Bacon & Enoki Gulung – Rolled Bacon & Enoki


BACON 🥓 & ENOKI  GULUNG – ROLLED BACON 🥓 & ENOKI

Bahan/ingredients:
1 pak jamur enoki, buang bagian akar. 1 pack enoki mushroom, cut out the root.
6 lbr pork bacon. 6 pcs pork bacon.
40 gr keju mozarela parut. 40 gr grated mozzarella cheese.

Bumbu/seasoning:
20 gr mentega tawar. 20 gr unsalted butter. (Elle & Vire or Anchor)
2 siung bawang putih cincang. 2 cloves of chopped garlic.
6 lbr daun seledri cincang. 6 pcs chopped celery.
Lada hitam kasar secukupnya. Some roughly ground black pepper.

Cara/method:
1. Lelehkan mentega dan campur dengan bawang putih dan seledri, sisihkan. Melting butter and combine with garlic and celery, set aside.
2. Letakkan keju diatas bacon dan letakkan jamur enoki diatas keju, gulung dan semat dgn tusuk gigi. Put the cheese on the bacon and place the enoki mushrooms on cheese, roll and toothpick.

3. Siapkan happycall alasin dgn almunium foil, letakkan enoki bacon roll di atasnya dan beri adonan butter di atasnya, kemudian taburi lada hitam bubuk. Proses selama 10 menit dgn api sedang. Prepare happycall and cover with almunium foil, place enoki bacon roll on top and give butter on top, then sprinkle black pepper powder. Process for 5 minutes with medium heat.

4. Pindahkan enoki bacon roll diatas piring saji dan siramkan saus yg tersisa diatasnya. Move enoki bacon roll on dish and pour the remaining sauce on top of it.

Burung Dara Goreng Geprek – Crushed Fried Quail

BURUNG DARA GORENG GEPREK – CRUSHED FRIED QUAIL

Bahan/ingredients:
4 ekor burung darah, cuci dan belah bagian dadanya. 4 pcs quail , wash and slice breast.
Minyak utk menggoreng. Oil for deep fry.
Tepung maizena secukupnya. Some cornstarch.

Bumbu perendam/marinate:
Lada secukupnya. Some pepper.
Garam secukupnya. Some salt.
Bawang putih bubuk secukupnya. Some garlic powder. (JAY’S brand)
Jahe bubuk secukupnya. Some ginger powder. (JAY’S brand)
Ketumbar bubuk secukupnya. Some coriander powder.
Jintan secukupnya. Some cumin.

Sambal:
4 buah bawang merah. 4 pcs shallot.
1 siung bawang putih. 1 clove garlic.
10 buah cabe rawit merah. 10 pc red chili padi.
Garam dan gula merah secukupnya. Some salt and brown sugar.
Air jeruk nipis secukupnya. Some lime juice.
1 sdm minyak panas. 1 tbsp hot oil.

Cara/ingredients:
1. Bumbui burung dara dgn bumbu perendam dan pijat perlahan, diamkan semalam dlm lemari es. Marinate and gently massage the quail, refrigerate overnight.

2. Panaskan minyak. Lumuri tipis tepung maizena pada burung dara sebelum dimasukkan ke dlm minyak panas, balik hingga ke dua sisi burung dara keemasan, tiris-kan. Heat the oil. Gently sprinkle the pigeon with cornstarch before frying in the hot oil, fry two sides of the quail until golden and strain.
3. Haluskan bahan sambal, siram minyak panas dan kucuri air jeruk nipis, aduk. Hround sambal ingredients, pour with jot oil and sprinkle wirh lime juice, stir.
4. Letakkan burung dara goreng diatas sambal dan digeprek. Siap disajikan dgn pelengkap sesuai selera. Place fried quail over the sambal and crush. Ready to serve with your choice condiment.

Note:
1. Fungsi di lumuri tepung maizena sebelum digoreng adalah saat di goreng tidak smp minyak meletup. Covering with cornstarch before frying will prevent the oil from bubbling.
2. Fungsi digoreng 2 kali adalah untuk mendapatkan burung dara yg garing tapi juicy di dalam. Double frying will make the quail crispy outside but juicy inside.

Jeruk nipis. Lime.

Cara/ingredients:
1. Bumbui burung dara dgn bumbu perendam dan pijat perlahan, diamkan semalam dlm lemari es. Marinate and gently massage the quail, refrigerate overnight.

2. Panaskan minyak. Lumuri tipis tepung maizena pada burung dara sebelum dimasukkan ke dlm minyak panas, balik hingga ke dua sisi burung dara keemasan, tiris-kan. Heat the oil. Gently sprinkle the pigeon with cornstarch before frying in the hot oil, fry two sides of the quail until golden and strain.
3. Potong burung dara goreng menjadi 4 bagian. Masukkan dan goreng lagi, tiriskan. Cut the fried quail into 4 parts. Enter and fry again, strain.
4. Sajikan bersama pelengkap. Pada umumnya jeruk nipis di kucurkan diatas burung dara dan di cocolkan ke campuran lada, garam dan ngohiong. Serve with condiments. Mostly sprinkle lime juice over fried quail and eat with mixed pepper, salat and five spices.

