Po Chai Dgn Jamur Saus Tiram – Po Chai with Mushroom Oyster Sauce

PO CHAI DGN JAMUR SAUS TIRAM – POCHAI WITH MUSHROOM OYSTER SAUCE

Bahan/ingredients:
12 buah po chai, cuci, rebus dan tiriskan. 12 pcs po chai, wash, boiling and strain.
4 buah jamur shiitake kering, rendam dan potong 4 bagian. 4 pcs dried shiitake mushroom, soak and cut on 4 part.
3 siung bawang putih, cincang. 3 cloves garlic, chop.
1 sdm saus tiram. 1 tbsp oyster sauce.
2 sdt kecap asin. 2 tsp soy sauce.
Lada hitam secukupnya. Some black pepper.
50 ml air panas. 50 ml hot water.
½ sdm tepung maizena + 2 sdm air, utk pengental. ½ tbsp cornstarch + 2 tbsp water, for thickener.
½ sdm minyak wijen. ½ tbsp sesame oil.

Cara/method:
1. Panaskan minyak wijen, tumis bwg putih hingga harum. Heat sesame oil, saute garlic until fragrant.
2. Masukkan jamur, saus tiram, kecap asin dan lada, aduk. Add mushroom, oyster sauce, soy sauce and pepper, stir.
3. Masukkan air panas dan biarkan mendidih, masukkan pengental, aduk hingga mengental. Add jot water and lets boiling, add thickener, stir until thick.
4. Letakkan sayur diatas piring dan tuang saus diatasnya. Sajikan panas. Place veggi on dish and pour the sauce on top. Serve hot.

Toge Goreng – Fried Bean Sprout


Toge Goreng adalah makanan khas dr Betawi (DKI Jakarta) juga Bogor. Toge Goreng Betawi is the authentic dish of Betawi (DKI Jakarta) and Bogor.

TOGE GORENG – FRIED BEANSPROUT

Bahan/ingredients:
300gr toge. 300 gr beansprout.
100 gr mie. 100 gr noodle.
5 buah tahu kuning goreng. 5 pcs yellow tofu.

Pelengkap/condiment:
Kucai, chives.
Bawang daun. Scallion.
Bawang merah goreng. Fried shallot.
Krupuk. Crackers
Lontong(pilihan). Rice cake (optional)

Bahan saus oncom/oncom sauce ingredients:
60 gr taoco, haluskan. 60 gr fermented soya bean, ground.
150 gr oncom, hancurkan kasar. 150 gr oncom, coarsely ground.

2 sdt gula merah. 2 tsp brown sugar.
2 cm lengkuas, keprak. 2 cm galangal, crush.
4 lbr daun salam. 4 pcs indonesia bayleaf.
1 buah tomat. Potong kecil2. 1 pcs tomato. Small cut.
6 buah jeruk limau. 6 pcs lime.
500 ml air panas. 500 ml hot water.
3 sdm minyak sayur utk menumis. 3 tbsp veggie oil for saute.
2 sdm kecap manis. 2 tbsp dark sweet soy sauce.
½ sdt garam. ½ tap salt.
2 btg bawang daun, iris halus. 2 stalks scallion, finley slice.

Bahan bumbu yang dhaluskan :
5 buah cabe rawit merah (sesuai selera). 5 pcs red chili padi (as your desire)
20 gr cabe merah halus. 20 gr ground red chili.
4 siung bawang putih. 4 cloves garlic.
8 buah bwg merah. 8 pcs shallot

Cara/method:
1. Goreng ½ matang bawang merah, bawang putih dan cabe rawit. Haluskan dan tumis bersama cabe merah halus, lengkuas, daun salam dan taoco.. Half fried shallot, garlic and chili padi. Ground and saute with ground red chili, galangal, indonesia bayleaf and fermented beansprout.
2. Masukkan tomat, aduk 1 menit dan masukkan bahan saus oncom yg lain, aduk hingga mengental (kecuali air jeruk limau terakhir masuk). Add tomato and stir for 1 minute and add other oncom sauce ingredients, stir until thickener. (Except lime juice at last)

3. Masak ½ matang toge, mie, irisan tahu, bawang daun dan kucai dgn sedikit air. Half cooked bean sprout with noodle, scallion and chive with some water.
4. Penyajian/how to serve:
Letakkan lontong diatas piring saji.
Angkat toge dan letakkan di atas lontong tanpa air. Dan siram dgn saus oncom, taburi kucai dan bawang goreng. Place sone rice cake on dish. Lift up bean sprout and place over rice cake with out the water. Pour oncom sauce over the bean sprout and sprinkle with chives, fried shallot and crackers.

Sambal Goreng Manisa


SAMBAL GORENG MANISA

Bahan/ingredient:
2 buah manisa besar, iris korek api. 1 pcs squash big size, jullian slices.
700 ml santan encer dr 1/2 butir kelapa. 700ml light coconut milk from 1/2 pcs coconut
200 ml santan kental dr 1/2 butir kelapa. 200 ml thick coconut milk from 1/2 pcs coconut.
2 Lbr daun salam. 2 pcs bay leaves
2 cm lengkuas , digeprek. 2 galangal, crushed
5 buah tahu putih iris dan goreng. 5 pcs tofu, slice and frying.
30 buah petai. 30 pcs sticky bean.
1 buah cabe merah buang biji, iris. 1 pcs seedless red chili, slice

Bumbu halus/ground spices:
6 buah bwg merah. 6 pcs shallot
4 siung bwg putih. 4 clove garlic.
4 butir kemiri. 4 pcs candlenut.
Garam dan hula merah secukupnya. Some salt and brown sugar.
1/4 sdt jintan. 1/4 tsp cumin
1 sdt ketumbar bubuk. 1 tsp coriander powder.
4 cm kunyit bakar. 4 cm grilled turmeric.
2 cm kencur. 2 cm Kaempferia Galangal/fragrant ginger.

