Membuat Tempe – How To Make Tempeh


MEMBUAT TEMPE – HOW TO MAKE TEMPEH

Bahan/ingredients:
500 gr kedelai. 500 gr soya bean.
1 gr ragi tempe. 1 gr tempeh yeast.
1 sdt cuka. 1 tsp vinegar.
4 buah plastik utk membungkus tusuk dgn jarum. 4 pcs plastic for packing poke holes using a needle. (250gr/each of plastic)
Air secukupnya utk merebus, merendam dan mencuci kedelai. Some water for boiling, soak and wash soya bean.

1. Cuci kedelai, masukkan kedalam panci dan beri air 2x dr kedelai lalu rebus selama 1 jam. Wash soya beans, add into the pan and add twice the amount of water than the soya beans. Boil for 1 hour.

2. Rendam kedelai air bersih selama 15 jam. Submerge soya beans in clean water for 15 hours.

3. Remas kedelai utk mengupas kulit dan memecahkan kedelai seperti photo san bersih dr kulit kedelai. Squeeze soya beans to peel outer skin as on photo until clean from soya bean skin.

4. Rebus kedelai dgn air mineral dan 1 sdt cuka, Tiriskan kedelai sekitar 4 jam, siapkan 1 gr ragi tempe. Boiling soya bean with mineral water and 1 tsp vinegar, Drain soya beans around 4 hour and prepare 1 gr of tempeh yeast.


5. Taburkan ragi diatas kedelai. Sprinkle yeast over soya beans.

6. Aduk hingga tercampur rata ragi dan kedelai. Stir to combine yeast and soya beans evenly.

7. Masukkan kedelai seberat 240gr kedalam kantung plastik. Fill in 240gr into plastic bags.
8. Tutup dgn kain serbet. (Hari pertama peragian). Bila tempe mulai berkerungat dan panas, buka tutup serbetnya dan biarkan jamur berkembang. Cover with napkin. If the tempe starts to sweat and heat, open the cloth and let the mushrooms grow.(First day fermentation). (20 August 2018)

9. Hari ke 2 peragian keluar jamur nya. The fungus comes out on the second day of fermentation. (22 August 2018)

Note:
Masa fermentasi sekitar 30-32 jam utk keluar jamurnya.

Sayur Balap – Bean Sprout Soup

SAYUR BALAP

Bahan/ingredients:
300 gr toge, cuci dan tiriskan. 300 gr bean sprout, wash and drain.
1 buah tahu ukuran besar, potong dadu dan goreng. 1 pcs tofu big size, cut dice and frying.
1 batang daun bawang besar, iris.
1 stalk spring onion, slice.
3 batang seledri, iris. 3 stalks celery, slice.
⅓ sdt lada bubuk. ⅓ tsp pepper powder.
Garam secukupnya. Some salt.
1500 ml kaldu udang. 1500 ml shrimp stock.
1 sdm minyak sayur untuk menumis. 1 tbsp veggie oil for saute.

Bumbu Halus/ground seasoning:
4 siung bawang putih. 4 cloves of garlic.
5 buah bawang merah. 5 pcs shallot.
1 sdm ebi sangrai. 1 tbsp roasted dried shrimp.
¼ buah pala. ¼ pcs of nutmeg.
1 sdm kecap manis (hanya utk warna sup). 1 tbsp dark sweet soy sauce (just for coloring of soup)

Pelengkap/condiments:
Bawang merah goreng. Fried shallot.
Sambal kecap manis/sambal dark sweet soy sauce:
2 sdm kecap manis. 2 tbsp dark sweet soy sauce.
5 buah cabe rawit merah, ulek kasar. 5 pcs red cayenne, coarse ground.
Sejumput garam. A pinch of salt.

Cara/method:
1. Tumis bumbu halus hingga harum. Saute ground seasoning until fragrant.
2. Tuang kaldu udang dan didihkan. Tambahkan kecap manis. Pour shrimp stock and boiling. Add dark sweet soy sauce.
3. Masukkan bawang daun dan seledri, matikan kompor, masukkan toge dan tahu goreng. Aduk dan tunggu 1 menit sebelum disajikan. Add spring onion and celery, switch of the stove, add bean sprout and fried tofu. Stir and wait for 1 minutes before serving.
5. Siapkan nasi diatas piring, siram dgn Sayur Balap, taburi bawang merah goreng dan sajikan bersama sambal kecap manis. Prepare rice on dish, pour with Sayur Balap, sprinkle with fried shallot and serve with sambal dark sweet soy sauce.

