Mie Lethek – Lethek Noodle


MIE LETHEK – LETHEK NOODLE

Untuk 1 porsi. For 1 portion.

Bahan/ingredients:
50 gr mie lethek kering. rendam air selama 10 menit dan tiriskan. 50 gr dried lethek noodle, soak for 10 minutes and drain.

6 ekor udang kupas rebus. 6 pcs boiled skinless shrimp.
1 butir telur ayam kampung, kocok lepas. 1 pcs beaten farmer egg.
½ buah tomat merah segar, iris. ½ pcs fresh red tomato, slice.
100 ml hot chicken broth/hot water.
1 sdm minyak olive. 1 tbsp olive oil.
1 sdm bumbu mie kluntung. 1 tbsp javanese noodle spice

Cara/method:
1. Panaskan minyak, masukkan telur, diamkan 30 detik dan aduk, masukkan bumbu mie, udang rebus dan tomat, aduk, tuangkan kaldu ayam biarkan mendidih. Heat the oil, put the egg in, let stand 30 seconds and stir, add the noodle spices, boiled shrimp and tomatoes, stir, pour the chicken stock to boil.
2. Masukkan mie lethek dan aduk perlahan selama 1 menit. Add lethek noodle and gently stir for 1 minutes.

Shirataki Godog Jogja – Jogja Shirataki Soup


SHIRATAKI GODOG JOGJA – JOGJA SHIRATAKI SOUP

Untuk 1 porsi. For 1 portion.

Bahan/ingredients:
1 bgks shirataki, tiriskan. 1 pack shirataki, drain.
4 batang sayur sawi hijau, cuci dan potong. 4 stalk mustard green, wash and cut.
1 paha ayam goreng kuning, iris. 1 fried yellow fried chicken, slice.
1 telur ayam kampung rebus sesuai selera. 1 farmer egg boil to taste.
2 buah tomat cherry, belah 4. 2 pcs cherry tomato, cut on 4.
3 buah cabe rawit merah, iris. 3 pcs of red cayenne pepper, slice.
300 ml air panas/kaldu panas. 300 ml hot water/hot broth.
1 sdm mentega. 1 tbsp butter. (anchor)

Bumbu halus/ground spices:
3 buah bawang merah. 3 pcs shallot.
1 siung bawang putih. 1 clove of garlic.
3 butir kemiri. 3 pcs candlenut.
½ sdm ebi sangrai. ½ tbsp roasted dried shrimp.
½ sdt garam. ½ tsp salt.

Pelengkap/condiment:
Seledri. Celery.
Bawang merah goreng. Fried shallot.

Cara/method:
1. Panaskan mentega, tumis bumbu halus hingga harum. Tuang air panas/kaldu panas dan didihkan. Heat butter, saute ground spices until fragrant. Pour hot water/hot broth and boiling.
2. Masukkan batang sawi, ayam dan tomat, aduk. Add stem of mustard green, chicken and tomato, stir.
3. Masukkan daun sawi dan cabe, aduk. Add mustard green leaf and cayenne pepper, stir.
4. Masukkan shirataki dan aduk cukup 1 menit. Add shirataki and stir for 1 minute.
5. Sajikan panas diatas piring saji, beri telur dan taburi pelengkap. Serving hot on dish, add egg and sprinkle with condiment.

Note:
Shirataki boleh diganti mie telur, bihun, kwetiau sesuai selera. Shirataki can be changing to egg noodle, vermicelli, rice noodle as your desire.

MIE KUAH TAREMPA – TAREMPA NOODLE SOUP

Bahan/ingredients:
50 gr mie telur pipih kering, rebus dan tiriskan. 50 gr dried flatten egg noodle, boiling and drain.
4 ekor udang segar tanpa kulit dan rebus. 4 pcs skinless shrimp and boiling.
3 butir bakso ikan, iris. 3 pcs fish cake, slice.
50 gr tauge. 50 gr bean sprout.
4 batang kucai, potong 2 cm. 4 stalks chive, cut 2 cm.
2 buah cabai rawit merah. Haluskan (sesuai selera). 2 pcs red cayenne, ground (as your desire).
2 sdt cabai merah halus. 2 tap ground red chili.
1 telur ayam kampung. 1 farmer egg.
3 siung bawang putih, haluskan. 3 cloves garlic, chop, ground.
2 buah bawang merah, haluskan. 2 pcs shallot, ground.
150 air panas/kaldu panas. 150 ml jot water/hot broth.

Bumbu/seasoning:
1 sdm kecap manis. 1 tbsp dark sweet soy sauce.
½ sdm kecap cap jamur. ½ tbsp mushroom soy sauce.
2 sdm kecap asin. 1 tbsp soy sauce
2 sdm minyak sayur, untuk menumis. 2 tbsp veggie oil, for saute.

Taburan/topping:
Bawang goreng secukupnya. some fried shallot.
Acar cabe. Pickled chili.

Cara/method:
1. Panaskan minyak, tumis bwg putih, bawang merah dan cabe hingga harum. Heat oil, saute garlic, shallot and chili until fragrant.
2. Masukkan bakso ikan, udang, mie dan bumbu, tambahkan air, aduk. Add fish ball, shrimp, noodle and seasoning, add water, stir.
3. Masukkan toge, aduk 30 detik, masukkan kucai, aduk dan sajikan diatas piring saji.add bean sprout, stir for 30 second, add chives, stir and place on dish.
4. Taburi bawang goreng sebelum disajikan. Sprinkle with fried shallot, before serving.

LO MEE HOKKIEN

Utk 6 porsi. For 6 portion.

