NASI KARAAGE SAUS TELUR ASIN – KARAAGE IN SALTED EGG SAUCE RICE

Untuk sajian per porsi. For personal serving

Bahan/ingredients:
1 buah paha ayam probiotik tanpa tulang, potong kotak. 1 pcs boneless probiotik chicken thigh, cut cube.

Bumbu perendam/marinate:
1 siung bawang putih, haluskan. 1 cloves garlic, ground.
⅛ sdt garam, ⅛ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper powder.
⅛ sdt ngohiong bubuk. ⅛ tsp five spice powder.
½ sdm mirin. ½ tbsp mirin.
1 sdm sake. 1 tbsp sake.

Bahan saus/sauce ingredients:
1 butir kuning telur asin matang, haluskan. 1 pcs cooked salted egg yolk, mashed.
2 sdm mentega tawar. 2 tbsp unsalted butter. (Elle & Vire)

Bahan pencelup kering/dried dipping ingredients:
2 sdm tepung beras. 2 tbsp rice flour.
1 sdm tepung maizena. 1 tbsp corn starch.
¼ sdt garam. ¼ tsp salt.
⅛ sdt lada bubuk. ⅛ tsp pepper powder.

Pelengkap/condiment:
Semangkuk nasi panas. A bowl of hot rice.
Nori secukupnya. Some seaweed/nori.
Biji wijen secukupnya. Some sesame seed.
Acar jahe merah. Pickled red ginger. (gari in Japanese)
2 buah cabe rawit merah, iris. 2 pcs red cayanne, slice
Semangkuk miso sup. A bowl of miso soup.

Cara/Method:
1. Campur daging ayam dgn bumbu perendam dan diamkan di lemari es selama 2 jam. Marinate chicken and refrigerate for 2 hours.
2. Panaskan minyak dan campur bahan kering. Head oil and combine dried ingredients.
3. Campur daging ayam dgn bahan kering dan masukkan ke dalam minyak panas, goreng hingga kecoklatan dan tiriskan. Combine chicken with dried ingredients and enter into hot oil, frying until golden and strain.
4. Panaskan mentega, masukkan kuning telur asin, aduk hingga rata. Masukkan karaage dan aduk rata. Heat butter, add mashed salted egg, stirring. Add karaage and stir well.
5. Siapkan nasi panas dlm mangkuk saji, letakkan karaage saus telur asin diatasnya lalu taburi pelengkap seperti pada foto dan sajikan dgn miso sup. Prepare hot rice on a bowl, place karaage in salted egg sauce on rice, and then sprinkle with other condiment look like in photo and serving with miso soup.

Bubur Tinutuan Manado – Manadonese Tinutuan Porridge


BUBUR TINUTUAN MANADO – MANADONESE TINUTUAN PORRIDGE

Bahan/ingredients:
100 gr beras, rendam selama 30 menit, cuci bersih, tiriskan. 100 gr rice, soak for 30 minutes, wash, strain.
100 gr jagung manis pipil/kalengan. 100 gr corn seed/corn can.
150 gr ubi jalar kuning, kupas, potong2 kecil. 150 gr sweet potato, peel and cut on small dice.
150 gr labu kuning mentega, kupas, potong dadu kecil. 150 gr butter pumpkin, peel and cut on small dice.
100 gr daun kangkung/bayam/gedi. 100 gr water kale/spinach/gedi leaves.
20 gr daun kemangi. 20 gr thai basil.
1 batang serai, ambil bagian putih, memarkan. 1 stalk lemongrass, crust.
1 cm jahe, memarkan. 1 cm ginger, crust.
Garam dan lada secukupnya. Some salt and pepper to taste.
500 ml air. 500 ml water
1000 ml kaldu ayam. 1000 ml chicken broth.
2 siung bwg putih parut. 2 cloves garlic, grated.

Sambal Roa/Roa chili Sauce:
4 buah bwg merah. 4 pcs shallot.
2 buah cabe merah besar, buang biji. 2 pcs red big chili, seed less.
10 buah rawit merah. 10 pcs chilipadi.
2 sdm ikan roa bubuk. 2 tbsp powdered roa fish.
3 sdm minyak utk menumis. 3 tbsp for saute

Pelengkap/complimentary:
Ikan asin goreng. Fried salted fish.