Note:
Ebi bisa diganti udang segar ukuran kecil, digoreng kering dan haluskan. (1 sdm ebi=50 gr udang segar)Dried shrimp can be change with fresh shrimp small size, frying until crispy and finely ground (1 tbsp dried shrimp =50 gr fresh shrimp)

Tumis Ayam Giling Buncis – Sauteed Minced Chicken Green Bean


TUMIS AYAM GILING BUNCIS – SAUTEED MINCED CHICKEN GREEN BEAN

Bahan/ingredients:
300 gr buncis muda, buang kedua ujungnya dan rebus dgn garam, tiriskan. 300 gr baby green bean, remove both ends and boil with salt, drain.
150 gr daging ayam giling. 150 gr minced chicken.
3 siung bawang putih, cincang. 3 cloves of garlic, chop.
2 buah bawang merah, cincang. 2 pcs of shallo, chop.
1 buah cabe merah besar buang biji, potong kotak kecil. 1 pcs of seedless red chili, small squared.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.
Bawang putih goreng utk taburan. Fried garlic for topping.

Bumbu/seasoning:
2 sdt kecap cap jamur. 2 tsp mushroom soy sauce.
½ sdt saus tiram. ½ tsp oyster sauce.
2 sdt mirin. 2 tsp mirin.
1 sdt minyak wijen.
Lada hitam kasar secukupnya. Some coarse black pepper.

Cara/method:
1. Panaskan minyak sayur, tumis bawang putih dan bawang merah hingga harum, masukkan cabe, aduk sebentar. heat veggie oil, saute garlic and shallot until fragrant, add chili, stir for a while
2. Masukkan daging ayam, aduk dan biarkan terurai. Masukkan bumbu, aduk rata. Add the chicken meat, stir and let it decompose. Add the seasoning, mix well.
3. Masukkan buncis, aduk 1 menit, dan sajikan diatas piring saji dgn taburan bawang putih goreng diatasnya. Enter the beans, stirring 1 minute, and serve on a serving plate with a sprinkling of fried garlic on top.

ASINAN BETAWI

Bahan/ingredients:
100 gr sawi asin, iris. 100 gr preserve veggie. 1 buah wortel, serut kasar. 1 pcs carrot, roughly grated.
6 lembar daun kol, iris halus. 6 pcs cabbage, finely slice.
1 buah mentimun, potong dadu. 1 pcs cucumber, cut cube.
10 lbr selada rocket. 10 pcs rocket salad.
50 gr toge, cuci dan tiriskan. 50 gr bean sprout, wash and drain.
2 buah tahu rebus, potong dadu. 2 pcs boiled tofu, cut cube.
5 buah kerupuk mie, dijemur. 5 pcs noodle crackers, sundried.

Bahan saus kacang/peanut sauce ingredients:
40 gr kacang tanah sangrai,. 40 gr roasted peanut.
20 gr kacang mede sangrai. 20 gr roasted cashew
30 gr gula merah. 30 gr brown sugar.
4 gr garam. 4 gr salt.
150 ml air. 150 ml water.
5 buah bawang merah sangrai. 5 pcs of roasted shallot
4 siung bawang putih sangrai. cloves of roasted garlic.
4 buah cabe merah keriting. 4 buah curly chile.
5 buah cabe rawit merah. 5 pcs red cayenne.
15 gr ebi sangrai. 15 gr roasted dried shrimp.
30 ml cuka apel. 30 ml apple vinegar.

Bahan saus gula merah/brown sugar sauce ingredients:
100 gr gula jawa. 100 gr brown sugar.
50 ml air. 50 ml water.

Cara/method:
1. Masukkan dan proses bahan saus kacang (kecuali cuka) dgn blender hingga halus dan didihkan. Dan terakhir tambahkan cukasaat api sdh dimatikan, aduk rata. Add and process all ingredients of peanut sauce with blender (except vinegar) and boiling the sauce, and last add vinegar after switch off the stove and stir.
2. Didihkan air bersama dengan gula merah. Boiling water with brown sugar.
3. Goreng krupuk mie saat minyak panas. Frying noodle cracker when the oil hot.

4. Siapkan semua sayuran dan letakkan diatas piring, siram dgn saus kacang dan saus gula merah. Tambahkan krupuk mie dgn cara di remukkan kasar diatas sayur beri saus diatas sayur. Prepare and place the veggie on dish, pour peanut sauce and brown sugar sauce over the veggie. Crushed noodle crackers and put on salad and bring some sauce on top.

