1 bgks mie hokkien segar. 1 pcs fresh hokkien noodle.
Toge secukupnya. Some bean sprout.
Sawi hijau secukupnya. Some mustard green.
Air panas atau kaldu ayam secukupnya. Some hot water or chicken stock.
Bumbu dasar mie kluntung secukupnya. Some Mie Kluntung Spices.

Pelengkap/condiment:
Ayam goreng secukupnya, di suwir. Some fried chicken, shredded. .
Telur rebus secukupnya. Some boiled egg.
Bawang merah goreng secukupnya. Some fried shallot.
Cabe putih secukupnya. Some white chili.

Cara/method:
1. Masak persaji/how to cook per portion:
Panaskan 2 sdm bumbu mie kluntung, masukkan batang sawi hijau secukupnya, masukkan 70 gr mie dan 200 ml air/kaldu ayam, masak hingga mie cukup lembek, masukkan toge dan daun sawi hijau. Heat 2 tbsp mie kluntung spices. Add some stem of mustard green, add 70 gr noodle and 200 water/chicken stock, cook until the noodles are soft, add bean sprout and mustard green leaves.
2. Masak hingga mendidih dan pindahkan ke piring saji.
3. Beri pelengkap dan siap disajikan panas.

UDON GORENG PASTRAMI – FRIED UDON PASTRAMI

Bahan/ingredients:
1 bungkus udon. 1 pack udon.
10 gr paprika merah, iris korek api. 10 gr red bell pepper, julienne.
10 gr paprika kuning, iris korek api. 10 gr yellow bell pepper, julienne.
8 lbr pastrami, iris. 8 pcs pastrami, slice.
1 siung bawang putih, cincang. 1 cloves garlic, chop.
Daun ketumbar secukupnya. Some cilantro.
2 sdt minyak sayur dan 1 sdt minyak wijen. 2 tsp veggie oil and 1 tsp sesame oil.

Bumbu/seasoning:
Garam dan lada secukupnya. Some salt and pepper.
1 sdt kikkoman. 1 tsp kikkoman.
1 sdt mirin. 1 tsp mirin.

Cara/methods:
1. Panaskan minyak, tumis bawang putih hingga harum. Heat oil, saute garlic until fragrant.
2. Masukkan pastrami, aduk hingga harum. Add pastrami, stir until fragrant.
3. Masukkan paprika, aduk hingga harum. Add bell pepper, stir until fragrant.
4. Masukkan udon dan bumbu, aduk rata. Add udon and seasoning, stir well.
5. Sajikan di piring saji dan beri daun ketumbar. Serving on dish and add cilantro on top.

KWETIAU GORENG XO – XO FRIED CHAR KWETIAU

Bahan/ingredients:
500 gr kwetiau. 500 gr char kwetiau.
100 gr toge. 100 gr bean sprout.
4 btg sawi hijau, potong2 cm. 4 stalks mustard green, cut 2 cm.
100 gr fish cake, iris. 100 gr fish cake, slide.
10 ekor udang tanpa kulit. 10 pcs skinless shrimp.
2 butir telur ayam kocok. 2 tbsp beaten farmer egg.
4 sdm saus XO. 4 tbsp XO sauce.
50 ml air panas. 50 ml hot water.
Garam secukupnya. Some salt.
3 siung bawang putih cincang. 3 cloves chopped garlic.
2 sdm minyak sayur. 2 tbsp veggie oil.
1 sdm minyak wijen. 1 tbsp sesame oil.

Cara/method:
1. Panaskan minyak sayur dan minyak wijen. Heat veggie oil and sesame oil.
2. Masukkan bwg putih cincang tumis hingga harum. Add chopped garlic and saute until fragrant.
3. Masukkan udang dan fish cake, aduk, masukkan sauce XO, batang sawi hijau, aduk dan sisihkan di tepi wajan. Add shrimp and fish cake, stir, add XO sauce, mustard green stem, stir and set aside on wok.
4. Masukkan telur kocok, diamkan sesaat aduk. Add beaten egg, let it awhile and stir.
5. Masukkan kwetiau, daun sawi, toge dan air, aduk. Tes rasa bisa tambahkan garam secukupnya. Add char kwetiau, mustard green leaves, bean sprout and water, stir. Tast the taste, if not enough salt, put some salt, stir.