Cara/methods:
1. Didihkan air dan kaldu, masukkan jahe, sere, bwg putih, beras, jagung, ubi, labu, aduk hingga matang (aku masak terpisah ubi dan labu). Boiling water and broth, add ginger, lemongrass, garlic, rice, corn, sweet potato pumpkin, stir until well cook.( 8 its separately the sweet potato and pumpkin)
2. Masukkan kangkung/bayam dan kemangi sebelum disajikan, aduk rata, masukkan garam dan lada, aduk. Add water kale/spinach and thai basil before served, stir well add salt and pepper, stir.
3. Campur dan haluskan semua bahan sambal tomat. Tumis. Mix and ground all Sambal tomato, saute.
4. Campur dan halukan bahan sambal roa, tumis hingga harum
Mix and ground the sambal roa ingredients, saute until fragrant.
4. Sajikan didalam mangkuk bersama ikan asin dan sambal. Served on bowl with salty fish and sambal

Buntut Goreng Sambal Bongkot – Fried Oxtail with Sambal Torch Ginger

BUNTUT PENYET SAMBAL BONGKOT – PRESSED OXTAIL with SAMBAL TORCH GINGER

Bahan/Ingredient:
1000 gr buntut sapi. 1000 gr Oxtail
3 btg seledri (tanpa daunnya). 3 stem of celery, without leaves
2000 ml air panas. 2000 ml hot water.

Rempah utuh/whole herbs:
3 cm kayu manis. 3 cm cinnamon
4 bunga cengkeh. 4 cloves
½ sdm lada hitam. ½ tbsp black pepper
1 buah pala, keprak. 1 pcs nutmeg, crush.
2 sdt garam (sesuai selera). 2 tsp salt (to taste)
2 cm jahe, keprak. 2 cm ginger, crust
1 bongkah utuh bwg putih. A bulb of garlic
2 cm kencur. 2 cm aromatic ginger
6 buah kapulaga. 6 pcs cardamon

Pelapis/coating:
2 btr telur kocok lepas. 2 pcs beaten eggs
5 sdm tepung beras. 5 tbsp rice starch.
2 sdm tepung maizena. 2 tbsp cornstarch.
Garam dan lada secukupnya. Some salt and pepper.

Pelengkap/condiment:
Nasi. Rice.
Lalapan. Raw veggie.
Sup. Soup.
Bawang putih goreng. Fried garlic.
Tahu goreng. Fried tofu.

Sambal bongkot/Sambal Torch Ginger:
2 btg bongkot/kecombrang organic, iris halus bagian yg putih saja. 2 stalk organic torch ginger, finely slice the white part.
10 buah cabe rawit merah organic. 10 pcs organic red chili padi.
8 buah bawang merah, goreng ½ matang. 8 pcs shallot, fried half cook.
3 siung bawang putih, goreng ½ matang. 3 cloves garlic, fried half cook.
¼ sdt garam laut. ¼ tsp sea salt.
3 buah jeruk limau. 3 pcs lime.
¼ sdt terasi bakar. ¼ tsp roasted shrimp paste.

Cara/Method:
1. Rebus buntut 10 menit, buang airnya, didihkan air lagi, masukkan buntut bersama bumbu yg sdh dimasukkan dlm kantung bumbu kecuali garam, masak hingga empuk. Boil water, add oxtail for 10 minutes, pour out the water. Boil water add oxtail and enter the whole seasoning that has been put into the spice pouch, boil until oxtail tender.
2. Campur tepung beras, maizena, garam dan lada. Combine rice starch, corn starch, salt and pepper.
3. Panaskan minyak. Celupkan buntut pada kocokan telur dan gulingkan pada bahan tepung dan masukkan serta goreng buntut hingga kecoklatan (aku hr ini tanpa telur). Preheat oil, dipping oxtail into beaten egg and roll it into mixed flour, add oxtail into hot oil and fried until golden. (Today I don’t use the egg)
4. Haluskan semua bahan sambal. Ground all sambal ingredients.
5. Sajikan buntut goreng dgn cara memenyet nya diatas sambal bongkot dan pelengkapi. Serving fried oxtail with pressed on sambal torch ginger and condiment.