Note:
1. Krupuk mie enak dinikmati dgn saus kacang dan saus gula merah. Noodle cracker yummy to eat with peanut sauce and brown sugar sauce.
2. Sangrai dgn air fryer. Roasted with air fryer.

Bayam Jepang Dgn Saus Miso – Horenso With Miso Sauce

BAYAM JEPANG DGN SAUS MISO – HORENSO WITH MISO SAUCE

Bahan/ingredients:
1 ikat bayam Jepang, potong 15 cm, ikat. 1 bulb of Horenso, cut 15 cm and tide.
16 buah jamur shimeji, rendam air panas 1 menit dan tiruskan. 16 pcs shimeji mushroom, soal on hot water for 2 minutes and drain.

Saus Miso/Miso dressing:
2 sdt pasta miso. 2 sdt miso paste.
¾ sdm mayones. ¾ tbsp mayonnaise. (cupid)
2 sdt mirin. 2 tsp mirin.
1 sdt minyak wijen. 1 tsp sesame oil.

Taburan/topping:
Cabe bubuk. Chili powder.
Biji wijen secukupnya. Some sesame seed.

Cara/method:
1. Didihkan air dan sedikit garam, masukkan bayam, rebus 1 menit, angkat dan rendam air dingin, tiriskan dan peras. Boiling water and some salt, add horenso, boiling for 1 minute, lift up and soak on cold water, drain and squeeze.
2. Letakkan bayam diatas piring saji. Place horenso on dish.
3. Campur bahan saus miso. Combine miso sauce ingredients.
4. Siramkan saus diatas bayam, taburi cabe bubuk secukupnya. Pour over horenso, sprinkle some chili powder.
5. Letakkan jamur shimeji diatas bayam dan taburi biji wijen. Place shimeji mushroom on horenso and sprinkle with sesame seed.

BROKOLI BAWANG PUTIH – BROCCOLI GARLIC

Bahan/ingredients:
1 buah brokoli (250 gr). 1 pcs broccoli (250 gr)
3 siung bawang putih, cincang halus. 3 cloves of garlic, finely chop.
1 sdm minyak olive. 1 tbsp olive oil.
20 ml air panas. 20 ml hot water.

Cara/method:
1. Rebus brokoli 1 menit, tiriskan. Boiling broccoli for 1 minutes, strain.
2. Panaskan minyak, tumis bawang putih hingga harum dan keemasan. Sisihkan. Heat oil, saute garlic until fragrant and holden. Set aside.
3. Masukkan brokoli beri lada, kecap asin secukupnya dan air panas, aduk. Add broccoli, add some pepper, soy sauce and hot water, stir.
4. Letakkan diatas piring saji dan taburi bawang putih goreng. Place on serving dish and sprinkle with fried garlic.

TUMIS KANGKUNG IKAN ASIN- SAUTEED MORNING GLORY W/ SALTED FISH

Bahan/ingredients:
1 ikat kangkung, petik dan cuci bersih dgn air garam, diamkan 15 menit dan bilas 2x. 1 bunch of morning glory, pick and wash with brine, let stand 15 minutes and rinse 2x.
3 buah bawang merah, iris. 3 pcs of shallot, slice.
2 siung bawang putih, itis. 2 cloves of garlic, slice.
5 buah tomat cherry, belah 2. 5 pcs cherry tomatoes, cut on 2.
½ buah cabe merah besar, iris korek api. ½ pcs red chili, julienne.
1 sdt kecap maggi. 1 tsp maggi soy sauce.
Garam dan lada secukupnya. Some salt and pepper.
20 ml air panas. 20 ml hot water.
20 gr jambal roti, rendam air panas dan iris. 20 gr jambal salted fish, soak on hot water and slice.
1 sdm minyak sayur. 1 tbsp veggie oil.

Cara/method:
1. Panaskan minyak, tumis bawang merah dan putih hingga harum. Heat oil, saute shallot and garlic until fragrant.
2. Masukkan ikan asin, tumis 1 menit. Masukkan potongan tomat dan cabe, aduk rata, masukkan kangkung, kecap, garam dan lada, aduk rata, tambahkan air panas, aduk. Add salted fish, saute for 1 minute. Add tomato and chili, stir well, add morning glory, soy sauce, salt and pepper, stir well, add the hot water, stir.
3. Pindahkan ke piring saji. Place on serving dish.
