Sambal Belimbing Wuluh – Sambal Averrhoa Bilimbi

SAMBAL BELIMBING WULUH – SAMBAL AVERRHOA BILIMBI

Bahan/ingredients:
5 buah cabe rawit merah. 5 pcs red cayenne pepper.
5 buah bawang merah. 5 pcs of shallot.
1 siung bawang putih. 1 cloves of garlic.
2 buah belimbing wuluh. 2 pcs averrhoa bilimbi
2 buah belimbing wuluh, iris tipis. 2 pcs averrhoa bilimbi, finely slice.
½ sdt terasi sangrai. ½ tsp roasted belacan.
Garam sesuai selera. Salt to taste.
½ sdm minyak kelapa. ½ tbsp coconut oil.

Cara/method:
1. Potong semua bahan, campur semua dgn minyak kelapa kecuali terasi, belimbing wuluh iris tipis dan garam. Proses dgn air fryer 180C selama 5 menit. Cut all ingredients, mix all with coconut oil except belacan, averrhoa bilimbi and salt.
2. Haluskan semua bahan, tambahkan terasi dan garam. Ground all ingredients, add belacan and salt.
3. Masukkan belimbing wuluh iris dan aduk dengan sendok makan. Add sliced averrhoa bilimbi and stir with tablespoon.
4. Sambal siap disajikan dgn apapun. Sambal ready to serve with other condiment.

Sambal Roa – Smoked Fish Chili Sauce

SAMBAL ROA – SMOKED FISH CHILI SAUCE

Bahan/ingredients:
200 gr Roa tumbuk halus . 200 gr finely ground smoked fish.
30 buah bawang merah.30 pcs of shallot.
10 siung bawang putih.10 cloves of garlic.
30 buah cabe merah besar. 30 pcs of red chili.
10 buah cabe rawit merah. 10 pcs of red cayenne.
2 sdm gula merah. 2 sdm brown sugar.
2 buah tomat segar. 2 pcs fresh red tomato.
1 sdm garam. 1 tbsp salt.
1 sdt lada bubuk 1 tsp pepper powder.
50 ml minyak sayur. 50 ml veggie oil

Cara/methods:
1. Goreng semua cabe, bwg merah, bwg putih dan tomat segar smp ½ matang. Frying half cook of chili, shallot, garlic and fresh tomato.
2. Masukkan dlm blender, tambahkan garam, lada hitam, gula merah dan minyak sayur, blender hingga halus. Enter all ingredients into blender, add salt, pepper, brown sugar and veggie pil, and process until smooth.
3. Pindahkan ke dalam wajan, masukkan roa, aduk rata, tumis hingga berubah menjadi merah pekat. move to frying pan and stir until it turns solid red

Note:
Sambal Roa ini, siap digunakan utk masak nasi goreng, bihun goreng, mie goreng, cocolan singkong goreng, pisang goreng, dan utk campuran masakan lainnya.

SAMBAL SERAI – SAMBAL LEMONGRASS

Bahan/ingredients:
2 batang serai ambil bagian putihnya. 2 stalks of lemongrass.
4 buah bawang merah. 4 pcs shallot.
1 siung bawang putih. 1 clove of garlic.
20 buah cabe rawit. 20 pcs of red cayenne.
½ sdt terasi bakar. ½ tsp roasted belacan.
Garam secukupnya. Some salt.
20 ml minyak kelapa. 20 ml coconut oil.

Cara/method:
1. Cincang halus serai, bawang merah, bawang putih dan cabe rawit. Finely chopped lemongrass, shallot, garlic and red cayenne.
2. Panaskan minyak kelapa, masukkan bahan cincang dan tambahkan garam serta terasi. tumis hingga benar2 matang. Heat coconut oil, add chopped ingredients and add some salt and belacan, saute until wellcook.

Note:
Sangat cocok utk nasi jinggo atau nasi kucing atau nasi ala bali lainnya. Very suitable for jinggo rice or cat rice or balinese rice.

Sambal Bangkok – Bangkok Chili Sauce

SAMBAL BANGKOK – BANGKOK CHILI SAUCE

Bahan/ingredients:
3 buah cabe merah besar, cincang halus. 3 pcs red chili, finely chop.
5 buah cabe rawit merah Thai (atau cabe rawit merah), cincang halus. 5 pcs thai bird eye (or red cayenne), finely chop.
1 sdm cabe merah halus. 1 tbsp ground red chili
12 siung bawang putih, cincang halus. 12 cloves garlic, finely chop.
3/4 sdt garam. 3/4 tsp salt.
100 gr gula pasir. 100 gr granulated sugar:
80 ml cuka apel. 80 ml apple vinegar.
450 ml air. 450 ml water.
1 sdm minyak wijen. 1 tbsp sesame oil.
20 gr maizena + 50 ml air (utk pengental). 20 gr corn starch + 50 ml water (for thickener)

Cara/method:
1. Panaskan minyak wijen, tumis bwg putih hingga harum, masukkan cabe cincang tumis hingga harum. Heat sesame oil. Saute chopped garlic until fragrant, add chopped chili until fragrant.
2. Masukkan air, didihkan, masukkan cabe halus, cuka apple, garam dan gula. Biarkan mendidih, masukkan larutan pengental sambil diaduk rata. Add water, lets boiling. Add ground chilli, apple vinegar, salt and sugar. Lets boiling, add thickener mixture while stirring.
3. Simpan di dalam wadah dan biarkan suhu ruang dan siap gunakan. Store in container until room temperature and ready to use.
4. Simpan tertutup di dlm lemari es. Keep it covered in the refrigerator.
