dan tutup lg dgn adonan tiramisu. Place blueberry jam on top and cover again with tiramisu mixture.
D. Tutup dengan kukis ladyfingers yg sudah di celup ke kopi. Taruh kembali sisa adonan tiramisu dan taburi coklat bubuk diatasnya, tutup wadah dan simpan 4 jam di kulkas sblm dikonsum. Cover with ladyfingers painted soaked in coffee. Put the remaining mixture of tiramisu and sprinkle chocolate powder on top, cover the container and store 4 hours in the refrigerator before consumed.

RUJAK KEDONDONG – ROJAK AMBARELLA FRUIT

Bahan/ingredients:
2 buah kedondong, serut. 2 pcs ambarella fruit, grated.
½ buah nanas, iris. ½ pcs pineapple, slice.

Bumbu/seasoning:
50 ml air asam (20gr asam + 50 ml air). 50 ml tamarind water (20gr tamarind + 50 ml water)
3 buah cabe rawit merah. 3 pcs red cayenne.
1 sdm bawang putih goreng. 1 tbsp fried garlic.
1 sdt terasi. 1 tsp belacan.
½ sdt garam. ½ tsp salt.
2 sdm gula merah. 2 tbsp brown sugar.

Pelengkap/condiment:
Tahu kuning rebus. Boiled yellow tofu.
Kacang tanah sangrai. Roasted peanut.
Krupuk favorite. Your choice crackers

Cara/method:
1. Haluskan cabe rawit, bawang putih goreng, garam, gula merah dan terasi. Ground cayenne, fried garlic, salt, brown sugar and belacan.
2. Campur bumbu halus dgn air asam. Combine ground seasoning with tamarind water.
3. Campur bumbu dgn bahan rujak. Combine seasoning with rojak ingredients.
4. Sajikan dgn tahu kuning, kacang tanah dan krupuk. Serving with yellow tofu, peanut and crackers.

Puding Roti – Bread Pudding

PUDING ROTI – BREAD PUDDING

Untuk 21 cup. For 21 cups.
Persiapan: 15 menit. Preparation: 15 minutes.

Bahan/ingredients:
200 gr roti tawar sobek2. 200 gr bread torn apart.
400 ml susu segar tawar. 400 ml fresh plain milk.
100ml krim kental. 100 ml heavy cream. (Elle & Vire)
100 gr gula pasir. 100 gr granulated sugar.
100 gr mentega tawar. 100 gr unsalted butter. (Anchor)
5 btr telur ayam kampung. 5 pcs farmer egg.
2 sdm rhum bakar. 2 tbsp baked rhum.
½ sdt garam. ½tsp salt.
½ sdt cinamon bubuk. ½ tap cinnamon powder.

Taburan/Topping:
100 gr kismis/cherry kering, rendam semalam dgn rum/kahlua secukupnya. Soak over nite raisin/dried cherry on rum/kahlua
Keju Quick melt parut secukupnya. Some grated Quick melt cheese. (Kraf)
Cinnamon bubuk. Cinnamon powder.

Cara/method:
1. Panaskan oven 170C. Siapkan wadah aluminium atau ramekin. Preheat oven 170C.. Prepare aluminium cup or ramekin.
2. Didihkan susu, krim kental dan mentega. Masukkan rhum saat sdh diangkat dr api dan aduk. Boiling milk, whipping cream and butter. Enter rhum when it is lifted from the fire and stir.
3. Kocok telur, gula, garam dan cinamon bubuk dgn whisk. Beaten egg, sugar, salt and cinnamon powder with whisk.
4. Tuangkan cairan susu ke adonan telur sambil diaduk rata. Pour batter milk into batter egg while stirring.
5. Letakkan sobekan roti dan kismis dlm wadah dan timbang 20gr. Add torned bread and raisin on dish for 20 gr.
6. Tuang perlahan adonan diatas roti. Taburi keju dan cinnamon. Gently pour batter on bread. Sprinkle grated cheese and cinnamon over the bread.
7. Oven selama 45 menit. Bake for 45 minutes.

