Wheat Aglio Olio With Shrimp

WHEAT AGLIO OLIO WITH SHRIMP

Untuk 1 porsi. For 1 portion.

Bahan/ingredients:
60 gr spaghetti gandum. 60 gr wheat dried spaghetti, (San Remo)
5 ekor udang kupas. 5 pcs skinless shrimp.
2 siung bwg putih, iris tipis. 2 clove garlic, finely slice.
1 sdm minyak olive. 1 tbsp olive oil.
1 sdt garam. 1 tsp salt.
300 ml air. 300 ml water

Hiasan/topping:
Keju parmesan/parmesan cheese.
Green Tuille

Cara/method:
1. Didihkan air dan garam. Masukkan spaghetti dan rebus hingga matang (sekitar 12 menit), tiriskan. Boiling water and salt. Add spaghetti and boiling until al dente (12 menit)
2. Didihkan air dan masukkan udang. Tiriskan. Boiling water and add the shrimp. Drain.
3. Panaskan minyak olive, masukkan bawang putih, tumis hingga harum, masukkan spaghetti dan udang, aduk sebentar. Heat olive oil, add garlic, saute until fragrant, add spaghetti and shrimp, stir for awhile.
3. Siap disajikan panas dgn taburan parmesan dan green tuils sbg hiasan. Ready to serve hot, sprinkle with parmesan and garnish with green tuille

Spaghetti Pesto With Bacon & Mushroom

SPAGHETTI PESTO WITH BACON & MUSHROOM

Utk 2 porsi. For 2 portion.

Bahan/ingredients:
150 gr pasta spaghetti gandum, rebus dgn garam, tiriskan. 150 gr wheat spaghetti pasta, boiling with salt, strain. (Sanremo)
4 lbr bacon. 4 pcs bacon..
5 buah jamur shiitake segar, iris dan rendam sgn air panas selama 2 menit, tiriskan. 5 pcs fresh shiitake mushroom, soak on hot water for 2 minutes, drain.

Saus pesto/pesto sauce:
15 gr daun basil organic. 15 gr of organic basil leaves.
2 siung bawang putih ukuran besar. 2 cloves of garlic big size.
40 ml minyak olive. 40 ml olive oil. (Extra Light)

Pelengkap/condiment:
Keju parmesan secukupnya. Some parmesan cheese.

Cara/method:
1. Saat merebus pasta, siapkan saus pesto. While waiting for the pasta to cook, prepare pesto sauce.
2. Cara membuat saus pesto. How to make pesto sauce: masukkan ke dalam blender daun basil dan bawang putih, tambahkan minyak olive bertahap. Dan blender kasar. Put in the blender the basil leaves and garlic, add olive oil gradually, and roughly blend.
3. Saat pasta masih panas campur dgn saus pesto secukupnya dan masukkan jamur shiitake, aduk rata. When the pasta is still hot mix with pesto sauce to taste and add mushroom, stir well.
4. Sajikan spaghetti diatas piring saji. Dan letakkan bacon yg sdh di proses(aku gunakan airfryer dgn suhu 180C selama 4 menit) dan bentuk bacon spt bunga mawar. Serving spaghetti pesto on dish. And put the bacon in process (I use airfryer with 180C for 4 minutes) and bacon shape like rose.

AGLIO OLIO WITH BACON

Bahan/ingredients:
2 lbr streaky bacon, iris. 2 pcs streaky bacon, slice
80 gr spaghetti. 80 gr dried spaghetti, (De Cecco)
2 siung bwg putih, iris tipis. 2 clove garlic, finely slice.
2 buah cabe rawit organic, iris (sesuai selera). 2 pcs organic cayenne, slice.(taste of desire)
1 sdm minyak olive. 1 tbsp olive oil.
1 sdt garam. 1 tsp salt.
500 ml air. 500 ml water.

Cara/method:
1. Didihkan air dan garam. Masukkan spaghetti dan rebus hingga matang (sekitar 12 menit), tiriskan. Boiling water and salt. Add spaghetti and boiling until al dente (12 menit)
2. Panaskan minyak olive, masukkan bawang putih, bacon, cabe dan tumis hingga harum, masukkan spaghetti dan aduk sebentar. Heat olive oil, add garlic, bacon, cayenne and saute until fragrant, add spaghetti and stir for awhile.

PASTA DENGAN PESTO – PASTA WITH PESTO SAUCE

Utk 2-3 porsi. For 2-3 portion.