NASI GORENG MERAH PEDAS DGN ACAR PELANGI r 🌈 – SPICY RED FRIED RICE WITH RAINBOW 🌈 PICKLE

Utk 4 orang. For 4 pax

Bahan/ingredients:
4 porsi nasi putih. 4 portion white rice.
2 btr telur bebek tawar, kocok lepas. 2 pcs unsalted duch egg, beaten.
350 gr daging ayam potong kotak kecil. 250 gr chicken, cut small cube.
50 gr petai, belah. 50 gr sticky bean, seperated.
4 btg daun bwg kecil, iris. 4 stalks scallion, slice.
2 butir bwg merah, cincang. 2 pcs shallot, chopped.
4 siung bwg putih, cincang. 4 cloves garlic chopped.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for sauté.
½ sdm minyak wijen. ½ tbsp sesame oil.
½ sdm arak shao shing. ½ tbsp shao shing wine.
Garam laut secukupnya. Some sea salt.
4 sdm saus tomat makasar. 4 tbsp makasar’s tomato sauce. (Sumber Jaya)

1 sdm saus sambal makasar. 1 tbsp Makasar’s chili sauce. (Sumber Jaya)

Krupuk. Crackers.
12 ekor udang rebus tanpa kulit. 12 pcs skinless boiled shrimp

Acar pelangi/rainbow pickle:
1 buah timun. 1 pcs cucumber 🥒
½ buah wortel. ½ pcs carrot 🥕
¼ buah nanas madu. ¼ pcs pineapple 🍍
6 buah bawang merah. 6 pcs shallot.
30 gr acar timun merah jepang. 30 gr japanese red cucumber pickle.
5 buah cabe rawit merah buang biji. 5 pcs seedless red chili 🌶 padi.
10 lbr daun mint, remas. 10 pcs mint leaf 🍃, squeeze.
2 sdt gula pasir. 2 tsp granulated sugar.
Sejumput garam laut. A pinch of sea salt.
2 sdm air lemon. 2 tbsp lemon 🍋 juice.

Cara/method:
1. Panaskan minyak, masukkan bwg merah dan bwg putih cincang, tumis hingga harum, masukkan daging ayam dan arak, tumis hingga ayam berubah warna. Heat veggie oil, add chopped shallot and garlic, sauté until fragrant, add chicken and wine, sauté until the chicken changing color.
2. Masukkan telur dan aduk, masukkan nasi dan pete, aduk rata. Add egg and stir, add rice and Sticky bean, stir well.
3. Masukkan saus tomat dan saus sambal, aduk rata. Masukkan garam dan bawang daun, aduk rata. Add tomato sauce and chili sauce, stir well. Add salt and scallion, stir well.
4. Potong kecil semua bahan acar dan campur dgn gula, air lemon dan garam. Small cut or pickle ingredients and combine with sugar, lemon juice and salt.
5. Sajikan panas dlm piring saji dgn acar pelangi, udang rebus dan krupuk. Serve hot on dish with rainbow pickle, boiled shrimp and crakers.

Tumis Sancam Dgn Bawang & Kecap Asin – Sauteed Pork Belly With Onion& Soy Sauce


TUMIS SANCAM DGN BAWANG & KECAP ASIN – SAUTEED PORK BELLY WITH ONION & SOY SAUCE

Utk sajian perporsi. For single serving.

Bahan/ingredients:
6 iris tipis babi sancam. 6 pcs finely slice pork belly.
40 gr bawang bombay, iris. 40 gr onion, slice.
½ sdm minyak wijen.

Bumbu/seasoning:
½ sdm kecap kikkoman. ½ tbsp kikkoman soy sauce.
20 ml air panas. 20 ml hot water.
½ sdm mirin. ½ tbsp mirin.

