LIWET KRECEK CEKER PEDAS

1. NASI LIWET
NASI LIWET – LIWET RICE
Bahan/ingredients:
2¼ cangkir beras, cuci. 2¼ cups rice.
2 cangkir air. 2 cups water.
50 ml santan kental. 50 ml coconut cream.
4 lbr daun salam. 4 pcs indonesia bay leaf.
1 btg sereh, geprek. 1 stalk lemongrass, crushed.
1 sdt garam. 1 tsp salt.
6 iris lengkuas. 6 slice galangal.

Cara/method:
Masukkan dan aduk semua bahan nasi ke dlm rice cooker. Add and stir all rice ingredients on rice cooker.

Ayam Gulung Kecap – Rolled Chicken Soy Sauce

AYAM GULUNG KECAP – ROLLED CHICKEN SOY SAUCE

Bahan/ingredients:
4 potong paha ayam tanpa kulit dan tulang. 4 pcs boneless and skinless chicken thight.
4 btr telur ayam kampung rebus. 4 pcs boiled farmer chicken egg.
700 ml air panas. 700 ml hot water.
4 siung bawang putih, cincang. 4 cloves garlic, chop.
1 sdm minyak wijen. 1 tbsp sesame oil.

Bumbu/seasoning:
6 buah pekak/bunga lawang. 6 pcs star anis.
1 sdt ngohiong. 1 tsp five spices.
2 sdm kecap manis. 2 tbsp sweet dark soy sauce.
1 sdm kecap jamur. 1 tbsp mushroom sauce.
2 sdm kecap asin. 2 tbsp soy sauce.
1 sdm arak beras. 1 tbsp rice wine.

Pelengkap/condiment:
Sayur sawi daging rebus secukupnya. Some boiled collards meat.

Sambal merah/red chili sauce:
2 sdm cabe merah halus, 5 buah rawit merah, 2 siung bawang putih cincang, 30 ml air panas, lada dan garam secukupnya. Didihkan: 2 tbsp ground red chili, 5 pcs red cayenne, 2 cloves chopped of garlic, 30ml hot water, some pepper and salt. Boiling.

Sambal bawang/onion sauce:
2 btg bawang daun, 1 iris jahe, garam secukupnya. 2 sdm minyak kelapa panas. Campur semua bahan. 2 stalks springbonion, 1 slice ginger, some salt, 2 tbsp hot coconut oil. Just combine

Cara/method:
1. Cuci ayam dan keringkan dgn tisu dapur, ambil 2 potong ayam, gulung dan ikat. Wash the chicken and dry with a kitchen towel, take 2 pieces of chicken, roll and tie.

2. Panaskan minyak wijen, tumis bwg putih, masukkan ayam gulung dan biarkan kecoklatan rata. Heat sesame oil, saute white bwg, put the chicken roll and let it flat brown.

3. Siramkan arak diatas ayam dan biarkan sebentar, masukkan semua bumbu dan air panas. Pour the wine over the chicken and leave for a while, put all the spices and hot water.
4. Masukkan telur rebus kupas, dan masak dgn api kecil hingga kecoklatan. Add boiled and peeled egg, and simmer until browny.

5. Sajikan dgn pelengkap seperti di foto. Serve with condiment.

Note:
Bisa disajikan dgn nasi, mie atau bihun. Can be serve with rice, noodle or vermiceli.

Shirataki Goreng – Fried Shirataki

SHIRATAKI GORENG – FRIED SHIRATAKI

Bahan/ingredients:
2 pak shirataki, tiriskan. 2 pack shirataki, strain.
100 gr daging babi/ayam/daging sapi, iris korek api. 100 gr pork/chicken/beef, julienne.
50 gr paprika kuning, potong korek api. 50 gr yellow bell pepper, julienne.
50 gr paprika merah, potong korek api. 50 gr red bell pepper, julienne.
50 gr wortel, potong korek api. 50 gr carrot, julienne.
4 batang daun bawang (bagian hijaunya saja), potong korek api. 4 stalks spring onion (green part only), julienne.
4 siung bawang putih, cincang. 4 cloves garlic, chop.
2 sdm minyak sayur dan ½ sdm minyak wijen. 2 tbsp veggie oil and ½ tbsp sesame oil.
30 ml air panas. 30 ml hot water.

Bumbu/seasoning:
2 sdt kecap raja rasa. 2 tsp raja rasa soy sauce.
1 sdm kecap asin. 1 tbsp soy sauce.
1 sdt kecap ikan. 1 tsp fish sauce.
½ sdm mirin. ½ tbsp mirin.
½ sdt lada bubuk. ½ tsp pepper powder.
Garam secukupnya.

Cara/method:
1. Panaskan minyak sayur dan minyak wijen, tumis bwg putih hingga harum. Heat veggie oil and sesame oil. Saute garlic until fragrant.
2. Masukkan babi/ayam/sapi dan aduk hingga berubah warna. Add pork/chicken/beef and stir until changing color.
3. Masukkan wortel dan air sedikit demi sedikit hingga wortel empuk. Add carrot and pour gradually hot water until carrot tender.
4. Masukkan paprika, shirataki dan bumbu aduk hingga air menyusut. Add bell pepper, shirataki and seasoning, stir until reduce the water.
5. Masukkan sebagian bawang daun, aduk dan pindahkan ke piring saji. Add some spring onion, stir and place on dish.
6. Taburi bawang daun sebelum disajikan. Sprinkle spring onion before serving.

