Sosis Babi Oriental – Oriental Pork Sausage

SOSIS BABI ORIENTAL – ORIENTAL PORK SAUSAGE

Bahan/ingredients:
Usus babi kering secukupnya (sekitar 1,5 mtr. Some dry pork intestines (around 1,5 mtr)
1000 gr daging babi berlemak. 1000 gr pork with lard (kapsim/satean)
350 gr lemak babi. 350 gr lard
2 sdm minyak sayur. 2 tbsp veggie oil.
10 siung bawang putih, cincang halus. 10 cloves garlic, finely slice.
2 sdm kecap manis. 2 tbsp dark sweet soy sauce.
2 sdm kecap raja rasa. 2 tbsp raja rasa soy sauce.
2 sdm kecap asin. 2 tbsp soy sauce.
1 sdm saus tiram. 1 tbsp oyster sauce.
2 sdt garam. 2 tsp salt..
1 sdt lada bubuk. 1 tsp pepper powder.
1 sdm minyak wijen. 1 tbsp sesame oil.
1 sdt ngohiong bubuk. 1 tsp five spice powder.
1 buah pala, parut halus. 1 pcs nutmeg, finely grated.

Bahan utk merebus:
2 sdm minyak sayur. 2 tbsp veggie oil.
6 siung bawang putih, keprak. 6 cloves garlic, crush.
2000 ml air panas. 2000 ml hot water
5 sdm kecap manis. 5 tbsp dark sweet soy sauce.
2 sdm kecap cap jamur. 2 tbsp mushroom soy sauce.
1 sdm garam. 1 tbsp salt
1 sdt lada bubuk. 1 tsp pepper powder.
1 buah pala, keprak. 1 pcs nutmeg, crush.
6 buah pekak/bunga lawang. 6 pcs star anise.

Cara/method:
Membuat Sosis. How to make sausage:
1. Cincang daging babi dan lemak, sisihkan. Rendam usus kering. Chopped pork and lard, set aside. Soak dry intestines.
2. Panaskan minyak dan tumis bawang putih hingga keemasan,tiriskan, masukkan ke dalam mangkuk berisi daging babi cincang, aduk rata. Heat veggie oil and saute garlic until golden, strain, add into a bowl with chopped pork, stir well.
3. Masukkan semua bumbu utk sosis dan 1 sdm minyak bekas menggoreng bawang putih dan aduk rata. Add all sausage seasoning, 1 tbsp of used oil frying garlic and stir well.
4. Ambil usus babi, ikat salah satu ujungnya dengan rafia. Siapkan corong yg berlubang besar. Masukkan adonan daging cincang. Dan ikat ujungnya per 15-20 cm. Lanjutkan isi hingga adonan daging habis. Saat mengisi jgn terlalu padat, tusuk2 dgn jarum, sisihkan. Take the pork intestine, tie one end with a raffia. Prepare a large hollow funnel. Enter the dough of minced meat. And tie the ends per 15-20 cm. Continue until the meat dough runs out. When filling the jgn too dense, pin it with a needle, set aside.

Membuat air utk merebus sosis. :
1. Panaskan minyak goreng dan tumis bawang putih, pala dan pekak hingga harum, masukkan air panas, masak hingga mendidih. Masukkan sosis, dan bahan bumbu. Kecilkan api dan rebus sekitar ±30 menit hingga sosis matang dan berwarna coklat, angkat. Heat cooking oil and saute garlic, nutmeg and pekak until fragrant, enter hot water, cook until boiling. Enter the sausage, and spice ingredients. Reduce the heat and boil about ± 30 minutes until the sausage is cooked and brown, remove.

2. Masukkan telur rebus dan tahu, rebus hingga berubah warna kecoklatan. Add boiled egg and tofu, boiling until browny.
3. Keluarkan sosis dan dinginkan, potong serong dan siap disajikan dgn siraman kuah dan sambal. Take out the sausage and chill, cut into slices and ready to serve with broth and sambal.

