AYAM CHARSIU REMPAH – HERBAL CHICKEN CHARSIU

Bahan/ingredients:
6 buah paha ayam buang tulang, 6 pcs boneless chicken thighs.

Bumbu/seasoning:
1 sdt kayu manis bubuk. 1 tsp cinnamon powder.
½ sdt ngohiong bubuk. ½ tsp five star.
¼ sdt lada bubuk. ½ tsp pepper powder.
2 sdm kecap asin (cap burung hong). 2 tbsp soy sauce. (peacock brand)
1 sdm kecap asin premium. 1 tbsp light premium soy sauce.
1 sdm kecap cap jamur. 1 tbsp mushroom soy sauce.
½ sdm saus tiram. ½ tbsp oyter sauce.
2 sdm gula merah. 2 tbsp brown sugar.
2 sdt bwng putih bubuk. 2 tsp garlic powder (Jay’s)

Cara/Method:
1. Campur rata bumbu dan lumurkan pada ayam. Diamkan minimal 4 jam dlm lemari es (inapkan semalam lbh enak). Mixed seasoning and marinate the chickens. Refrigerate minimum 4 hour (better keep overnight)
2. Proses memasak bisa dgn memanggang, oven atau airfryer. The cooking process can be grilling, oven or airfryer.
3. Sajikan dgn salad, nasi atau sesuai pilihan. Serve with salad, rice or your choice.

TONJIRU – JAPANESE VEGETABLE SOUP

Bahan/ingredients:
250 gr daging sancam, slice. 250 gr pork belly, iris.
200 gr lobak, kupas dan iris. 200 gr chinese radish, peel and slice.
2 buah wortel, kupas dan iris. 2 pcs carrot, peel and slice.
100 gr konyaku, potong. 100 gr japanese jelly, cut.
1 btg daun bawang, potong 1 cm. 1 stalk green onion, cut 1 cm.
750 ml air panas. 750 ml hot water.
100 gr akar burdock/gobo, iris san rendam air garam. 100 gr burdock root, slice and soak on salty water.

Cara/method:
1. Panaskan panci, masukkan daging babi, aduk hingga berubah warna dan masukkan semua bahan kecuali daun bawang, aduk rata. Heat pan, add pork belly, stir until changing color and add other ingredients except green onion, stir well.
2. Masukkan air panas, aduk rata. Add hot water, stir well.
3. Masukkan miso, kecap asin dan mirin. Masak dgn api kecil selama 10 menit. Add miso, soy sauce and mirin. Simmer for 10 minutes.
4. Masukkan jamur enoki dan daun bawang, aduk rata. Letakkan dlm mangkuk dan siap disajikan bersama nasi dan biasa ada yg dgn telur. Add enoki mushroom and green onion, stir well. Place on a bowl and ready to serve with rice and sometime with egg.

Note:
Daging babi sancam bisa di ganti dgn ayam atau daging sapi sukiyaki. (bagi yg MUSLIM) Pork belly can be change with chicken or beef sukiyaki (for Moslem)

Campur semua bahan dan sajikan dingin. Bila suka manis tambahkan sirup. Mix all ingredients and serve cold.

Soto Bandung – Bandung’s Beef Soup

SOTO BANDUNG – BANDUNG’S BEEF SOUP

Bahan/ingredients:
500 gr daging sapi has dalam.. 500gr tenderloin,
200 gr tulang iga/tulang sumsum. 200 gr beef ribs/bone marrow.
1 buah lobak putih, kupas, iris tipis. 1 chinese radish, peel. Finely slice
2000 ml air. 2000 ml water.
3 cm jahe, keprak. 3 cm ginger, crust.
2 lbr daun salam. 2 pcs bayleaf
2 lbr daun jeruk. 2 pcs lime leaves.
2 btg serai, keprak. 2 stalks lemongrass, crust.

Bumbu dihaluskan/ground spices:
8 buah bawang merah. 8 pce shallot.
6 siung bawang putih. 6 cloves garlic.
1 sdt lada bubuk. 1 tsp ground pepper.
1-1½ sdm garam. 1-1½ tbsp salt.

Pelengkap/condiment:
50 gr kacang kedelai, direndam air panas, tiriskan dan goreng. 50 gr soya bean, soak on hot water, strain and fried.
10 gr daun seledri, iris halus. 10 gr celery leave, finely slice.
1 btg daun bawang, iris halus. 1 stalk green onion, finely slice.
Emping goreng secukupnya. Some fried emping.
Bawang merah goreng secukupnya. Some fried shallot.
Sambal hijau (100 gr cabe rawit hijau, 4 siung bwg putih, 2 buah bwg merah, kukus dan blender dgn ½ sdt garam). Green Sambal(100 gr green chilipadi, 4 cloves garlic, 2 pcs shallot, steam and blender with ½ tsp salt)
Jeruk nipis or cuka. Lime or vinegar.

Cara/methods:
1. Rebus air, masukkan jahe, daun salam, daun jeruk dan sereh. Boil water, add ginger, bayleaf, lime leave and lemon grass.
2. Masukkan iga/tulang sum2 dan daging. Rebus dgn api kecil. Add ribs/bone marrow and beef. Simmer.
3. Haluskan bahan bumbu halus kecuali garam, tumis hingga harum dan masukkan ke dlm sup, masak hingga daging 80% empuk masukkan garam. Ground spices axcept salt, saute until fragrant and add into the soup, cook until 80a% beef tender add salt.
4. Angkat dan potong kotak daging yg sdh empuk. Lift up and chunk the tender beef.
5. Cara menyajikan Soto Bandung/how to serve Soto Bandung:
Letakkan dimangkuk potongan daging, lobak dan sup, taburi bwg daun, daun seledri, bwg goreng dan kacang kedelai goreng. Siapkan pula pendamping lain terpisah nasi, sambal hijau, jeruk nipis/cuka dan emping goreng. Put beef chunk, chinese radish and soup, topping with gren onion, celery leave, fried shallot and fried soya bean. Serve with rice, green sambal, lime/vinegar amd fried emping.

