Tumis Ayam Paprika – Sauteed Chicken Bell Pepper


TUMIS AYAM PAPRIKA – SAUTEED CHICKEN BELL PEPPER

Bahan/ingredients:
300 gr daging ayam tanpa tulang, iris. 300 gr boneless chicken. Slice.
100 gr paprika merah, potong kotak. 100 gr red bell pepper, cut cube.
100 gr paprika kuning, potong korak. 100 gr yellow bell pepper, cut cube.
1 buah bawang bombay ukuran kecil, potong kotak. 1 pcs onion small size, cut cube.
½ kaleng jamur kancing, iris. ½ can champignon mushroom, slice.
1 buah brokoli kecil, rebus dan tiriskan. 1 pcs broccoli, boil and drain.
3 siung bawang putih, cincang. 3 cloves of garlic, chop.
80 ml air panas. 80 ml hot water.
1 sdm minyak sayur. 1 tbsp veggie oil.
1 sdm tepung tapioka + 20 ml air utk pengental. 1 tbsp tapioca flour + 20 ml water for thickener.

Bumbu/seasoning:
½ sdm arak Shao Shing. ½ tbsp wine Shao Shing.
1 sdm saus tiram. 1 tbsp oyster sauce.
2 sdt kecap jamur. 2 tsp mushroom sauce.
2 sdt minyak wijen. 2 tsp sesame oil.

Cara/method:
1. Panaskan minyak, masukkan bawang putih dan bawang bombay, tumis hingga harum, tumis. Heat oil, add garlic and onion saute until fragrant.
2. Masukkan ayam, aduk hingga 50 % berubah warna, siram dgn arak dan aduk hingga ayam berubah warna sempurna. Add chicken, stir until 50% changing the color, pour the wine over the chicken, and stir until perfectly changing the color.
3. Masukkan semua bahan dan bumbu, aduk rata biarkan mendidih dan masukkan larutan mengental sambil di aduk hingga rata. Add all ingredients and seasoning, stir well, lets boiling and add the thickener mixture while stirring.
4. Siap disajikan dgn nasi panas. Ready to serve hot with rice.

Ayam Goreng Ala Thai – Fried Chicken Ala thai


AYAM GORENG ALA THAI – FRIED CHICKEN ALA THAI

Bahan/ingredients:
3 potong paha ayam tanpa tulang, potong. 3 pcs boneless chicken thigh, cut.
1 butir telur. 1 pcs of egg.
60 gr paprika merah, potong. 60 gr red bell pepper, cut.
40 gr bawang bombay, potong. 40 gr onion, cut.
100 gr nanas, potong. 100 gr pineapple, cut
220 ml Sambal Bangkok. 220 ml Bangkok Chili Sauce

Bumbu perendam/marinate:
1 sdm mirin. 1 tbsp mirin.
1 sdt garam. 1 tsp salt.
½ sdt lada bubuk. ½ tsp pepper powder.

Bahan pelapis ayam/chicken coating ingredients:
½ sdt garam. ½ tsp salt.
¼ sdt lada bubuk. ¼ tsp pepper powder.
30 gr tepung beras. 30 gr rice flour. (Rose brand)
100 gr tepung tapioka. 100 gr tapioca flour. (Cap Gajah Laut/I LU FAT)

Cara/method:
1. Campur daging ayam dgn bumbu perendam dan telur dan diamkan 15 menit. Combine chicken with seasoning and egg, let stand for 15 minutes.
2. Panaskan minyak utk menggoreng. Heat oil for frying.
3. Campur bahan pelapis ayam dalam kotak. Combine chicken coating ingredients on box.
4. Masukkan ayam dalam kotak dan kocok agar tepung melapisi ayam dgn sempurna. Add the chicken in the box and shake the flour to coat the chicken perfectly.
5. Masukkan ayam 1 per 1 dalam minyak panas dan goreng hingga keemasan, tiriskan. Enter the chicken 1 by 1 in hot oil and fry until golden, drain.
6. Panaskan panci saus masukkan sambal bangkok hingga mendidih, masukkan bawang bombay, paprika dan nanas, aduk rata. Heat the sauce pan to enter the bangkok sauce to boil, put onions, peppers and pineapples, mix well.
7. Letakkan ayam di piring saji dan tuang saus diatasnya. Dan siap dihidangkan. Place the chicken on a serving plate and pour the sauce on it. And ready to serve.

