Tumis SEI Bawang Bombay – Sauteed SEI Onion


TUMIS SEI BAWANG BOMBAY – SAUTEED SEI ONION

Bahan/ingredients:
300 gr SEI (babi asap), iris. 300 gr SEI(smoked pork), slice.
1 buah bawang bombay, iris. 1 pcs onion, slice.
2 siung bawang putih, iris. 2 cloves of garlic, slice.
3 buah bawang merah, iris. 3 pcs shallot, slice.
½ sdm saus tiram. ½ tbsp oyster sauce.
Lada hitam kasar secukupnya. Some coarse black pepper.
5 buah cabe kering, buang biji, potong dan rendam dalam air. 5 pcs of dried chili, seedless, cut and soak on water.
1 sdm minyak sayur. 1 tbsp veggie oil.

Cara/method:
1. Panaskan minyak, tumis bawang merah dan putih hingga harum, masukkan bawang bombay dan cabe. Heat oil, saute shallot dan garlic until fragrant, add onion and chili.
2. Masukkan SEI, saus tiram dan lada, aduk rata. Add SEI, oyster sauce and pepper. Stir well.
3. Sajikan dgn nasi panas. Serving with hot rice.

TUMIS AYAM GILING BUNCIS – SAUTEED MINCED CHICKEN GREEN BEAN

Bahan/ingredients:
300 gr buncis muda, buang kedua ujungnya dan rebus dgn garam, tiriskan. 300 gr baby green bean, remove both ends and boil with salt, drain.
150 gr daging ayam giling. 150 gr minced chicken.
3 siung bawang putih, cincang. 3 cloves of garlic, chop.
2 buah bawang merah, cincang. 2 pcs of shallo, chop.
1 buah cabe merah besar buang biji, potong kotak kecil. 1 pcs of seedless red chili, small squared.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.
Bawang putih goreng utk taburan. Fried garlic for topping.

Bumbu/seasoning:
2 sdt kecap cap jamur. 2 tsp mushroom soy sauce.
½ sdt saus tiram. ½ tsp oyster sauce.
2 sdt mirin. 2 tsp mirin.
1 sdt minyak wijen.
Lada hitam kasar secukupnya. Some coarse black pepper.

Cara/method:
1. Panaskan minyak sayur, tumis bawang putih dan bawang merah hingga harum, masukkan cabe, aduk sebentar. heat veggie oil, saute garlic and shallot until fragrant, add chili, stir for a while
2. Masukkan daging ayam, aduk dan biarkan terurai. Masukkan bumbu, aduk rata. Add the chicken meat, stir and let it decompose. Add the seasoning, mix well.
3. Masukkan buncis, aduk 1 menit, dan sajikan diatas piring saji dgn taburan bawang putih goreng diatasnya. Enter the beans, stirring 1 minute, and serve on a serving plate with a sprinkling of fried garlic on top.

Bakso Tahu Ikan – Tofu Fish Cake


BAKSO TAHU IKAN – TOFU FISH CAKE

Bahan/ingredients:
200 gr daging ikan tenggiri (50% beku). 200 gr mackerel.(50% frozen)
40 gr tapioka. 40 gr tapioca.
1 sdm bawang putih goreng, 1 tbsp fried garlic.
1 sdm bawang merah goreng. 1 tbsp fried shallot.
¼ sdt lada bubuk. ¼ tsp pepper powder.
⅜ sdt garam. ⅜ tsp salt.
20 ml putih telur kampung dingin.20 ml cold farmer white egg.
30 ml air dingin. 30 ml cold water.
3 buah tahu putih besar, potong menjadi 10. 3 pcs white tofu big size, cut on 10 pcs.

Cara/method:
1. Campur semua bahan dan proses dengan food processor. Mix all the ingredients and process with food processor.
2. Simpan di freezer selama 30 menit dgn kondisi wadah tertutup. Freeze in an enclosed box for 30 minutes
3. Buat lubang pada tahu seperti foto. Make a hole in tofu like a photo.

4. Isi lubang dengan 2 sdt bahan bakso ikan dan ratakan. Fill the hole with 2 tsp of fish cakes dough and flatten.

5. Buat lubang pada bakso ikan dan isi dgn kuning telur. Make a hole in fish cakes and fill with yolk.

6. Panaskan kukusan dan kukus bakso tahu ikan selama 25 menit. Heat the steamed and steamed tofu fish cake for 25 minutes.