Bahan/ingredients:
200 gr daging ayam/babi, iris memanjang. 200 gr chicken/pork, julienned.
200 gr bakso ikan kotak, iris memanjang. 200 gr fish cake, julienned.
10 buah jamur shiitake, rendam air panas dan iris tipis. 10 pcs shiitake mushroom, soak on hot water and finely slice.
200 gr sawi putih, iris. 200 gr chinese cabbage, slice.
100 gr wortel, iris memanjang. 100 gr carrot, julienned.
50 gr ebi, rendam air panas. 50 gr dried shrimp, soak on hot water.
2 btr telur ayam kampung kocok. 2 pcs beaten egg.
5 siung bawang putih, cincang, 5 cloves chopped garlic.
2 sdm minyak babi/minyak sayur. 2 tbsp lard/veggie oil.
1500 ml kaldu panas. 1500 ml hot stock.

Bumbu/seasoning:
3 sdm kecap asin. 3 tbsp soy sauce.
2 sdm kecap raja rasa. 2 tbsp raja rasa soy sauce.
1 sdm arak shao shing. 1 tbsp shao shing wine.
¾ sdt lada hitam kasar. ¾ tsp coarse black pepper.
½ sdm minyak wijen. ½ tbsp sesame oil.
2 sdm saus tiram. 2 tbsp oyster sauce.
5 sdm tepung tapioka + 50 ml air utk pengental. 5 tbsp tapioca + 50 ml water for thickener.

Pelengkap/condiment:
1 bungkus mie hokkien, kukus 15 menit. 1 pack hokkien noodle, steam for 15 minutes.
50 gr kucai, potong 2 cm 50 gr chives, cut on 2 cm.
50 gr toge, rendam air panas sebentar dan tiriskan. 50 gr bean sprout, soak on hot water a while and drain.
Acar:
2 buah timun kecil potong dadu, 2 pcs cucumber small size, cut cube
6 buah bawang merah, potong, 6 pcs shallot, cut.
2 buah cabe rawit, buang biji dan iris. 2 pcs cayenne, seedless and slice.
10 gr gula pasir. 10 gr granulated sugar.
Garam secukupnya. Some salt.
2 sdm cuka apel. 2 tbsp apple vinegar.

Cara/method:
1. Panaskan minyak babi/sayur, masukkan daging ayam/babi dan aduk hingga berubah warna, masukkan ebi, aduk, tuang arak shao shing dan aduk. Heat lard/veggie oil, add chicken/pork and stir until changing the color, add dried shrimp, stir pour wine shao shing and stir.
2. Masukkan baso ikan dan jamur, aduk rata, masukkan bahan lain dan bumbu aduk rata dan biarkan mendidih. Add fish cake and mushroom, stir well. Add the other ingredients and seasoning.
3. Kentalkan dgn tepung tapioka campur air, sambli diaduk. Thickener with combined tapioca and water, while stirring.
4. Masukkan minyak wijen. Aduk. Masukkan telur kocok dan aduk. Add sesame oil and stir.add beaten egg and stir.
5. Campur bahan acar dan sisihkan. Combine preserve ingredients and set aside.
6. Cara saji. How to serve:
– Masukkan 100 gr mie kedalam mangkuk saji. 100 gr noodle on bowl dish.
– Siram kuah diatas mie, pour the soup over the noodle.
– Beri toge dan kucai diatasnya. Add bean sprout on top.
– Sajikan bersama acar timun. Serving with preserved cucumber.

Note:
Bila tidak suka mie bisa diganti bihun jd namanya Lo Mee Hoen. If you don’t want to eat noodle, can be changing with vermicelli and name it Lo Mee Hoen.

SOBA DINGIN DGN BACON – ZARU SOBA WITH BACON

Bahan/ingredients:
70-80 gr soba kering. 70-80 gr dried soba.
2 iris bacon, panggang dgn teflon. 2 slice bacon, grill with teflon.
1 butir telur ayam kampung kocok.buat dadar, gulung dan iris. 1 pcs beaten darmer egg, make egg crepe, rolled and slice.
1 batang bawang daun, cuci dan iris halus. 1 stalk scallion, wash and finely slice.
Wasabi secukupnya. Some wasabi.
Nori panggang secukupnya. Some roasted seaweed.

Bumbu/seasoning:
1 sdm kecap utk soba, 1 tbsp of soy sauce for soba.

2,5 sdm air dingin. 2,5 tbsp of cold water.

Cara/method:
1. Rebus soba selama 2,5 menit, tiriskan dan siram dgn air es hingga soba dingin, tiriskan, simpan di kulkas. Boiling soba for 2,5 minutes, drain, pour with cold water until soba cold enough and drain. refrigerate.
2. Campur bumbu. Combine seasoning.
3. Sajikan seperti pada foto. Serving like photoes.
4. Cara makan, masukkan wasabi dan bawang daun ke dalam kecap dan aduk. Celupkan soba ke dalam kecap dan sruput. How to eat, put wasabi and onion into the soy sauce and stir. Dip the soba into soy sauce and eat it.

Cara/method:
1. Masak persaji/how to cook per portion:
Panaskan 2 sdm bumbu mie kluntung, masukkan batang sawi hijau secukupnya, masukkan 70 gr mie dan 200 ml air/kaldu ayam, masak hingga mie cukup lembek, masukkan toge dan daun sawi hijau. Heat 2 tbsp mie kluntung spices. Add some stem of mustard green, add 70 gr noodle and 200 water/chicken stock, cook until the noodles are soft, add bean sprout and mustard green leaves.
2. Masak hingga mendidih dan pindahkan ke piring saji.
3. Beri pelengkap dan siap disajikan panas.