Bahan/ingredients:
200 gr bihun kering, rendam air. 200 gr dried vermicelli. (AA Brand)
50 gr kol, iris. 50 gr cabbage, slice.
50 gr wortel serut. 50 gr grated carrot.
Seledri, iris. Celery, slice.
2 sdm minyak sayur. 2 tbsp veggie oil.
50 ml air panss. 50 ml hot water.
2 sdm bawang merah goreng utk taburan. 2 tbsp fried shallot for topping

Bumbu/seasoning:
4 buah bawang merah. 4 pcs shallot.
3 siung bawang putih. 3 cloves garlic.
Garam dan lada secukupnya. Some salt and pepper.
2 sdt kecap ikan. 2 tsp fish sauce.

Cara/method:
1. Haluskan bawang merah dan bawang putih. Ground shallot and garlic.
2. Panaskan minyak dan tumis bumbu hingga harum. Heat oil and saute seasoning until fragrant.
3. Masukkan wortel dan kol tumis 1 menit. Add carrot and cabbage, saute for 1 minute.
4. Masukkan bihun, seledri, tambahkan air dan aduk hingga rata. Dan coba rasa. Add vermicelli, celery, water and stir. Tester.
5. Taburi bawang goreng. Sprinkle fried shallot.

MIE GORENG MANDALA – MANDALA’S FRIED NOODLE

Bahan/Ingrdients:
200 gr mie hokkian. 200 gr hokkian noodle. (KIng Noodle Brand)
300 gr sawi hijau, potong 2 cm dan cuci. 300 gr green mustard, cut 2 cm and wash.
4 siung bawang putih, cincang. 4 cloves garlic, chop.
8 btr bakso daging, iris. 8 pcs meatball, slice.
2 btr telur kocok lepas. 2 pcs beaten egg.
2 sdm minyak sayur. 2 tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.
Air panas secukupnya. Some hot water.

Bumbu/seasoning:
1 sdm kecap manis. 1 tbsp dark sweet soy sauce.
½ sdm kecap cap jamur. ½ tbsp mushroom soy sauce.
½ sdm kecap ikan. ½ tbsp fish sauce.
½ sdt lada bubuk. ½ tsp pepper powder.
1 sdm arak shao shing (bisa ditiadakan). 1 tbsp shao shing wine. (Can be skip)

Cara/method:
1. Panaskan 1 sdm minyak sayur dan minyak wijen, masukkan bawang putih, tumis hingga harum. Heat 1 tbsp veggie oil and sesame oil, add chopped garlic and saute until fragrant.
2. Masukkan bakso dan batang sawi hijau, aduk 1 menit, masukkan arak shao shing. Aduk rada add meatball and stem of green mustard, stir for 1 minutes, add shao shing wine and stir.
3. Sisihkan masakan di tepi penggorengan, tuang 1 sdm minyak tunggu hingga panas, masukkan telur kocok diamkan sebentar dan aduk dgn bahan lain. Set aside the dish on the edge of the frying pan, pour 1 tbsp of oil wait until hot, add the egg shake let sit briefly and stir with other ingredients.
4. Masukkan mie, bumbu, daun sawi dan air, aduk hingga rata. Add noodle, seasoning, green mustard leaves and water, stir well.
5. Sajikan panas dgn acar cabe. Serve hot with preserved chili.

Mie🍜Daging Sengkel Sapi ala Taiwan -Taiwanese Beef Shank Noodle🍜

Bahan/ingredients:
1000gr sengkel/kisi sapi. 1000gr boneless beef shank.
1 btg besar daun bawang, potong 4cm, ikat. 1 stalk spring onion, cut 8cm, bind it.
1 bongkah bawang putih. A bulb of garlic
2000 ml air panas. 2000 ml hot water.