7. Bakso Tahu Ikan siap disajikan dgn bakso ikan or bakso lainnya. Tofu fish cake ready to serve with fish balls or other balls.

BAKSO IKAN – FISH BALL

Bahan/ingredients:
300 gr daging ikan tenggiri (50% beku). 300 gr mackerel.(50% frozen)
80 gr tapioka. 80 gr tapioca.
1 sdm bawang putih goreng, 1 tbsp fried garlic.
1 sdm bawang merah goreng. 1 tbsp fried shallot.
¼ sdt lada bubuk. ¼ tsp pepper powder.
1 sdt garam. 1 tsp salt.
20 ml putih telur dingin: 20 ml cold white egg.
50 ml air dingin. 50 ml cold water.

Pelengkap/condiments:
Bawang daun secukupnya. Some scallion.
Bawang merah goreng secukupnya. Some fried shallot.
Sambal cabe rawit merah dan bawang putih kukus. Sambal steamed cayenne and garlic.

Cara/method:
1. Campur semua bahan dan proses dengan food processor. Mix all the ingredients and process with food processor.

2. Simpan di freezer selama 30 menit dgn kondisi wadah tertutup. Freeze in an enclosed box for 30 minutes.

3. Siapkan air hangat, masukkan bakso yg sudah di bentuk bulat. Setelah panci penuh dengan bakso, nyalakan kompor dengan api kecil dan biarkan air mendidih (tidak sampai bergolak) dan bakso mengapung. Angkat bakso dan tiriskan.

7. Saring air rebusan dan tambahkan bawang putih geprek, lada dan garam sebagai kuah bakso. Strain the cooking water of meatballs and add garlic geprek, pepper and salt as gravy meatball.

TUMIS AYAM PAPRIKA – SAUTEED CHICKEN BELL PEPPER

Bahan/ingredients:
300 gr daging ayam tanpa tulang, iris. 300 gr boneless chicken. Slice.
100 gr paprika merah, potong kotak. 100 gr red bell pepper, cut cube.
100 gr paprika kuning, potong korak. 100 gr yellow bell pepper, cut cube.
1 buah bawang bombay ukuran kecil, potong kotak. 1 pcs onion small size, cut cube.
½ kaleng jamur kancing, iris. ½ can champignon mushroom, slice.
1 buah brokoli kecil, rebus dan tiriskan. 1 pcs broccoli, boil and drain.
3 siung bawang putih, cincang. 3 cloves of garlic, chop.
80 ml air panas. 80 ml hot water.
1 sdm minyak sayur. 1 tbsp veggie oil.
1 sdm tepung tapioka + 20 ml air utk pengental. 1 tbsp tapioca flour + 20 ml water for thickener.

Bumbu/seasoning:
½ sdm arak Shao Shing. ½ tbsp wine Shao Shing.
1 sdm saus tiram. 1 tbsp oyster sauce.
2 sdt kecap jamur. 2 tsp mushroom sauce.
2 sdt minyak wijen. 2 tsp sesame oil.

Cara/method:
1. Panaskan minyak, masukkan bawang putih dan bawang bombay, tumis hingga harum, tumis. Heat oil, add garlic and onion saute until fragrant.
2. Masukkan ayam, aduk hingga 50 % berubah warna, siram dgn arak dan aduk hingga ayam berubah warna sempurna. Add chicken, stir until 50% changing the color, pour the wine over the chicken, and stir until perfectly changing the color.
3. Masukkan semua bahan dan bumbu, aduk rata biarkan mendidih dan masukkan larutan mengental sambil di aduk hingga rata. Add all ingredients and seasoning, stir well, lets boiling and add the thickener mixture while stirring.
4. Siap disajikan dgn nasi panas. Ready to serve hot with rice.

Ayam Goreng Ala Thai – Fried Chicken Ala thai


AYAM GORENG ALA THAI – FRIED CHICKEN ALA THAI

Bahan/ingredients:
3 potong paha ayam tanpa tulang, potong. 3 pcs boneless chicken thigh, cut.
1 butir telur. 1 pcs of egg.
60 gr paprika merah, potong. 60 gr red bell pepper, cut.
40 gr bawang bombay, potong. 40 gr onion, cut.
100 gr nanas, potong. 100 gr pineapple, cut
220 ml Sambal Bangkok. 220 ml Bangkok Chili Sauce

Bumbu perendam/marinate:
1 sdm mirin. 1 tbsp mirin.
1 sdt garam. 1 tsp salt.
½ sdt lada bubuk. ½ tsp pepper powder.