Pelengkap/condiment:
Acar jahe merah secukupnya. Some red preserved ginger. (Japanese: GARI)
1 btg bawang daun iris memanjang halus. 1 stalk spring onion, finely julienned spring onion.
Biji wijen sangrai secukupnya. Some roasted sesame seed.
Sup miso. Miso soup

Cara/method:
1. Siapkan nasi dlm mangkuk saji. Prepare rice on a bowl.
2. Campur bahan bumbu dlm mangkuk kecil. Combine seasoning on small bowl.
3. Panaskan minyak wijen. Masukkan bawang bombay tumis sebentar, masukkan bumbu, masukkan daging babi dan balikkan daging babi hingga matang rata (berubah warna). (Seperti video dibawah ini). Heat sesame oil. Add the stir-fry onions for a while, add the spices, add the pork and turn the pork until done(changing color). (Like the video below).

4. Letakkan bawang bombay diatas nasi, daging babi, beri bawang daun dan jahe merah dan taburi biji wijen. Put onions over the rice, pork, put onion and red ginger and sprinkle sesame seeds.
5. Sajikan bersama sup miso. Serve with miso soup.

Note:
Daging babi bisa diganti dgn daging sapi. Pork can be change with beef
.

Toge Goreng – Fried Bean Sprout


Toge Goreng adalah makanan khas dr Betawi (DKI Jakarta) juga Bogor. Toge Goreng Betawi is the authentic dish of Betawi (DKI Jakarta) and Bogor.

TOGE GORENG – FRIED BEANSPROUT

Bahan/ingredients:
300gr toge. 300 gr beansprout.
100 gr mie. 100 gr noodle.
5 buah tahu kuning goreng. 5 pcs yellow tofu.

Pelengkap/condiment:
Kucai, chives.
Bawang daun. Scallion.
Bawang merah goreng. Fried shallot.
Krupuk. Crackers
Lontong(pilihan). Rice cake (optional)

Bahan saus oncom/oncom sauce ingredients:
60 gr taoco, haluskan. 60 gr fermented soya bean, ground.
150 gr oncom, hancurkan kasar. 150 gr oncom, coarsely ground.

2 sdt gula merah. 2 tsp brown sugar.
2 cm lengkuas, keprak. 2 cm galangal, crush.
4 lbr daun salam. 4 pcs indonesia bayleaf.
1 buah tomat. Potong kecil2. 1 pcs tomato. Small cut.
6 buah jeruk limau. 6 pcs lime.
500 ml air panas. 500 ml hot water.
3 sdm minyak sayur utk menumis. 3 tbsp veggie oil for saute.
2 sdm kecap manis. 2 tbsp dark sweet soy sauce.
½ sdt garam. ½ tap salt.
2 btg bawang daun, iris halus. 2 stalks scallion, finley slice.

Bahan bumbu yang dhaluskan :
5 buah cabe rawit merah (sesuai selera). 5 pcs red chili padi (as your desire)
20 gr cabe merah halus. 20 gr ground red chili.
4 siung bawang putih. 4 cloves garlic.
8 buah bwg merah. 8 pcs shallot

Cara/method:
1. Goreng ½ matang bawang merah, bawang putih dan cabe rawit. Haluskan dan tumis bersama cabe merah halus, lengkuas, daun salam dan taoco.. Half fried shallot, garlic and chili padi. Ground and saute with ground red chili, galangal, indonesia bayleaf and fermented beansprout.
2. Masukkan tomat, aduk 1 menit dan masukkan bahan saus oncom yg lain, aduk hingga mengental (kecuali air jeruk limau terakhir masuk). Add tomato and stir for 1 minute and add other oncom sauce ingredients, stir until thickener. (Except lime juice at last)

3. Masak ½ matang toge, mie, irisan tahu, bawang daun dan kucai dgn sedikit air. Half cooked bean sprout with noodle, scallion and chive with some water.
4. Penyajian/how to serve:
Letakkan lontong diatas piring saji.
Angkat toge dan letakkan di atas lontong tanpa air. Dan siram dgn saus oncom, taburi kucai dan bawang goreng. Place sone rice cake on dish. Lift up bean sprout and place over rice cake with out the water. Pour oncom sauce over the bean sprout and sprinkle with chives, fried shallot and crackers.
