Cap Chay Goreng – Stewed Vegetables


Masakan ini disebut cap chay (cap=10, chay=lauk pauk) karena dalam satu sajian terdapat 10 unsur baik sayur maupun ayam/seafood/beef/daging. Dan masakan dgn bbrp unsur ini dipercaya sangat memenuhi kebutuhan tubuh kita.
This dish is called cap chay (cap = 10, chay = side dishes) because in one dish there are 10 elements both vegetables and chicken / seafood / beef / meat. And cooking with some of these elements is believed to greatly meet the needs of our body.

CAP CHAY GORENG – STEWED VEGETABLES

Untuk 2-3 porsi. For 2-3 portion.

Bahan/ingredients:
1 buah wortel ukuran sedang, iris serong. 1 pcs carrot medium size, oblique.
1 buah oyong/gambas, iris bulat. 1 pcs luffa acutangula (LUFFA), cut circle.
6 ekor udang ukuran sedang, kupas sisa ekor kerat punggung udang dan keluarkan kotoran, rebus 30 detik di air mendidih. 6 medium-sized shrimp, peel the rest of the tail, crate the shrimp back and remove the dirt, boil 30 seconds in boiling water.
6 buah bakso ikan iris menjadi 3. 6 pieces of cut fish balls into 3.
1 butir telur ayam kampung kocok lepas. 1 beaten farmer egg.
¼ buah bawang bombay, iris. ¼ pcs onion, slice.
50 gr kacang polong beku. 50 gr frozen peas.
50 gr jagung manis beku. 50 gr frozen sweet corn.
5 buah jamur shiitake kering, rendam air panas dan iris. 5 pcs dried shiitake, soak on hot water and slice.
15 gr jamur hitam kering, rendam air panas dan keringkan. 15 gr black fungus, soak on hot water and drain.
3 siung bawang putih, cincang. 3 cloves of garlic, chopped.
2 iris jahe, 2 slice ginger.
1 sdm tapioka + 3 sdm air, pengental. 1 tbsp tapioca + 3 tbsp water, thickener.
½ sdm minyak sayur. ½ tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.
300 ml kaldu ayam. 300 ml chicken stock.

Bumbu/seasoning:
1 sdm arak sao shing. 1 tbsp wine sao shing.
½ kecap asin premium. ½ tbsp premium soy sauce.
½ sdm kecap ikan. ½ tbsp fish sauce.
1 sdm saus tiram. 1 tbsp oyster sauce.
¼ sdt lada bubuk. ¼ tsp pepper powder.
Garam secukupnya. Salt to taste.

Cara/method:
1. Panaskan minyak wijen dan minyak sayur, tumis bawang putih dan jahe hingga harum. Heat sesame and veggie oil, saute garlic and ginger until fragrant.
2. Masukkan bertahap semua bahan (kecuali telur) sambil diaduk. Gradually add all ingredients (except eggs) while stirring.
3. Masukkan bumbu dan aduk. Add seasoning and stir.
4. Tuang kaldu ayam, aduk dan biarkan mendidih. Pour the chicken stock, stir and let it boil.
5. Masukkan larutan tapioka aduk hingga mengental, masukkan telur kocok diamkan 10 detik dan aduk. Add the tapioca solution to stir until thickened, put in the beaten egg, let stand 10 seconds and stir.
6. Sajikan panas, bisa disajikan dgn mie, nasi, bihun dan lainnya sesuai selera. Serve hot, can be served with noodles, rice, rice noodles and others according to taste.

Telur Dadar Sumsum Sapi – Beef Marrow Omelet


TELUR DADAR SUMSUM SAPI – BEEF MARROW OMELET

Bahan/ingredients:
200 gr sumsum sapi, cuci dan iris 1 cm. 200 gr beef marrow, wash and cut 1 cm.
1 batang daun bawang iris halus. 1 stalks spring onion. Finely slice.
3 butir telur ayam kampung. 3 pcs of farmer egg.

Bumbu/seasoning:
2 siung bawang putih, haluskan. 2 cloves of garlic, ground
1 buah bawang merah, haluskan. 1 pcs of shallot, ground.
Sejumput lada bubuk. A pinch of pepper powder.
¼ sdt garam. ¼ tsp salt.

Cara/method:
1. Kocok telur bersama bumbu halus hingga rata. Beaten the eggs with ground seasoning until blended.
2. Masukkan sumsum dan daun bawang, aduk. Add marrow and spring onion, stir.
3. Panaskan teflon beri ½ sdm minyak sayur, dan tuang adonan telur, biarkan matang bagian bawahnya baru dibalik dan biarkan kedua sisi matang. Heat the teflon with ½ tbsp of vegetable oil, and pour the egg mixture, let the bottom ripe just turn over and let the two sides cook.
4. Pindahkan ke piring saji dan potong sesuai selera sebelum disajikan. Move to a serving plate and cut as your desire before serving.

Sate Babi Sanur – Sanur Pork Satay


SATE BABI SANUR – SANUR PORK SATAY

Bahan/ingredients:
1000 gr daging babi, potong. 1000 gr pork, cut.
Tusuk sate. Satay skewer.