BEBEK GORENG SAMBAL KEDONDONG – FRIED DUCK SAMBAL AMBARELLA

Bahan/ingredients:
1 ekor bebek cuci dan potong 8 bagian. Lumuri air jeruk nipis dan diamkan 30 menit. 1 duck, wash and cut 8 part. Marinate with lime and let’s stand for 30 minutes.
1 btg sereh keprak. 1 stalk lemongrass, crush.
2 cm lengkuas, keprak. 3 cm galangal, crush.
4 lbr daun jeruk. 4 pcs lime leaf.

Bumbu/seasoning:
12 buah bawang merah. 12 pcs shallot.
8 siung bawang putih. 8 cloves garlic.
2 btg serai, iris halus. 2 stalks lemongrass, finely slice.
4 lbr daun jeruk. 4 pcs lime leaf.
8 pcs kemiri. 8 pcs candlenut
½ sdm ketumbar. ½ tbsp coriander.
1 sdt merica. 1 tsp pepper
3 cm kunyit. 3 cm turmeric.
3 cm lengkuas. 3 cm galangal.
2 cm jahe. 2 cm ginger.
½ sdm gula merah. ½ tbsp brown sugar.

Sambal Kedondong/Sambal Ambarella:
1 buah kedondong, kupas dan parut kasar. 1 pcs ambarella, peel and roughly grated.
5 buah cabe rawit merah(sesuai selera). 5 pcs red cayenne.(as your desire)
3 buah bawang merah. 3 pcs shallot.
1 siung bawang putih. 1 clove garlic.
Garam secukupnya. Some salt.
1 sdt gula merah. 1 tap brown sugar.
½ sdt terasi bakar. ½ tsp roasted belacan.
1 sdm minyak panas. 1 tbsp hot oil.

Pelengkap/condiment:
Bumbu sangrai. Roasted spices.
Kemangi. Indonesia Basil.
Pete. Sticky bean.
Timun. Cucumber.
Nasi. Rice.
Kuah sisa rebusan. Remaining broth.

Cara/method:
1. Haluskan bumbu dan lumuri bebek inapkan semalam di kulkas. Ground the seasoning and marinade the duck, refrigerate for a nite.
2. Rebus bebek dgn sereh, lengkuas dan daun jeruk hingga bebek empuk dan air menyusut dgn api kecil. Boiling the duck with lemongrass, galangal and lime leaf until the duck tender and reduce the water.
3. Angkat bebek dan saring bumbunya, kemudian sangrai hingga bumbu kering. Lift up the duck and strain the seasoning, and then roasted the seasoning until dried.
4. Haluskan cabe rawit, bawang merah dan bawang putih, tambahkan gula merah, garam dan terasi, siram minyak panas, aduk, masukkan kedondong dan aduk rata. Ground cayenne, shallot and garlic, add brown sugar, salt ans belacan, pour hot oil, stir, add ambarella and stir well.
5. Panaskan minyak dan goreng bebek, sajikan bebek goreng dgn nasi yg disiram kaldu bebek dan pelengkap. Heat oil and frying the duck. Serving the duck with duck broth over the rice and condiment.

Note:
Aku tidak menggoreng bebek nya, tetapi aku memproses nya dgn AIR FRYER dgn suhu180C selama 15 menit. I didn’t fry the duck, but I processed with AIR FRYER with temperature 180C for 15 minutes.

NASI KARAAGE SAUS TELUR ASIN – KARAAGE IN SALTED EGG SAUCE RICE

Untuk sajian per porsi. For personal serving

Bahan/ingredients:
1 buah paha ayam probiotik tanpa tulang, potong kotak. 1 pcs boneless probiotik chicken thigh, cut cube.

Bumbu perendam/marinate:
1 siung bawang putih, haluskan. 1 cloves garlic, ground.
⅛ sdt garam, ⅛ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper powder.
⅛ sdt ngohiong bubuk. ⅛ tsp five spice powder.
½ sdm mirin. ½ tbsp mirin.
1 sdm sake. 1 tbsp sake.

Bahan saus/sauce ingredients:
1 butir kuning telur asin matang, haluskan. 1 pcs cooked salted egg yolk, mashed.
2 sdm mentega tawar. 2 tbsp unsalted butter. (Elle & Vire)

Bahan pencelup kering/dried dipping ingredients:
2 sdm tepung beras. 2 tbsp rice flour.
1 sdm tepung maizena. 1 tbsp corn starch.
¼ sdt garam. ¼ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper powder.

Pelengkap/condiment:
Semangkuk nasi panas. A bowl of hot rice.
Nori secukupnya. Some seaweed/nori.
Biji wijen secukupnya. Some sesame seed.
Acar jahe merah. Pickled red ginger. (gari in Japanese)
2 buah cabe rawit merah, iris. 2 pcs red cayanne, slice
Semangkuk miso sup. A bowl of miso soup.

Cara/Method:
1. Campur daging ayam dgn bumbu perendam dan diamkan di lemari es selama 2 jam. Marinate chicken and refrigerate for 2 hours.
2. Panaskan minyak dan campur bahan kering. Head oil and combine dried ingredients.
3. Campur daging ayam dgn bahan kering dan masukkan ke dalam minyak panas, goreng hingga kecoklatan dan tiriskan. Combine chicken with dried ingredients and enter into hot oil, frying until golden and strain.
4. Panaskan mentega, masukkan kuning telur asin, aduk hingga rata. Masukkan karaage dan aduk rata. Heat butter, add mashed salted egg, stirring. Add karaage and stir well.
5. Siapkan nasi panas dlm mangkuk saji, letakkan karaage saus telur asin diatasnya lalu taburi pelengkap seperti pada foto dan sajikan dgn miso sup. Prepare hot rice on a bowl, place karaage in salted egg sauce on rice, and then sprinkle with other condiment look like in photo and serving with miso soup.