Bahan/ingredients:
A. Jus Strawberry/strawberry juice:
200 gr strawberry segar, cincang kasar. 200 gr fresh strawberry, coarsely chop.
6 sdm madu asli. 6 tbsp pure honey. (Thepprasit)
1 sdm air lemon. 1 tbsp lemon juice.
100 ml air dingin. 100 ml cold water.

B. Adonan cream/cream mixture:
200 gr mascarpone. (Yummy)
400 gr whipping cream. (Greenfield)
50 gr cream cheese. (PHiladelphia)
50 gr gula halus (Sesuai selera). 50 gr castor sugar.(as your desire)
4 sdm kahlua (sesuai selera). 4 tbsp kahlua (as your desire)

Pelengkap/condiment:
20 buah kue ladyfingers. 20 pcs ladyfingers cookies.
200 gr strawberry, cuci dan potong kecil. 200 gr strawberry, wash and small cut.
Strawberry secukupnya utk hiasan. Some strawberry for garnish.
Coklat bubuk secukupnya utk taburan. Some cocoa powder for dusting.

Cara/method:
A. Membuat jus strawberry/to make strawberry juice:
1. Masukkan semua bahan jus ke dalam blender dan proses hingga lembut dan sisihkan. Add all juice ingredients into blender machine and process until smooth and set aside.
B. Membuat adonan cream/to make cream mixture:
1. Kocok whipping cream hingga kaku, sisihkan di lemari es. Beaten whipping cream until stiff, refrigerate..
2. Kocok mascarpone, cream cheese, kahlua dan gula halus hingga kaku, sisihkan. Beaten mascarpone, cream cheese, kahlua and castor sugar until stiff, set aside.
3. Campur rata whipping cream dan adonan mascarpone, simpan di lemari es. Mix well whipping cream mixture and mascarpone mixture, refrigerate.
6. Letakkan kue ladyfingers di dasar wadah. Siram dgn jus strawberry biarkan meresap. Place the ladyfingers cookies at the bottom of the container. Flush with strawberry juice let soak.
7. Masukkan adonan tiramisu setinggi 1 cm. Add tiramisu mixture as high as 1 cm.
8. Taburi potongan strawberry segar. Sprinkle fresh strawberries.
9. Masukkan lagi adonan tiramisu setinggi 1 cm. Add more tiramisu mixture as high as 1 cm.
10. Letakkan kue ladyfingers yg sdh direndam jus strawberry diatasnya. Place ladyfingers soaked with strawberry juice on top.
11. Tutup dgn sisa adonan tiramisu. Cover with the remaining tiramisu dough.
12. Taburi coklat bubuk pada permukaan. Dan hias dgn potongan strawberry. Dusting with cocoa powder on top. Garnish with strawberries.
13. Simpan di lemari es selama 4-5 jam sebelum di sajikan. Refrigerate for 4-5 hours before serving.

Bahan/ingredients:
1 kaleng rambutan. 1 can rambutans.
3 buah cabe rawit merah, iris tipis dan buang bijinya. 3 pcs red chili padi, finely slice and throw out the seeds.
10 buah kiamboi hitam kering. 10 pcs dried kiamboy.

30 ml air rambutan kaleng. 30 ml canned rambutans water.
¼ sdt garam. ¼ tsp salt.
20 lbr daun mint. 20 pcs mint leaves.
10 buah jeruk kasturi, belah 2. 10 pcs calamansi, cut on 2.

Cara/methods:
1. Belah rambutan menjadi 2. Cut on 2 the rambutans.
2. Belah dan peras jeruk kasturi. Cut and squeeze calamansi.
3. Taruh dalam mangkuk semua bahan dan aduk rata. Put on a bowl all ingredients and stir well.
4. Diamkan semalam di lemari es sebelum di konsum. Keep in refrigerator for a nite before consume.
5. Sajikan dingin. Serve cold.

Gunakan kiamboi hitam, spy air tdk menjadi keruh (kiamboi putih) atau kemerahan (kiamboi merah).
Use black kiamboy, so the water won’t be orange (white kiamboy) or red tinted (red kiamboy)