Bumbu perendam/marinate:
20 buah bawang merah. 20 pcs of shallot.
8 siung bawang putih. 8 cloves of garlic.
4 cm lengkuas, potong. 4 cm galangal, cut
3 cm kunyit, potong. 3 cm turmeric, cut.
2 cm jahe, potong. 2 cm ginger, cut.
2 cm kencur, potong. 2 cm fragrant ginger,cut.
½ sdm ketumbar. ½ tbsp coriander.
8 butir kemiri. 8 pcs candlenut.
7 lembar daun jeruk, iris halus. 7 pcs lime leaf, finely slice.
4 buah cabe merah keriting, potong. 4 pcs curly chili, cut.
1 batang serai, ambil bagian putihnya, iris. 1 stalk lemongrass, just take white part, slice.
1 sdm gula merah (hilangkan utk pelaku diet keto) 1 tbsp brown sugar.(skip this for keto dieter).
2 sdt garam. 2 tsp salt.

Pelengkap/condiment:
Cabe rawit. Cayenne pepper.
Bawang merah. Shallot.
Kecap manis. Dark sweet soy sauce. (tropicana Slim)

Cara/method:
1. Goreng ½ matang bahan bumbu perendam, dan ulek kasar. (Aku memakai minyak kelapa dan memproses dgn air fryer 200C selama 8 menit).Half fried marinate ingredients, and roughly ground. (I used coconut and process with airfryer 200C for 8 minutes)

2. Campur babi dan bumbu. Combine pork and spices.

3. Tusuk daging babi dan diamkan minimal 1 jam jam(menginap semalam lebih enak). Skewers pork and set aside minimum 1 hour (overnight more delicious).

4. Panggang sate diatas bara arang hingga matang (aku pakai airfryer). Grilled satay on charcoal until cooked (I used airfryer)
5. Sajikan dengan nasi or lontong dan pelengkap. Serve with rice or rice cake and condiment.

Note:
1. Orang Bali membuat bumbu punya ciri khas tidak diulek halus tp di cincang sehalus mungkin. (Saya menggunakan chopper) dan menumis bumbu dengan minyak kelapa. The Balinese make the spices have characteristics not finely ground but chopped as smooth as possible (I use chopper) and sauté spices with coconut oil.
2. Daging babi bisa diganti dgn ayam atau sapi. Pork can be changing with chicken or beef.

Tumis Enoki Seafood – Sauteed Enoki Seafood

TUMIS ENOKI SEAFOOD – SAUTEED ENOKI SEAFOOD

Bahan/ingredients:
1 ekor cumi, potong cincin, rebus sebentar dan tiriskan. 1 pcs squid, cut a ring, boiling for awhile and drain.
6 buah bakso ikan, belah 2 bagian. 6 pcs fishball, cut into 2.
1 kuntum brokoli. 1 bundle of broccoli.
1 bungkus jamur enoki, buang akar. 1 pack enoki mushroom, cut off the root.
½ buah paprika kuning. ½ pcs yellow bell pepper.
1 butir telur ayam kampung kocok. 1 pcs beaten farmer egg.
½ sdm saus tiram. ½ tbsp oyster sauce.
1 sdm kecap asin kikkoman. 1 tbsp kikkoman soy sauce.
¼ sdt lada hitam bubuk. ¼ tsp black pepper powder.
1 sdm arak masak (shao hsing bisa ditiadakan). 1tbsp chinese wine. (Shao hsing can be skip).
3 siung bawang putih cincang. 3 cloves of chopped garlic.
½ sdt jahe parut. ½ tsp grated ginger.
1 sdm minyak sayur + ½ sdm minyak wijen. 1 tbsp veggie oil + ½ tbsp sesame oil.
500 ml kaldu panas. 500 ml hot stock.
1 sdm maizena + 20 ml air untuk pengental. 1 tbsp cornstarch + 20 ml for thickener.

Cara/method:
1. Panaskan minyak, tumis bawang putih dan jahe hingga harum, masukkan cumi, bakso ikan, siram dgn arak dan aduk. Heat oil, saute garlic and ginger until fragrant, add squid, fish ball and pulour chinese wine and stir.
2. Masukkan semua bahan kecuali telur dan larutan pengental. Add all ingredients except egg and thickener batter.
3. Setelah mendidih masukkan larutan pengental dan aduk, masukkan telur kocok dan aduk. After boil add thickener batter and stir, add beaten egg and stir.
4. Siap dihidangkan panas. Ready to serve hot.

Sawi Putih Gulung Ayam Saus Tiram – Chicken Chinese Cabbage Roll Oyster sauce


SAWI PUTIH GULUNG AYAM SAUS TIRAM – CHICKEN CHINESE CABBAGE ROLL OYSTER SAUCE

Bahan/ingredients:
10 lbr sawi putih, cuci, rebus dan peras, sisihkan. 10 pcs chinese cabbage, wash, boiling and squeeze, set aside.