Tumis Labu Siam – Sauteed Squash

TUMIS LABU SIAM(MANISA) – SAUTEED SQUASH

Bahan/ingredients:
1 buah labu siam, iris korek api. 1 pcs squash, julienne.
20 ekor udang kupas, rebus 1 menit. 20 pcs skinless shrimp, boiling 1 minute.
5 buah tahu kecil, potong dan goreng ½ matang. 5 pcs small size, cut and half fried.
3 buah bawang merah, iris. 3 pcs shallot, slice.
2 siung bawang putih, iris. 2 cloves garlic, slice.
1 buah cabe merah tanpa biji, iris korek api. 1 pcs red chili seedless, julienne.
100 ml kaldu ayam. 100 ml chicken broth.
1 sdm minyak sayur. 1 tbsp veggie oil.
Garam dan lada secukupnya. Some salt and pepper.

Cara/method:
1. Tumis bawang merah dan bawang putih hingga harum, masukkan labu siam, tahu dan kaldu ayam, masak hingga labu layu. Saute shallot and garlic until fragrant, add squash, tofu and chicken broth, cook until squash withered.
2. Masukkan udang, cabe, garam dan lada. Masak 1 menit san siap dihidangkan. Add the shrimp, red chili, salt and pepper, cook for 1 minute and ready to serve.

STEAM SHRIMP TOFU

Bahan/ingredients:

1 tahu telur jepang potong kira2 2cm, lubangi sedikit  tengahnya. 1 pack japanese egg silken tfu, cut 2 cm and make a small hole.

Topping:
5 ekor Udang besar, concang dagingnya beri 2 sdt kanji. 5 pcs shrimp big size, chop the meat.
1/4 sdt garam. 1/4 tsp salt.
Lada secukupnya. Some pepper.
1/2 sdt minyak wijen. 1/2 tsp sesame oil,

Cara/methods:
1. Panaskan kukusan. Campur semua bahan udang dan letakkan diatas tahu. Preheat steamer. Mix all topping ingredients and place on tofu.

2. Ambil dan letakkan di atas tahu yg, steam diatas piring tahan panas beri sedikit kecap asin dan minyak wijen di piringnya, steam 15 menit. Take and place tofu on plate with hot resistant, add some soy sauce and sesame oil, steam for 15 minutes.
3. Saat kukusan dibuka ada sdkt kaldu. Sajikan panas dgn garnis  daun sledri/daun ketumbar, tobiko. When you open steamer have some stock on plate and serve hot, with garnish parsley/cilantro and Tobiko.

Pepes Tahu Tempe – Wrapped Banana Leaf Stuffed Tofu & Tempeh

PEPES TAHU TEMPE – WRAPPED BANANA LEAF STUFF TOFU TEMPEH

Bahan/ingredients:
1 buah tahu besar, potong kotak. 1 pcs tofu big size, cut cube.
150 gr tempe, potong kotak. 150 gr tempeh, cut cube.
50 gr daun kemangi. 50 gr local basil leaves.
50 gr kelapa parut. 50 gr grated coconut.
1 buah cabe merah iris serong. 1 pcs red chili, oblique.
8 buah blimbing wuluh, iris. 8 pcs sour star fruit, slice.
Cabe rawit secukupnya. Some chili padi.
Daun pisang secukupnya.
Tusuk gigi.

Bumbu halus/spice to grind:
6 buah bawang merah. 6 pcs shallot.
2 siung bawang putih. 2 pcs garlic.
4 btr kemiri. 4 pcs candle nut.
Garam dan gula secukupnya. Some salt and sugar.

Cara/methods:
1. Campur semua bahan. Mix all ingredients.
2. Ambil daun pising dan isi dgn 3 sdm bahan, beri cabe rawit dan cabe merah, semat dgn tusuk gigi. Take a banana leaf, stuff with 3 tbsp ingredients, put chili padi and red chili. Pin with toothpick.
3. Kukus selama 20 menit. Steam for 20 minutes.

YEN CHIAW – Fried Pork Cake

YEN CHIAW – FRIED PORK CAKE

Bahan/ingredients:
250 gr daging babi giling. 250 gr ground pork.
1 buah bwg bombay, potong kecil. 1 pcs onion, small cut.
40 gr tpg sagu. 40 gr cornstarch.
10 gr tepung beras. 10 gr rice flour.
1 btr telur. 1 pcs egg.