Bumbu utuh/whole spices:
2 cm jahe segar. 2 cm fresh ginger root.
1 sdt lada sichuan. 1 tsp sichuan peppercorn.
1 sdt lada hitam. 1 tsp black pepper corn.
3 lbr kulit jeruk mandarin kering. 3 pcs dried orange mandarin skin.
4 buah pekak. 4 pcs star anise.

Saus/seasoning:
20 ml arak shao shing. 20 ml shao shing wine.
40 ml kecap asin light. 40 ml light soy sauce.
10 ml kecap raja rasa. 10 ml raja rasa soy sauce
5 ml kecap asin gelap. 5 ml dark soy sauce. (Mushroom sauce)
1 sdt garam. 1 tsp salt.

Pelengkap/condiment:
Mie rebus. Boiled noodle.
Sayur rebus. Boiled veggie
Sambal:
1 sdm cabe merah besar halus , 1 tbsp ground red chili.
5 buah cabe rawit merah,hancurkan kasar. 5 pcs red chili padi, coarse ground
3 siung bawang putih, cincang halus. 3 cloves garlic, finely chop.
1 sdm ebi kering, sangrai dan haluskan. 1 tbsp dried shrimp, roasted and ground.
Garam dan gula secukupnya. Some salt and sugar.

Cara/method:
1. Didihkan air. Heat water.
2. Masukkan bumbu utuh ke dlm kantung bumbu. Put whole seasoning into the spice pouch.
3. Letakkan daging, kantung bumbu, bwg putih, bwg daun ikat ke dalam slow cooker. Place beef. Spice pouch, a bulb of garlic and a bind of spring onion on slow cooker pot.
4. Tuangkan air panas ke slow cooker dan setting di high. Pour hot water into slow cooker and setting high.
5. Setelah 1 jam proses masukkan saus, dan lanjutkan proses hingga daging empuk. After 1 hour process, add the seasoning and process until the beef tender.
6. Angkat daging dan potong sesuai selera dan masukkan lg ke dlm sup. Lift up the beef and cut as your desire, and add into the soup again.
7. Tumis bahan sambal hingga wangi. Saute sambal ingredients until fragrant.
8. Sajikan bersama pelengkap. Serve with condiment.

Bahan/ingredients:
20 butir bakso sapi, iris. 20 pcs beef meatball, slice.
300 gr mie basah, rebus dan tiriskan. 300 gr fresh noodle, boiling and strain.
1 ikat sawi hijau, cuci dan potong 2 cm. A bundle of green mustard, wash and cut 2 cm.
2 btr telur bebek, kocok. 2 pcs duck egg, beat.
3 sdm minyak sayur. 3 tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.
4 siung bawang putih, cincang. 4 cloves garlic, chop.

Bumbu/seasoning:
1 sdm kecap asin. 1 tbsp soy sauce.
½ sdm kecap ikan. ½ tbsp fish sauce.
½ sdm kecap raja rasa. ½ tbsp raja rasa soy sauce.
½ sdm kecap cap jamur. ½ tbsp mushroom soy sauce.
1 sdm kecap manis. 1 tbsp dark sweet soy sauce.
½ sdt lada bubuk. ½ tsp powdered pepper.

Cara/method:
1. Panaskan minyak sayur dan minyak wijen, masukkan bwg putih, tumis hingga harum. Heat veggie oil and sesame oil, add garlic, saute until fragrant.
2. Masukkan bakso dan batang sawi, tumis 1 menit. Masukkan telur kocok diamkan sebentar dan aduk. Add meatball and green mustard stem, saute for a minute. Add beaten egg, let stand for a while and stirring.
3. Masukkan mie, daun sawi dan bumbu, aduk rata. Add noodle, green mustard leaves and seasoning, stir well.
4. Sajikan panas dgn acar cabe. Serve hot with chili preserved.