Note:

SEI SAMBAL MATAH SMOKED PORK-SEI SAMBAL MATAH

Bahan/ingredients:
300 gr sei, iris serong. 300 gr smoked pork Sei, oblique.
10 buah bawang merah, iris. 10 pcs shallot, slice.
1 btg sereh, iris halus bagian putihnya. 1 stalk of white part lemongrass.
5 buah cabe rawit, iris.(sesuai selera). 5 pcs red chili, slice (as your desire)
2 buah air jeruk limau. 2 pcs lime juice.
2 sdm minyak kelapa. 2 tbsp coconut oil.

Cara/method:
1. Panaskan minyak kelapa, masukan bawang merah, sereh dan cabe tumis 30 detik, tambahkan garam secukupnya. Matikan api. Heat coconut oil, add shallot, lemongrass and chili saute for 30 second. Add some salt. Turn off the stove.
2. Masukkan air jeruk limau, stir.. Add lime juice, stir.
3. Masukkan sei, aduk dan siap disajikan. Add smoked pork-sei, stir and ready to serve.

Tumis Udang Buncis – Sauteed Shrimp Long Beans

TUMIS BUNCIS UDANG – SAUTEED SHRIMP LONG BEANS

Bahan/ingredients:
300 gr buncis, potong 2 cm. 300 gr long beans, cut 2 cm.
20 ekor udang tanpa kulit. 20 pcs skinless shrimp.
3 buah bawang merah, iris. 3 pcs shallot, slice.
2 siung bwg putih, iris. 2 clove garlic, slice.
1 buah cabe merah besar, iris korek api. 1 pcs red chili, Julien.
1 btg daun bawang iris sering. 1 stalks spring onion, oblique.
Garam dan lada secukupnya. Some salt and pepper.
1 sdt kecap ikan. 1 tsp fish sauce.
1 sdm minyak sayur. 1 tbsp veggie oil.
20 ml air panas. 20 ml hor water.

Cara/method:
1. Rebus buncis dgn air garam selama 1 menit, tiriskan. Boiling long beans with salted water for 1 minutes, strain.
2. Rebus udang 30 detik, tiriskan. Boiling shrimp for 30 second, strain.
3. Panaskan minyak, tumis bawang hingga harum. Masukkan semua bahan dan masak selama 1 menit. Heat oil, saute the onion until fragrant. Add all ingredients and saute for 1 minutes.
4. Siap disajikan diatas piribg saji. Ready to serve kn dish.

Dadar Sumsum Sapi – Beef Marrow Cake


DADAR SUMSUM SAPI – BEEF MARROW CAKE

Bahan/ingredients:
200 gr sumsum sapi, potong 1 cm. 200 gr beef marrow, cut 1 cm.
30 gr tepung rendah protein. (Bisa diganti dgn 30 gr tepung almon dan 10 gr tepung tapioka)30 gr low protein flour. (kunci biru). (Can be change with 30 gr almond powder and 10 gr tapioca)
3 sdm putih telur ayam. 3 tbsp white egg.
4 btg bwg daun kecil, iris. 1 stalks scallion, slice.
1 buah cabe merah, iris kecil. 1 pcs red chili, small cut.
½ sdt jahe parut. ½ tsp grated ginger.
1 siung bwg putih parut. 1 cloves grated garlic.
½ sdt garam. ½ tsp salt.
2 sdm minyak sayur utk menggoreng. 2 tbsp veggie oil for fried.

Cara/method:
1. Campur semua bahan. Mix all ingredients.
2. Panaskan minyak heat oil.
3. Masukkan 1 sendok sayur adonan diatas minyak panas dan lakukan hingga adonan habis digoreng. Add 1 vegetablespoon batter over hot oil and do until the dough is fried out.
4. Balikkan dadar sumsum hingga kedua permukaan kecoklatan. Angkat. Turn the marrow cake until both surfaces are browned. Lift.

5. Siap disajikan. Ready to seve.

FRIED CHICKEN DRUM STICK

Bahan/ingredients:
8 potong sayap ayam bagian atas. 8 pcs top chicken wings.

Bumbu perendam/Marinate:
2 sdt bawang putih bubuk. 2 tsp powdered garlic.
½ sdt jahe bubuk. ½ tsp powdered ginger.
½ sdt garam. ½ tsp salt.
¼ sdt lada bubuk. ¼ tap powdered pepper.
1 sdt paprika bubuk. 1 tsp cayenne.
Minyak utk menggoreng. Oil for deep fry
Bahan pencelup/dipping batter:
3 sdm tepung beras. 3 tbsp rice flour.
1 sdm tepung sagu. 1 tbsp cornstarch.
Garam dan lada secukupnya. Some salt and pepper.
Air es secukupnya. Some cold water.

Cara/method:
1. Membuat sayap ayam panggang/how to make roasted chicken:
** Tarik daging sayap smp dibag bawah. Pull the chicken wings up to the bottom of the wing.
** Campur semua bahan bumbu dgn sayap ayam. Mix all ingredients with chicken wings.
** Diamkan di lemari es selama 5 jam. Refrigerate for 5 hours.
2. Panaskan minyak. Heat oil.
3. Campur bahan pencelup. Mix dipping ingredients.
4. Celup ayam pada adonan pencelup dan masukkan ke minyak panas. Dipping chicken on dipping batter and add into hot oil.
5. Goreng hingga keemasan dan tiriskan. Frying until golden and strain.