Note:
Kalo pakai tulang iga harus disaring air rebusannya spy bening. If you use ribs, drain the soup to get your clear soup.

Bahan/ingredients:
100 gr tepung beras. 100 gr rice flour
20 gr tepung hunkwe. 20 gr mung bean flour.
50 gr maizena. 50 gr cornstrach.
100 ml air pandan.100 ml pandan juice.
100 ml air daun suji. 100 ml suji leave juice (for color)
500 ml air es. 500 ml cold water.
¾ sdm air kapur sirih. ¾ tbsp lime betel
½ sdm garam. ½ tbsp salt

Bahan santan/coconut milk ingredients:
1500 ml santan dr 1 buah kelapa. 1500 ml coconut milk from 1 coconut.
2 lbr daun pandan. 2 pcs pandan leave.
1 sdt garam. 1 tsp salt.

Bahan saus gula/brown sugar sauce:
250 ml air. 250 ml water
500 gr gula merah, cincang halus. 500 gr brown sugar, finely chop.
2 lbr daun pandan. 2 pcs pandan leaves

Pelengkap/complimentary:
Daging kelapa muda. Young coconut
Nangka, potong kotak. Jackfruit, chunk
Nata de coco.
Es serut. Shaved ice

Cara/method:
1. Campur dan aduk rata tpg beras, hunkwe, maizena, air pandan, air suji, air kapur sirih, masak dengan api kecil hingga mengental. Sisihkan. Mix and stir well rice flour, mung bean flour, cornstrach, pandan juice, suji leaves juice, and lime betel, simmer until thickener. Set aside.
2. Siapkan alat pembuat cendol dan air dingin dlm baskom. Prepare cendol tool and cold water on big bowl.
3. Masukkan adonan cendol dlm alat pembuat cendol dan tekan diatas air es, saring. Add cendol mixture on cendol tool and press on cold water. Strain.
4. Masak semua bahan santan hingga mendidih, sisihkan. Cook all coconut milk ingredients, set aside.
5. Masak bahan saus gula merah sisihkan. Cook brorwn sugar sauce, set aside.
6. Sajikan dingin dgn pelengkap.

Note:
Kalo punya durian, enak juga. If you have durian, yummy.

Bahan/ingredients:
200 gr sumsum sapi, potong 1 cm. 200 gr beef marrow, cut 1 cm.
2 btg daun bwg, iris (aku pakai daun bwg kecil utk baso). 2 stalks green onion, slice. (I use 10 stalks small green onion for meetball)
1 siung bwg putih parut. 1 cloves grated garlic.
1 cm jahe parut. 1 cm grated ginger.
Garam dan lada secukupnya. Some salt and pepper.
3 butir telur ayam kampung. 3 pcs farmer eggs.

Cara/methods:
1.Kocok telur dan campur dgn semua bahan. Beaten eggs and mix with other igredients.
2. Panaskan minyak, gunakan cetakan bulat, masukkan 1 sendok sayur adonan telur dan sumsum, goreng hingga kecoklatan. Heat oil for deepfry, use round metal mold, add 1 soup spoon egg and marrow batter, and friend until golden brown.

Pindang Ikan Palembang adalah soup ikan khas dr Palembang. Dgn cita rasa nikmat…….Pindang ikan Palembang ini pada umumnya menggunakan ikan berasal dr sungai…… This Sour Fish Soup originated from Palembang. It have a really tasty flavour. Usually locals use fresh water fishes.

Pindang Ikan Palembang – Palembang Sour & Spicy Fish Soup

Bahan/ingredients:
1 ekor ikan (bandeng, Patin, dll), bersihkan dan potong bbrp bagian. 1 pcs fish (milkfish, catfish, etc) wash and cut on several part.
Bumbui dgn jeruk nipis dan garam, diamkan 20 menit. Marinate with lime and salt, let stand for 20 minutes.

1 btg bwg daun/prey, iris serong. 1 stalk green onion, oblique.
¼ buah nanas palembang or 1 buah nanas madu. ¼ pcs Palembang pineapple or 1 pcs honey pineapple.
20 gr kemangi/daun ketumbar. 20 gr thai basil/cilantro
5 buah blimbing wuluh, iris. 5 pcs sour star fruits, slice.

Bumbu/spices:
8 buah bawang merah. 8 pcs shallot.
2 siung bwg putih. 2 cloves garlic
10 buah cabe merah, tanpa biji . 10 pcs big chili, seedless.
2 cm kunyit. 2 cm turmeric.
3 cm lengkuas. 3 cm galangal.
1 cm jahe. 1 cm ginger.
1 batang serai. 1 stalk lemongrass
1 buah asam kandis. 1 pcs Kandis tamarin.
2 sdm air asam jawa. 2 tbsp tamarin juice.
5-10 buah cabe rawit. 5-10 pcs chilipadi.
300 ml air. 300 ml water.
Garam secukupnya. Some salt.

Cara/methods:
1.Didihkan air. Boiking water.
2. Haluskan dan tumis hingga harum cabe merah dan bwg merah. Ground and saute until fragrant big chilli and shallot.
3. Masukkan ikan dan semua bumbu kecuali kemangi dan daun bawang ke dlm air rebusan. Add fish and other ingredients, accept thai basil and green onion into the boiling water.
4. Matikan api. Masukkan kemangi dan daun bawang. Turn off fire. Add thai basil and onion.
5. Siap disajikan panas. Ready to serve hot.
