Bakso Ayam & Bakso Ayam Jamur- Chicken Ball & Chicken Mushroom Ball

BAKSO AYAM &BAKSO AYAM JAMUR – CHICKEN BALL &CHICKEN MUSHROOM BALL

Bahan/ingredients:
500 gr daging ayam giling 50% beku. 500 gr ground chicken 50% frozzen.
125 gr tepung bakso. 125 gr meatball flour. (Nilasari).

90 ml air es.90 ml cold water.
30 ml putih telur dingin. 30 ml cold white egg.
5 gr jamur hitam kering, rendam air panas dan cincang halus. 5 gr dried black mushroom, soak on hot water and finely chop.

Bahan untuk sup/soup ingredients:
1800 ml air sisa rebusan baso. 1800 ml remaining meatball boiling water.
700 ml air. 700 ml water.
1 buah tulang sumsum. 1 pcs bone marrow.
4 siung bawang putih, keprak. 4 cloves of garlic, crush.
2½ sdt garam. 2½ tsp salt.
½ sdt lada bubuk. ½ sdt pepper powder.

Pelengkap/condiments:
Bawang daun secukupnya. Some scallion.
Bawang merah goreng secukupnya. Some fried shallot.
Sambal cabe rawit merah dan bawang putih kukus. Sambal steam cayenne and garlic.
Kecap manis sesuai selera. Sweet dark soy sauce as your desire.
Jeruk nipis sesuai selera. Lime as your desire
Mie rebus/bihun rebus/soun rebus. Boiled noodle/vermicelli/glass noodle

Cara/method:
1. Campur semua bahan dan proses dengan food prosesor. Kecuali jamur. Mix all the ingredients and process with food processor except mushrooms.

2. Ambil setengah bagian dari adonan baso dan campur dgn jamur cincang. Take half of the mixture and mix with chopped mushroom.

3. Simpan di frezer selama 30 menit dgn kondisi wadah tertutup. Freeze in an enclosed box for 30 minutes.

4. Siapkan air hangat, masukkan bakso yg sudah di bentuk bulat. Setelah panci penuh dengan bakso, nyalakan kompor dengan api kecil dan biarkan air mendidih (tidak sampai bergolak) dan bakso mengapung. Angkat baso dan tiriskan.
Prepare warm water and put in the shaped meatball. After the pot is full with the meatballs, turn on the stove on low heat and simmer until the meatballs float. Remove meatballs and drain.

5. Rendam baso dalam air es hingga baso dingin dan tiriskan. Submerge in cold water until meatballs are cold and drain again
6. Tes kematangan baso dgn cara membelah salah 1 baso bila spt foto berarti sdh matang sempurna. Take a meatball and slice in half to test if it is perfectly cooked (look at picture).

7. Saring air rebusan dan tambahkan bawang putih geprek, lada dan garam sebagai kuah bakso. Strain the cooking water of meatballs and add garlic geprek, pepper and salt as gravy meatball.

Note:
1. Dgn menggunakan tepung bakso dan cara diatas dijamin bakso kenyal dan anti gagal. By using the meatballs flour and the above method is guaranteed chewy meatballs and anti-fail
2. Resep ini menghasilkan 40 butir bakso ayam. This recipe is enough 40 pcs of chicken ball.
3. Daging ayam bisa diganti dgn daging babi or daging sapi. Chicken can be changing with pork or beef.

KARI KAMBING SURABAYA – SURABAYA
LAMB CURRY

Bahan/ingredients:
200 gr paru kambing. 200 gr lung goat
200 gr usus. 200 gr goat intestines
200 gr tulang kambing. 200 gr ribs of goats.
200 gr babat. 200gr tripe goat
2 batang sereh, kepeak. 2 stalks of lemongrass, crush.
8 lbr daun jeruk. 8 pcs lime leaves.
2 cm lengkuas. 2 cm galangal.
Garam secukupnya. Some salt.
3000 ml air panas. 3000 ml hot water.
300 ml santan kental instant. 300 ml heavy coconut milk (KARA)
75 ml minyak sayur utk menumis. 75 ml veggie oil for saute.

Rempah utuh/whole herbs:
10 btr kapulaga. 10 pcs cardamom.
3 cm kayu manis. 3 cm cinnamon.
20 lbr daun kare. 20 lbr curry leaves.
½ sdt klabat. ½ tsp fenugreek.
6 buah adas. 6 pcs fennel.