Cara/Method:
1. Tumis bumbu halus hingga harum. Saute ground spices until fragrant
2. Rebus santan encer hingga didih masukkan manisa dan tahu goreng. Boil light coconut milk and add squash and fried tofu.
3. Masukkan bumbu halus aduk dan bila sdh mendidih gunakan api kecil, masukkan santan kental aduk rata dan matikan api. Add ground spices into the soup, stir and add thick coconut milk, using low heat stove, stir well and turn off the stove.
4. Masukkan petai dan cabe iris. Add sticky bean and slice chili

TUMIS BUNCIS & WORTEL- SAUTEED LONG BEANS & CARROT

Bahan/ingredients:
200 gr buncis, potong 2 cm. 200 gr long beans, cut 2 cm.
200 gr wortel potong korek api. 200 gr carrot, julienne.
3 buah bawang merah, iris. 3 pcs shallot, slice.
2 siung bawang putih, iris. 2 cloves garlic, slice.
1 sdm minyak sayur. 1 tbsp veggie oil.
Garam dan lada secukupnya. Some salt and pepper.
20 ml air panas. 20 ml hot water.

Cara/method:
1. Rebus buncis dan wortel selama 1 menit, tiriskan. Boiling long beans and carrot for 1 minute, strain.
2. Panaskan minyak dan tumis bawang merah dan putih hingga harum. Heat oil and saute shallot and garlic until fragrant.
3. Masukkan semua bahan dan tumis selama 1 menit. Add all ingredients and saute for 1 minute.

Kailan Kecap Kaldu ikan – Kailan Shoyu Dashi

KAILAN KECAP KALDU IKAN – KAILAN SHOYU DASHI

Bahan/ingredients:
300 gr sayur kailan muda. 300 gr baby kailan veggie.
500 ml air utk merebus sayur. 500 ml water for boiling veggie.
½ sdt salt.
Kecap asin kaldu secukupnya. Some shoyu dashi.

Cara/method:
1. Cuci bersih sayur kailan muda, tiriskan. Wash baby kailan veggie.
2. Rebus air dan garam, masukkan bag batang kailan selama 1 menit lalu rebus juga bagian daunnya selama 30 detik,tiriskan. Boiling water and salt, add part of veggie stem for 1 minute. And than boiling the leaves too for 30 second, strain.
3. Letakkan sayur rebus diatas piring dan sajikan bersama kecap kaldu jepang. Place the veggie on dish and serving with japanese shoyu dashi.

Terong Sambal Teri – Eggplant Sambal Anchovy

TERONG SAMBAL TERI – EGGPLANT SAMBAL ANCHOVY

Bahan/ingredients:
2 buah terong ungu pjg, belah 2. 2 pcs long purple eggplant, cut on 2.
20 gr teri kering, goreng. 20 gr dried anchovies, frying.
Kemangi secukupnya. Some Indonesia basil.
10 biji pete, belah 2. 10 pcs sticky bean, cut on 2.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.

Bumbu halus/ground seasoning:
2 sdm cabe merah halus. 2 tbsp ground red chili.
2 btr kemiri. 2 pcs candle nut.
8 buah bawang merah. 8 pcs shallot.
3 siung bawang putih. 3 cloves garlic.
Garam dan gula merah secukupnya. Some salt and brown sugar.

Cara/method:
1. Proses terong dgn airfryer selama 10 menit dgn suhu 180C. Process eggplant using airfryer for 10 minutes with temperature 180C
2. Haluskan bumbu dan tumis dgn petai hingga matang benar. Ground the spices and saute with sticky bean until well cook.
3. Oleskan sambal diatas terong taburi teri goreng dan sajikan. Spread the sambal on eggplant and sprinkle fried anchovy over eggplant.
4. Atau dgn cara lain or with other way to cook:
Iris serong terong yg sdh diproses, campurkan dgn semua bahan sambal, teri dan terakhir masukkan kemangi. Cut oblique the cooked eggplant, mix with sambal, fried anchovy and indonesia basil

Tumis Toge & Daging Sapi – Sauted Beansprout & Beef

Bahan/ingredients:
100 gr toge. 100 gr beansprout.
25 gr kucai, potong. 25 gr chives, cut.
4 buah jamur shiitake, iris. 4 pcs shiitake. Slice.
3 siung bawang putih, cincang. 3 cloves garlic, chop.
2 sdm minyak sayur. 2 tbsp veggie oil.
50 gr daging sapi, iris tipis. 50 gr beef, finely slice
1 sdt kecap asin. 1 tsp sou sauce.
Lada secukupnya. Some pepper.
2 sdt tepung sagu. 2 tsp cornstrach.

Bumbu/seasoning:
2 sdt kecap asin. 2 tsp soy sauce.
1 sdt kecap ikan. 1 tsp fish sauce.
Lada secukupnya. Some pepper.

Cara/method:
1. Bumbui daging dgn kecap dan lada. Lumuri tepung sagu, diamkan 20 menit.Marinate beef with soy sauce and pepper. Coating with cornstrach, let stand for 20 minutes.
2. Panaskan minyak. Masukkan bawang putih tumis hingga harum, masukkan daging, aduk hingga berubah warna. Heat oil. Add garlic, saute until fragrant, add the beef, stirring until changing color.
3. Masukkan jamur, toge, kucai dan bumbu, aduk rata. Add mushroom, beansprout, chives and seasoning. Stir well.
4. Siap dihidangkan. Ready to serve.