Bahan/ingredients:
200 gr pasta spaghetti, rebus sekitar 13 menit dgn garam, tiriskan. 200 gr spaghetti pasta, boiling for 13 minutes with salt, strain. (Barilla)

Saus pesto/pesto sauce:
20 gr daun basil. 20 gr of basil leaves.
3 siung bawang putih ukuran besar. 3 cloves of garlic big size.
50 ml minyak olive. 50 ml olive oil. (Extra Light)

Pelengkap/condiment:
Keju parmesan secukupnya. Some parmesan cheese.

Cara/method:

Spaghetti Bolognese Sauce


SPAGHETTI BOLOGNESE SAUCE

Bahan saus/sauce ingredients:
500 gr daging sapi giling. 500 gr ground beef.
1 buah bawang bombay ukuran besar, potong kecil2. 1 pcs onion big size, small cut.
6 buah tomat merah segar, potong kecil. 6 pcs fresh red tomato, small cut.
350 gr pasta tomat. 350 gr tomato paste. (CIRIO)

4 siung bawang putih, cincang. 4 cloves garlic, chop.
100 gr keju cedar parut. 100 gr grated cheddar cheese. (KRAF)
1 buah pala, haluskan. 1 pcs nutmeg, ground.
2 sdt oregano kering. 2 tsp dried oregano.
3 lbr daun salam kering. 3 pcs dried bay leaf.
½ sdt lada hitam kasar. ½ tsp roughly ground black pepper.
10 gr gula batu. 10 gr rock sugar.
Garam secukupnya. Some salt.
2 sdm minyak olive. 2 tbsp olive oil.
40 gr mentega tawar. 40 gr unsalted butter. (Elle & Vire)

Cara/method:
1. Panaskan minyak olive. Tumis bwg putih hingga harum, masukkan daging giling, aduk hingga berubah warna. Heat olive oil, saute garlic until fragrant, add ground beef, stir until changing color.
2. Masukkan pala dan lada. Aduk dan sisihkan. Add nutmeg and pepper. Stir and set aside.
3. Panaskan mentega, masukkan bawang bombay, tumis hingga harum. Masukkan tomat segar, aduk dan masak dgn api kecil hingga matang. Heat butter, add onion, saute until fragrant. Add fresh tomato, stir and simmer until well cook.
4. Masukkan tumisan daging dan bahan yg lain. Kecuali garam. Add sauteed beef and other ingredients. Except salt.
5. Tambahkan garam bila perlu. Add some salt if needed.
6. Sajikan dgn menuang saus bolognese ditas spaghetti dan taburi keju parmesan. Serve bolognese sauce on spaghetti and sprinkle with parmesan cheese.

Note:
1. Bungkus saus bolognese per 200gr dan simpan di freezer. Packing bolognese sauce 200gr and keep into freezer.
2. Persaji 100-120gr spaghetti (kering yg direbus dgn air garam dan sedikit minyak olive). Serving per pax 100-120 gr dried spaghetti (boiling with salt and some olive oil).

Baked Spaghetti Carbonara

BAKED SPAGETTI CARBONARA

Bahan/ingredients:
200 gr spaghetti, rebus dan tiriskan. 200 ge spaghetti, boiling and strain.
8 lbr smoke beef, potong kotak. 8 pcs smoke beef, cut square.
3 siung bwg putih, cincang halus. 3 cloves garlic, finely chop.

Taburan/topping:

Keju mozarela, potong. Cutted mozzarella.
Keju cedar parut. Grated cheddar cheese.

Saus carbonara/carbonara sauce:
50 gr keju cedar parut. 50 gr grated cheddar cheese.
20 gr keju parmesan. 20 gr parmigiano cheese.
200 ml kaldu ayam. 200 ml chicken broth.
50 ml krim masak. 50 ml cooking créam.
2 sdm terigu. 2 tbs all purpose flour
2 sdm mentega. 2 tbs unsalted butter.
1 sdt garam laut (sesuaikan). 1 tsp sea salt (to taste)
1/8 sdt lada hitam bubuk. 1/8 tsp grated black pepper.
1/8 sdt thyme kering. 1/8 tsp dry thyme
2 sdm mentega tawar. 2 tbsp unsalted butter.