Bumbu halus/ground spices:
20 buah bawang merah. 20 pcs of shallot.
15 siung bawang putih. 15 cloves of garlic.
1 sdm cabe merah halus. 1 tbsp ground chili.
8 butir kemiri. 8 pcs candlenut.
1 sdt ketumbar. 1 tbsp coriander.
½ sdt jinten. ½ tsp caraway.
¼ buah pala. ¼ pcs nutmeg.
¼ sdt lada bubuk. ¼ tsp pepper powder.
½ sdm gula merah. ½ tbsp brown sugar.
1 cm kencur. 1 cm fragrant ginger.
2 cm jahe. 2 cm ginger.
3 cm kunyit bakar. 3 cm grilled turmeric.

Pelengkap/condiment:
Nasi. Rice.
Sambal. Sambal
Jeruk nipis. Lime.
Bawang merah goreng. Fried shallot.
Daun bawang. Scallion/spring onion.

Cara/methods:
1. Cuci dan rebus selama 5 menit bahan kambing, buang air rebusannya. Wash and boil for 5 minutes goat ingredients, remove the boiled water.
2. Masukkan rempah utuh kedalam kantung rempah. Insert whole herbs into herbal bag:
3. Tumis bumbu halus hingga matang benar. Saute ground spices until well cook.
4. Didihkan air. Masukkan kantung rempah, bumbu halus, sereh, daun jeruk, lengkuas dan kambing ke dalam panci slow cooker dan siramkan air mendidih ke slow cooker. Dan setting high slow cooker. Boiling water. Add herbal bag, ground spices, lemongrass, lime leaves, galangal and goat into slow cooker bowl and pour boiling water into slow cooker.
5. Bila sudah mendidih setting low pada slow cooker, masukkan garam dan santan kental, aduk rata. Dan biarkan kambing empuk. When boiling, low setting on slow cooker, add salt and thick coconut milk, stir well. And let the lamb tender.
6. Sajikan panas bersama pelengkap. Serving hot with condiments.

SOP KAMBING KHAS BETAWI – BETAWI LAMB SOUP

Bahan/ingredients:
200 gr paru kambing. 200 gr lung goat
200 gr usus. 200 gr goat intestines
200 gr tulang kambing. 200 gr ribs of goats.
200 gr babat. 200gr tripe goat
1000 ml susu segar tawar. 1000 ml plain fresh milk.
2000 ml air panas. 2000 ml hot water.
8 gr gula batu. 8 gr rock sugar.

Bumbu halus/ ground seasoning:
10 siung bawang putih. 10 cloves garlic.
15 butir bawang merah. 15 pcs shallot.
¼ sdt jintan. ¼ tsp caraway.
½ sdt merica bubuk. ½ tsp pepper powder.
½ buah pala. ½ pcs nutmeg.
Garam secukupnya. Some salt.

Rempah/herbal:
5 cm kayu manis. 5 cm cinnamon.
3 cm jahe, 3 cm hinger.
5 butir kapulaga. 5 pcs cardamon.
6 buah adas. 6 buah fennel.
5 butir cengkeh. 5 pcs clove
*Masukkan dlm kantung rempah. *Insert into herbal bag.

Pelengkap/condiment:
Nasi. Rice
Jeruk nipis. Lime
Tomat segar, iris. fresh tomato, slice.
Emping goreng. Emping crackers.
Bawang goreng. Fried shallot.
Seledri, iris. Celery, slice.
Daun bawang, iris. Spring onion, slice.
Sambal.

Cara/method:
1. Didihkan air. Masukkan bahan kambing, didihkan 10 menit buat air. Boil water. Enter the goat material, boil 10 minutes for water.
2. Didihkan air di panci. Masukkan bahan kambing dan bumbu utuh kedalam slow cooker. Boil water in a saucepan. Put the goat and whole ingredients into the slow cooker.
3. Tumis bumbu halus hingga harum dan masukkan ke dalam slowcooker. Tuang air mendidih dan setting HIGH pada slowcooker.
Saute the ground spices until fragrant and insert them into the slow cooker. Pour boiling water and setting HIGH on slow cooker.
4. Masukkan gula batu. Dan biarkan hingga mendidih (2 jam), masukkan susu segar, aduk. Proses selama 30 menit, pindahkan setting low/warm pada slow cooker. Put the rock sugar. And leave to boil (2 hours), pour fresh milk, stir. Procces for 30 minutes, move to the low/warm setting on your slow cooker.
5. Siap disajikan panas dgn pelengkap. Ready to serve with condiment.