TUMIS AYAM BASIL ALA THAI DGN MEDE – THAI CHICKEN BASIL WITH CASHEW

Bahan/ingredients:
500 gr paha tanpa tulang, potong dadu (bisa diganti dada ayam tanpa tulang. . 500 gr boneless chicken thigh, cut cube. (Can be change with boneless chicken breast)
8 siung bawang putih kupas. 8 cloves of peeled garlic
3 buah cabe merah kriting/Cabe Thai. (Boleh tambah cabe rawit bila suka pedas) 3 pcs curly red chili/Thai Chili. (Ut some red cayenne if you like spicy)
40 gr kacang mede sangrai (kugunakan air fryer 120C selama 15 menit). 40 gr roasted cashew (I used air fryer 120C for 15 minutes)
2 sdm minyak utk menggoreng. 2 tbsp oil for frying. (Olive oil)
15 gr daun basil. 15 gr of basil leaves.

Bumbu/Seasoning:
1 sdm saus tiram. 1 tbsp of oyster sauce.
½ sdm kecap asin light. ½ tbsp of light soy sauce
1 sdm kecap manis. 1 tbsp of dark sweet soy sauce. (Tropicana)
1 sdt kecap cap jamur. 1 tsp mushroom soy sauce.
1 sdt minyak wijen. 1 tsp sesame oil.
1 sdt madu. 1 tsp honey. (Tropicana)

Cara/method:
1. Tumbuk kasar cabe dan bawang putih, sisihkan. Roughly ground chili and garlic using mortar and pestle, set aside.
2. Cuci dan tiriskan daun basil. Wash and strain basil leaves.
3. Campur bumbu, sisihkan. Combine seasoning. Set aside.
4. Panaskan minyak, masukkan bawang putih dan cabe, tumis hingga harum. (20 second) Heat oil, add garlic and chili, saute until fragrant. (20 detik)

5. Masukkan ayam tumis hingga berubah warna (5 menit), masukkan bumbu dan aduk rata.(5 menit) masukkan daun basil, aduk rata (1 menit) dan matikan api. Add chicken, saute until changing color (5 minutes), add seasoning and stir well (5 minutes), add basil leaves, stir well (1 minute) and switch off the stove.
6. Sajikan panas dgn nasi, telur mata sapi dan taburi kacang mede. Serving hot with rice, sunny side up and sprinkle with cashew.

BAKWAN JAGUNG MANADO – MANADONESE CORN PANCAKE

Bahan/ingredient:
400 gr jagung manis pipilan. 400 gr sweet corn shelled
25 gr terigu. 25 gr flour
75 gr tepung beras. 75 gr rice flour.
2 btr telur. 2 eggs.
2 btg bawang daun, iris. 2 stalks spring onion, slice.
6 daun jeruk, iris halus. 6 pcs lime leaves, finely slices.
30 ml air dingin. 30 ml cold water

Bumbu halus/ground seasoning:
6 buah bawang merah. 6 pcs shallot.
4 siung bawang putih. 4 cloves garlic.
4 buah kemiri. 4 pcs candlenut
½ sdt ketumbar.½ tsp coriander powder
¾ sdt garam. ¾ tsp salt

Cara/Method:
1. Haluskan bumbu. Ground seasoning.
2. Campur semua bahan dan bumbu halus, aduk hingga rata. Combine all ingredients and ground seasoning.
3. Panaskan minyak banyak, ambil adonan per sendok makan, goreng hingga kecoklatan, angkat dan tiriskan. Heat the oil a lot , take a tablespoon batter , fried until golden brown, remove and drain.