Bumbu/seasoning:
2 sdt saus tiram. 2 tsp oyster sauce
2 sdt kecap asin premium. 2 tsp premium soy sauce.
2 sdt kecap raja rasa. 2 tsp raja rasa soy sauce.
2 sdt jecap ikan. 2 tsp fish sauce.
2 sdt minyak wijen. 2 tsp sesame oil.
2 siung bwg putih parut. 2 cloves grated garlic.

Cara/method:
1. Panaskan minyak utk menggoreng. Heat oil for deepfry.
2. Campur semua bahan dna bumbu. Mix all ingredients and seasoning.
3. Bentuk dgn 2 sendok dan masukkan dlm minyak, goreng hingga kecoklatan tiriskan. Shape with 2 spoons and add on hot oil, friend until golden, strain.
4. Disajikan dgn saus sambal bawang putih atau sambal bangkok. Serve with Sambal Garlic or Bangkok Sauce.

Note:
Daging babi boleh diganti daging ayam. Pork can be change with chicken.

Ayam Saus Oriental-Chicken with Oriental Sauce

AYAM SAUS ORIENRAL – CHICKEN with ORIENTAL SAUCE

Bahan/ingredients:
400 gr daging ayam, potong dadu. 400 gr chicken boneless, chunk.
2 sdm tepung beras. 2 tbsp rice flour.
2 sdm tepung sagu. 2 tbsp cornstratch.
2 sdt kecap asin. 2 tsp soy sauce.
2 sdt kecap raja rasa. 2 tsp raja rasa soy sauce.
¼ sdt lada bubuk. ¼ tsp pepper powder.
½ sdt ngohiong. ½ tsp fivestar.

¼ buah paprika, potong kecil. ¼ pcs bell pepper, small cut.
Biji wijen sangrai secukupnya. Some roasted sesame seed.
Brokoli, rebus. Brocolli, boil.

Saus/sauce:
½ sdm saus tiram. ½ tbsp oyster sauce.
½ sdm kecap asin. ½ tbsp soy sauce.
2 sdt saus hoisin. 2 tsp hoisin sauce
2 sdm sauce bbq (merk apa aja). 2 tbsp bbq sauce. (anykind of brand).
1 sdt bwg putih bubuk. 1 tsp garlic powder.
½ sdm gula merah. ½ tbsp brown sugar.
½ sdt lada hitam bubuk. ½ tsp black pepper powder.
1 sdm xao xing. 1 tbsp wine xao xing.
20 ml air panas. 20 ml hot water

Cara/method:
1.. Campur daging ayam dgn bahan lain, diamkan 1 jam di kulkas. Mix chicken and other ingredients, refrigerate for 1 hour.
2. Panaskan minyak dan masukkan daging ayam, goreng hingga keemasan, tiriskan.heat oil and add chicken, fried until golden and strain.
3. Tumis saus dan paprika, masukkan ayam yg sdh digoreng, aduk rata. Matikan api. Sauté sauce and bell pepper, add sauce and bell pepper, add fried chicken, stir well. Turn of stove.
4. Letakkan diatas piring saji, letakkan broccoli dan taburi dgn biji wijen. Place on dish, add broccoli, and springkle with sesame sees
5 siap disajikan. Ready to serve.

2 sdm cranberry kering. 2 tbsp dried cranberry.
2 sdm kismis. 2 tbsp raisin.
Walnut secukupnya. Some walnut.
Biji wijen secukupnya. Some sesame seed

Saus salad/salad dressing:
½ sdm pasta miso. ½ tbsp miso paste.
1 sdm madu. 1 tbsp honey.
½ sdm minyak wijen. ½ tbsp sesame oil.
1½ sdm virgin olive oil.
1 sdm kecap manis. 1 tbsp dark sweet soy sauce.
2 sdm kecap asin. 2 tbsp soy sauce.
2 sdt OPTRIMAX vgmix,
2 sdt OPTRIMAX zyme,
1½ sdm air lemon (sesuaikan). 1½ tbsp lemon juice (to taste)
2 sdm air. 2 tbsp water.
Cabe rawit atau cabe kering bila suka. Some chilipadi or dried chili to taste.

Cara/method:
1. Campur bahan saus salad.
2. Campur bahan salad. Mix salad ingredients.
3. Campur bahan salad dan saus, taburi biji wijen. Mix salad and dressing, sprinkle with sesame seed

Note:
Bahan salad bisa disesuaikan dgn selera. Salad ingredients can be change to taste.