SUP IKAN DAN BASO SAPI – FISH AND MEATBALL SOUP

Bahan/ingredients:
1 pak jamur shimeji hitam, buang akarnya. 1 pack black shimeji mushroom.

1 buah wortel, iris. 1 pcs carrot, slice.
200 gr ikan dori, iris. 200 gr dory fish, slice.
20 btr baso sapi. 20 pcs meatball.
½ pak tahu, potong. ½ pack tofu, cut.
100 gr sawi asin, iris. 100 gr Salted Mustard.
1 btg bawang daun, iris serong. 1 stalks spring onion, oblique.
5 siung bawang putih, cincang. 5 cloves garlic, chop.
4 iris jahe. 4 slices ginger.
800 ml air panas. 800 gr hot water.
½ sdm minyak olive. ½ tbsp olive oil.
½ sdm minyak wijen. ½ tbsp sesame oil.

Bumbu/seasoning:
2 sdt kecap ikan. 2 tsp fish sauce.
½ sdm arak beras. ½ tbsp rice wine.
Garam dan Lada secukupnya. Some salt and pepper.

Pelengkap/condiment:
Daun ketumbar secukupnya. Some cilantro.
Saus kecap asin dan cabe. Soy sauce and cayenne.

Cara/method:
1. Panaskan minyak olive dan minyak wijen. Hea olive oil and sesame oil.
2. Tumis jahe dan bawang putih cincang hingga harum. Saute ginger and chopped garlic until fragrant.
3. Masukkan ikan dan tumis hingga berubah warna, masukkan arak beras dan aduk. Add fish and saute until changing color, add rice wine and stir.
4. Masukkan wortel, baso, sawi asin dan tahu. Add carrot, meatball, salted mustard and tofu.
5. Masukkan bumbu dan air panas, aduk dan biarkan mendidih. Add seasoning and hot water, stir and let it boil.
6. Matikan api. Masukkan bawang daun dan aduk. Switch off the stove. Add spring onion and stir.
7. Sajikan panas dgn pelengkap. Serve hot with condiment.

300 gr jamur merang, potong jadi 4. 300 gr straw mushroom, cut on 4.
8 lbr daun jeruk. 8 pcs lime leaves.
2 batang sereh, iris serong. 2 stalks lemongrass, oblique.
1 buah jeruk nipis. 1 pcs lime.
Cabe rawit secukupnya. Some cayenne.
Daun ketumbar secukupnya. Some cilantro.
1000 ml air. 1000 ml water.
3 sdm pasta tom yum. 3 tbsp tom yum paste.

Cara/method:
1. Didihkan air, masukkan sereh, cabe rawit dan daun jeruk. Boiling water, add lemongrass, cayenne and lime leaf.
2. Masukkan pasta tom yum. Add tom yum paste.
3. Masukkan jamur dan udang. Tambahkan air jeruk nipis. Add mushroom and shrimp. Add lime juice.
4. Sajikan panas dalam mangkuk dan beri daun ketumbar. Serve hot on bowl and put cilantro on top.

Twaeji Gogi Kimchi Jjigae – Pork in Spicy Kimchi Soup


TWAEJI GOGI KIMCHI JJIGAE – PORK IN SPICY KIMCHI SOUP

Bahan/ingredients:
200 gr daging babi, potong dadu. 200 gr pork, cut cube.
200 gr kimchi. 200gr kimchi.
1 batang daun bawang, iris serong. 1 stalk spring onion, oblique.
1 buah bawang bombay, potong. 1 pcs onion, cut.
1 buah tahu putih, potong. 1 pcs tofu, cut.
1 buah cabai merah, iris serong. 1 pcs red chili, oblique.
1 bgks jamur enoki. 1 pcs enoki mushroom.
750 ml air panas. 750 ml hot water.
1 sdm minyak wijen. 1 tbsp sesame oil.

Bumbu/seasoning:
1 sdm gochujang (pasta cabe korea). 1 tbsp gochujang (korean chili paste).
1 sdm arak beras khas korea. 1 tbsp korean rice wine.
2 sdt gochugaru (cabe bubuk). 2 tsp gochugaru (chili powder)
1 sdt kecap asin. 1 tsp soy sauce.