Cara/method:
1. Panaskan minyak olive, masukkan bwg putih tumis hingga harum, masukkan smoke beef, aduk dan sisihkan. Heat olive oil, add garlic saute until fragrant, add smoke beef, stir and set aside.
2. Masukkan mentega biarkan meleleh masukkan terigu, aduk, masukkan kaldu ayam, aduk cepat, masukkan bahan lain dan smoked beef, biarkan mengental. Add butter until melting, add flour, stir, add chicken stock, stir fastest, add other ingredients and smoked beef, let’s thickener.
3. Masukkan spaghetti, aduk rata. Add spaghetti, stir well.
4. Taruh di wadah tahan panas, beri potongan keju mozzarella dan parutan keju cedar. Put it in the heat-resistant container, add mozzarella on top and sprinkle with grated cheddar cheese.
5. Oven suhu 200C selama 5 menit atau hingga keju keemasan. Bake with temperature 200C for 5 minutes or until golden the cheese.

Untuk 4 porsi (@6 ravioli per porsi). For 4 pax (@6 pcs ravioli per portion)

Bahan pasta/pasta dough:

100 gr tepung semolina. 100 gr semolina flour

100 gr tepung serba guna. 100 gr all purpose flour.

2 btr telur. 2 pcs eggs

1/2 sdt garam. 1/2 tsp salt

Bahan isi/filling:

200 gr daun bayam/horenso, iris halus. 200 gr spinach leaves/horenso, finely slices.

100 gr keju fetta goat,  cincang. 100 gr fetta goat cheese

1 buah bwg bombay ukuran kecil, cincang. 1 pcs onion small size, chop.

2 bwg putih, cincang. 2 garlic, chop.

1/8 sdt lada hitam bubuk. 1/8 tsp grated black pepper.

1/8 sdt thyme kering. 1/8 tsp dry thyme.

1 sdm minyak zaitun. 1 tbs olive oil.

Saus carbonara/carbonara sauce:

2 sdm cheese sauce by Aneka Pie. 2 tbs cheese sauce by Aneka Pie.

200 ml kaldu ayam. 200 ml chicken broth.

50 ml krim masak. 50 ml cooking créam.

2 sdm terigu. 2 tbs all purpose flour

2 sdm mentega. 2 tbs unsalted butter.

1 sdt garam laut (sesuaikan). 1 tsp sea salt (to taste)

1/8 sdt lada hitam bubuk. 1/8 tsp grated black pepper.

1/8 sdt thyme kering. 1/8 tsp dry thyme.

 

Bacon goreng sbg taburan. Fried bacon for springkle.

 

Cara/Method:

1. Memasak isian: panaskan minyak zaitun, masukkan bwg putih, bwg bombay tumis hingga harum, masukkan bayam, aduk rata, masukkan keju fetta, lada dan thyme, aduk rata, sisihkan. How to cook filling: heat olive oil, add garlic and onion until fragrant, add spinach, stir well, add fetta cheese, grated black pepper and dry thyme, stir well and set aside.

2. Cara membuat pasta:

Campur semua bahan aduk dan uleni hingga rata, gilas dgn roller hingga setebal 1-2 mm. How to make pasta dough: mix well all ingredient, knead well, roll the dough until thin 1-2mm.

3. Cara membuat ravioli: ambil pasta beri 1 sdt isi, oles sekitar isian dgn air, tutup dgn pasta yg lain, tekan perlahan spy merekat, potong dgn pisau gerigi. Lakukan hingga bahan habis, rebus 8-10 menit (air, garam dan minyak)dan sisihkan. How to make ravioli: take pasta put 1 tbs filling, spread around filling with water, cover with other pasta, gently press until it sticks together, cut with serrated knife and do until consumables, boil for 8-10 minutes (water, salt and oil)and set aside.

4. Cara masak sauce carbonara: panaskan mentega, masukkan bwg putih, tumis hingga harum, masukkan terigu aduk, tuang kaldu ayam, aduk cepat, masukkan krim masak dan cheese sauce, aduk rata, masukkan lada, garam dan thyme, cicipi, sisihkan. How to cook Carbonara Sauce: heat butter, add garlic, stirfry until fragrant, ads flour, stir  afd chicken broth, stir quickly, add cooking créam and cheese sauce, stir well, add pepper, salt and dry thyme, taste, set aside.

5. Penyajian ravioli: tuang 4 sdm sendok saus carbonara diatas piring saji, tata 5 ravioli diatasnya, beri sauce lagi dan taburi bacon goreng. How to serve ravioli: put 4 tbs Carbonara sauce on serving dish, put 5 ravioli, put more sauce and springkle with fried bacon.