200 gr daging ayam giling. 200 gr ground chicken.
2 btg daun bawang, iris halus, 2 stalks spring onion, finely slice.
¼ buah paprika kuning, iris kotak kecil. ¼ pcs yellow bell pepper, cut small square.
½ buah cabe merah tanpa biji, iris kotak kecil. ½ pcs seedless red chili, cut small square.
½ sdm bawang putih goreng, haluskan.. ½ tbsp ground fried garlic.
1 sdm tepung tapioka. 1 tbsp tapioca flour.
1 btr telur ayam kampung. 1 pcs farmer egg.
½ sdm saus tiram. ½ tbsp oyster sauce.
½ sdm kecap asin kikkoman. ½ tbsp kikkoman soy sauce.
½ sdm mirin. ½ tbsp mirin.
¼ sdt lada bubuk. ¼ tsp pepper powder.
Garam secukupnya. Some salt to taste.

Saus tiram/oyster sauce:
100 ml kaldu ayam. 100 ml chicken stock.

1 sdm saus tiram. 1 tbsp oyster sauce.
¼ sdt lada hitam bubuk kasar. ¼ tsp coarse black pepper.
3 siung bawang putih cincang. 3 cloves of chopped garlic.
1 sdt saus inggris. 1 tsp worchester sauce.
Larutan pengental. Thickener batter.
½ sdm minyak wijen. ½ tbsp sesame oil.

Cara/method:
1. Campur semua bahan isian, aduk rata kecuali sawi putih. Combine all ingredients of filling except chinese cabbage.

2. Ambil selembar sawi putih rebus dan beri 1 sdm bahan isi, gulung yg rapi. Lakukan hingga semua bahan rapi terbungkus. Take a piece of boiled chinese cabbage and give 1 tbsp of filling, roll it neatly. Do it until the ingredients are neatly wrapped.

3. Kukus selama 20 menit. Steam for 20 minutes.
4. Tuang kaldu yg keluar saat sawi putih gulung di kukus sebagai kaldu utk sauce, sisihkan. Pour the stock out when the chinese cabbage roll is steamed as a broth for sauce, set aside.
5. Letakkan sawi gulung diatas piring, sisihkan. Place chinese cabbage on dish, set aside.
6. Panaskan minyak wijen, tumis bawang putih hingga harum, masukkan saus tiram, saus inggris, lada hitam dan kaldu, setelah mendidih, tuang larutan pengental dan aduk rata. Heat sesame oil, saute garlic until fragrant, add oyster sauce, english sauce, black pepper and broth, after boiling, pour the thickening batter and mix well.
7. Siramkan saus diatas sawi gulung dan siap dihidangkan. Pour the sauce over chinese cabbage roll and ready to serve.

TELUR DADAR KEJU & KUCAI – OMELETTE CHEESE & CHIVE

Bahan/ingredients:
2 btr telur, kocok lepas. 2 pcs beaten egg.
5 btg kucai, potong 1 cm, 5 stalks chive, cut 1 cm.
20 gr keju gouda,potong. 20 gr gouda cheese, cut.
10 iris acar cabe. 10 sliced pickled chili.

Lada bubuk secukupnya. Some pepper powder.
5 gr mentega tawar. 5 gr unsalted butter. (Elle& Vire)

Cara/method:
1. Panaskan mentega diatas teflon. Campur telur kocok, kucai dan lada bubuk, tuang adonan ke teflon dan gunakan api sedang, tutup wajan. Heat butter on teflon. Combine beaten egg, chive and pepper powder, pour the mixture on teflon and set on medium heat, cover the pan.
2. Setelah permukaan telur mulai terlihat ½ matang, letakkan potongan keju dan acar cabe di atasnya, tutup kembali wajan, dan biarkan matang. After the egg surface begins to look half cooked, put the chuck of cheese and pickled chili on top, cover the pan agains and let it cook.

3. Potong telur dadar sebelum disajikan. Slice the omelette before serving.

TUMIS SEI BAWANG BOMBAY – SAUTEED SEI ONION

Bahan/ingredients:
300 gr SEI (babi asap), iris. 300 gr SEI(smoked pork), slice.
1 buah bawang bombay, iris. 1 pcs onion, slice.
2 siung bawang putih, iris. 2 cloves of garlic, slice.
3 buah bawang merah, iris. 3 pcs shallot, slice.
½ sdm saus tiram. ½ tbsp oyster sauce.
Lada hitam kasar secukupnya. Some coarse black pepper.
5 buah cabe kering, buang biji, potong dan rendam dalam air. 5 pcs of dried chili, seedless, cut and soak on water.
1 sdm minyak sayur. 1 tbsp veggie oil.

Cara/method:
1. Panaskan minyak, tumis bawang merah dan putih hingga harum, masukkan bawang bombay dan cabe. Heat oil, saute shallot dan garlic until fragrant, add onion and chili.
2. Masukkan SEI, saus tiram dan lada, aduk rata. Add SEI, oyster sauce and pepper. Stir well.
3. Sajikan dgn nasi panas. Serving with hot rice.