Babi Giling Goreng – Fried Minced Pork

BABI GILING GORENG – FRIED MINCED PORK

Bahan/ingredients:
250 gr daging babi giling. 250 gr minced pork.
60 gr bawang bombay, cincang. 60 gr onion, chop.
4 siung bawang putih, cincang. 4 cloves garlic, chop.
4 batang daun bawang, iris halus. 4 stalks scallion, finely slice.
1 butir kuning telur. 1 pcs egg yolk.
2 sdm tapioka. 2 tbsp tapioca flour.
Minyak secukupnya untuk menggoreng. Some oil for frying.

Bumbu/seasoning:
2 sdt kecap asin. 2 tsp soy sauce.
1 sdt kecap raja rasa. 1 tsp raja rasa soy sauce.
Lada secukupnya. Some pepper.
1 sdt minyak wijen. 1 tsp sesame oil.
1 sdt arak beras. 1 tsp rice wine.

Pencelup/dipping:
1 butir putih telur. 1 pcs white egg.
Tepung roti secukupnya. Some bread crumbs.

Pelengkap/condiment:
Takoyaki sauce or buldog sauce

Cara/method:
1. Campur semua bahan dan bumbu dan aduk rata. Combine all ingredients and seasoning.
2. Bentuk bulat pipih adonan dan celupkan ke putih telur, kemudian celupkan pada tepung roti, lakukan hingga seluruh adonan habis terbentuk. Flat round shape of dough and dip it into egg white, then dip it on the bread flour, do it until all the dough is formed.
3. Simpan di frezer selama 30 menit. Keep in freezer for 30 minutes.
4. Panaskan minyak dan goreng adonan dgn api sedang hingga kecoklatan, angkat dan tiriskan. Heat oil and frying with medium heat the dough until browny, lift up and strain.
5. Sajikan hangat dgn pelengkap. Serving warm with condiment.

Note:
Daging babi bisa diganti daging sapi or ayam. Pork can be changing to beef or chicken.

Bahan/ingredients:
½ ekor bebek panggang. ½ pcs toasted duck. (By Kit Wan Kie-Surabaya)

Bahan sambal/sambal ingredients:
6 buah bawang merah, iris. 6 pcs shallot, slice.
5 buah cabe rawit merah, iris. 5 pcs red cayenne, slice.
2 btg sereh, ambil tengahnya dan iris halus. 2 pcs lemongrass. Take the white part and finely slice.
Garam laut secukupnya. Some sea salt.
2 buah jeruk limau, tanpa biji. 2 pcs serdless nasnaran mandarin(citrus amblycarpa)
30 ml minyak kelapa asli. 30 ml pure coconut oil.
100 gr bunga kecombrang, iris halus. 100 gr torch ginger, finely slice.

TUMIS BABI & SAYUR – BUTA YASAI ITAME – SAUTEED PORK & VEGGIE

Bahan/ingredients:
200 gr samcam iris tipis. 200 gr finely slice pork belly.
200 gr sawi putih, potong 2cm. 200 gr chinese cabbage, cut 2cm.
3 butir bakso ikan ukuran besar, iris. 3 pcs fish ball big size, slice.
3 siung bawang putih, cincang. 3 cloves garlic, chop.
½ buah cabe merah buang biji, iris serong. ½ pcs seedless red chili, oblique.
30 ml air panas. 30 ml hot water.

Bumbu/seasoning:
½ sdm kecap asin. ½ tbsp soy sauce. (Kikkoman)
2 sdt mirin. 2 tsp mirin.
Lada secukupnya. Some pepper.
1 sdt minyak wijen. 1 tsp sesame oil.

Cara/method:
1. Panaskan wajan teflon. Letakkan sancam dan tumis hingga berubah warna dan berkaramel. Heat teflon wok. Add pork belly and saute until changing color and caramelized.
2. Masukkan bawang putih cincang, aduk hingga bawang putih harum. Add chopped garlic, stir until garlic fragrant.
3. Masukkan sawi putih, bakso ikan, air panas dan bumbu, aduk dan tutup wajan sebentar. add chinese cabbage, fish ball, hot water and seasoning, stir and cover the wok a while.
4. Masukkan cabe merah, aduk. Add red chili, stir.
5. Sajikan panas diatas piring saji. Serve hot on dish.

Note:
Daging babi bisa diganti dgn daging sapi atau ayam. Pork can be change with beef or chicken.