Bahan pelapis ayam/chicken coating ingredients:
½ sdt garam. ½ tsp salt.
¼ sdt lada bubuk. ¼ tsp pepper powder.
30 gr tepung beras. 30 gr rice flour. (Rose brand)
100 gr tepung tapioka. 100 gr tapioca flour. (Cap Gajah Laut/I LU FAT)

Cara/method:
1. Campur daging ayam dgn bumbu perendam dan telur dan diamkan 15 menit. Combine chicken with seasoning and egg, let stand for 15 minutes.
2. Panaskan minyak utk menggoreng. Heat oil for frying.
3. Campur bahan pelapis ayam dalam kotak. Combine chicken coating ingredients on box.
4. Masukkan ayam dalam kotak dan kocok agar tepung melapisi ayam dgn sempurna. Add the chicken in the box and shake the flour to coat the chicken perfectly.
5. Masukkan ayam 1 per 1 dalam minyak panas dan goreng hingga keemasan, tiriskan. Enter the chicken 1 by 1 in hot oil and fry until golden, drain.
6. Panaskan panci saus masukkan sambal bangkok hingga mendidih, masukkan bawang bombay, paprika dan nanas, aduk rata. Heat the sauce pan to enter the bangkok sauce to boil, put onions, peppers and pineapples, mix well.
7. Letakkan ayam di piring saji dan tuang saus diatasnya. Dan siap dihidangkan. Place the chicken on a serving plate and pour the sauce on it. And ready to serve.

Tumis Ayam Basil Ala Thai Dgn Mede – Thai Chicken Basil With Cashew


TUMIS AYAM BASIL ALA THAI DGN MEDE – THAI CHICKEN BASIL WITH CASHEW

Bahan/ingredients:
500 gr paha tanpa tulang, potong dadu (bisa diganti dada ayam tanpa tulang. . 500 gr boneless chicken thigh, cut cube. (Can be change with boneless chicken breast)
8 siung bawang putih kupas. 8 cloves of peeled garlic
3 buah cabe merah kriting/Cabe Thai. (Boleh tambah cabe rawit bila suka pedas) 3 pcs curly red chili/Thai Chili. (Ut some red cayenne if you like spicy)
40 gr kacang mede sangrai (kugunakan air fryer 120C selama 15 menit). 40 gr roasted cashew (I used air fryer 120C for 15 minutes)
2 sdm minyak utk menggoreng. 2 tbsp oil for frying. (Olive oil)
15 gr daun basil. 15 gr of basil leaves.

Bumbu/Seasoning:
1 sdm saus tiram. 1 tbsp of oyster sauce.
½ sdm kecap asin light. ½ tbsp of light soy sauce
1 sdm kecap manis. 1 tbsp of dark sweet soy sauce. (Tropicana)
1 sdt kecap cap jamur. 1 tsp mushroom soy sauce.
1 sdt minyak wijen. 1 tsp sesame oil.
1 sdt madu. 1 tsp honey. (Tropicana)

Cara/method:
1. Tumbuk kasar cabe dan bawang putih, sisihkan. Roughly ground chili and garlic using mortar and pestle, set aside.
2. Cuci dan tiriskan daun basil. Wash and strain basil leaves.
3. Campur bumbu, sisihkan. Combine seasoning. Set aside.
4. Panaskan minyak, masukkan bawang putih dan cabe, tumis hingga harum. (20 second) Heat oil, add garlic and chili, saute until fragrant. (20 detik)

5. Masukkan ayam tumis hingga berubah warna (5 menit), masukkan bumbu dan aduk rata.(5 menit) masukkan daun basil, aduk rata (1 menit) dan matikan api. Add chicken, saute until changing color (5 minutes), add seasoning and stir well (5 minutes), add basil leaves, stir well (1 minute) and switch off the stove.
6. Sajikan panas dgn nasi, telur mata sapi dan taburi kacang mede. Serving hot with rice, sunny side up and sprinkle with cashew.