Cara/method:
1. Panaskan minyak wijen. Masukkan daging babi dan tumis hingga berubah warna. Heat sesame oil. Add pork and saute until changing color.
2. Masukkan bawang bombay dan daun bawang aduk sebentar. Masukkan kimchi dan campuran bumbu. Add onion and spring onion, stir awhile. Add kimchi and combined seasoning.
3. Tuang air panas dan aduk rata. Pour hot water and stir well.
4. Masukkan tahu, jamur enoki dan cabe merah, tekan perlahan dgn sendok. Biarkan mendidih dan matikan api. Add tofu, enoki mushroom and red chili. Gently press with spoon. Lets boiling and switch off the stove.

Note:
Daging babi dpt diganti dgn daging sapi, daging sapi irisan ala sukiyaki. Pork can be changing with beef, slice ala sukiyaki.

Soto Ayam Ambengan


SOTO AYAM AMBENGAN

Bahan/ingredients:
1 ekor ayam kampung ukuran besar, potong 4 bagian. 1 chicken big size, cut on 4
2 btg daun bawang, slice. 2 stalk green onion, slice.
2 btg sereh. 2 stalks lemongrass.
10 lbr daun jeruk. 10 pcs lime leaves
3000 ml air. 3000 ml water
3 sdm minyak utk menumis bumbu. 3 tbsp oil for saute herbs

Pelengkap/complimentary:
Sambal. (cabe rawit merah rebus dihaluskan dgn garam secukupnya). Sambal (boiled red cayenne ground with some salt).
Jeruk nipis. Lime
5 telor rebus, iris belah 2. 5 boiling eggs, cut into 2.
Kecap manis (pilihan). Dark soy sauce (optional)
1 buah kentang rebus, iris. 1 pcs boiled potato, slice.
Daun seledri, iris. Celery leaves, slice.
Daun bawang kecil, iris. Scallion, slice.
1 bgks soun, rendam air dan tiriskan 1 pack glass noodle, soak on water and strain.
100 gr toge, seduh air panas dan tiriskan. 100 gr beansprout, pour with hot water, strain.
Koya Kelapa(250 gr kelapa parut, sangrai dan 50 gr bawang putih goreng, dihaluskan). Koya Coconut (250 gr roasted grated coconut and 50 gr fried garlic, ground).
Krupuk pilihan. Your choice crackers.

Bumbu halus/ground spices:
12 bwg merah. 12 shallot
10 bwg putih. 10 cloves garlic
4 cm lengkuas. 4 cm galangal
2 cm jahe. 2 cm ginger
2 cm kencur. 2 cm fragrant ginger
4 cm kunyit. 4 cm turmeric
250 gr udang kecil, goreng kering. 250 gr shrimp small size, fried crispy.
1 sdm ketumbar bubuk. 1 tbsp coriander powder.
½ sdt jintan. ½ tsp cumin.
5 kemiri. 5 candlenut.
Garam secukupnya. Some salt .
1 sdt lada bubuk. 1 tsp pepper.

Cara/methods:
1. Didihkan air, masukkan ayam, daun jeruk dan sereh. Boil water, add chicken, lime leaves and lemongrass
2. Goreng bawang merah, bawang putih, jahe, lengkuas, kencur dan kunyit ½ matang. Haluskan bersama bahan bumbu yg lain, lalu tumis hingga harum dan matang, masukkan ke dlm kuah ayam.
Fried shallot, garlic, ginger, galangal, fragrant ginger and turmeric medium well. Ground with other ingredients of ground spices. Stir Fry until fragrant and well cook, add into chicken soup.
3. Masak hingga ayam empuk, angkat dan iris tipis. Masukkan bawang daun ke dlm sup. Cook until chicken tender. Lift up and thinly slice, add green onion into the soup.
4. Sajikan bersama pelengkap. Serve with complimentary.

Note:
Perbedaan Soto Ayam Lamongan dan Soto Ayam Ambengan adalah pada KOYA. Soto Ayam Ambengan menggunakan campuran kelapa sangrai dan bawang putih goreng, disebut Koya Kelapa. Soto Ayam Lamongan menggunakan campuran kerupuk udang dan bawang putih goreng, disebut Koya krupuk. The difference is Soto Ayam Lamongan and Soto Ayam Ambengan is at the KOYA. Soto Ayam Ambengan uses a mixture of roasted coconut and fried garlic, called Koya Kelapa. Soto Ayam Lamongan uses a mixture of prawn crackers and fried garlic, called Koya krupuk.
