Terong Sambal Teri – Eggplant Sambal Anchovy

TERONG SAMBAL TERI – EGGPLANT SAMBAL ANCHOVY

Bahan/ingredients:
2 buah terong ungu pjg, belah 2. 2 pcs long purple eggplant, cut on 2.
20 gr teri kering, goreng. 20 gr dried anchovies, frying.
Kemangi secukupnya. Some Indonesia basil.
10 biji pete, belah 2. 10 pcs sticky bean, cut on 2.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.

Bumbu halus/ground seasoning:
2 sdm cabe merah halus. 2 tbsp ground red chili.
2 btr kemiri. 2 pcs candle nut.
8 buah bawang merah. 8 pcs shallot.
3 siung bawang putih. 3 cloves garlic.
Garam dan gula merah secukupnya. Some salt and brown sugar.

Cara/method:
1. Proses terong dgn airfryer selama 10 menit dgn suhu 180C. Process eggplant using airfryer for 10 minutes with temperature 180C
2. Haluskan bumbu dan tumis dgn petai hingga matang benar. Ground the spices and saute with sticky bean until well cook.
3. Oleskan sambal diatas terong taburi teri goreng dan sajikan. Spread the sambal on eggplant and sprinkle fried anchovy over eggplant.
4. Atau dgn cara lain or with other way to cook:
Iris serong terong yg sdh diproses, campurkan dgn semua bahan sambal, teri dan terakhir masukkan kemangi. Cut oblique the cooked eggplant, mix with sambal, fried anchovy and indonesia basil

Tumis Toge & Daging Sapi – Sauted Beansprout & Beef

Bahan/ingredients:
100 gr toge. 100 gr beansprout.
25 gr kucai, potong. 25 gr chives, cut.
4 buah jamur shiitake, iris. 4 pcs shiitake. Slice.
3 siung bawang putih, cincang. 3 cloves garlic, chop.
2 sdm minyak sayur. 2 tbsp veggie oil.
50 gr daging sapi, iris tipis. 50 gr beef, finely slice
1 sdt kecap asin. 1 tsp sou sauce.
Lada secukupnya. Some pepper.
2 sdt tepung sagu. 2 tsp cornstrach.

Bumbu/seasoning:
2 sdt kecap asin. 2 tsp soy sauce.
1 sdt kecap ikan. 1 tsp fish sauce.
Lada secukupnya. Some pepper.

Cara/method:
1. Bumbui daging dgn kecap dan lada. Lumuri tepung sagu, diamkan 20 menit.Marinate beef with soy sauce and pepper. Coating with cornstrach, let stand for 20 minutes.
2. Panaskan minyak. Masukkan bawang putih tumis hingga harum, masukkan daging, aduk hingga berubah warna. Heat oil. Add garlic, saute until fragrant, add the beef, stirring until changing color.
3. Masukkan jamur, toge, kucai dan bumbu, aduk rata. Add mushroom, beansprout, chives and seasoning. Stir well.
4. Siap dihidangkan. Ready to serve.

RUJAK KHAS MADURA – MADURANESE ROJAK

Bahan/ingredients:
1 ikat kangkung, petik, cuci dan rebus sebentar. A bundle of kangkong, pick, wash and boiling awhile.
100 gr toge rebus sebentar. 100 gr bean sprout, boiling awhile.
10 btg kacang panjang, potong, cuci dan rebus. 10 stalks long bean, cut, wash and boiling.
Timun iris. Sliced cucumber
1 buah tahu putih besar, goreng dan iris. 1 pcs big white tofu, frying and slice.
4 iris tempe, goreng dan iris. 4 slices tempeh, frying and slice
Krupuk pilihan. Cracker your choice. (Maduranese like to eat with cassava crackers)

Nasi or lontong. Rice or rice cake.

Bumbu/seasoning:
50 gr kacang tanah goreng. 50 gr fried peanut
1 pot petis shrimp madura. A pot of maduranese shrimp paste
1 sdt Terasi. 1 tsp belacan.
Cabe rawit secukupnya. Some chili.
2 sdm bwg putih goreng. 2 tbsp fried garlic.
½ sdm gula merah. ½ tbsp brown sugar.
Air panas secukupnya. Some hot water.
Garam secukupnya. Some salt

Cara/method:
1. Haluskan dan campur bahan bumbu. Ground and mix seasoning.
2. Tata diatas daun bahan dan beri bumbu diatasnya. Serve all ingredients on banana leaf and put seasoning on top.
3. Sajikan dgn krupuk. Nasi atau lontinh. Serve with crackers, rice or rice cake.

TUMIS BUNGA PISANG – SAUTED BANANA FLOWER

Bahan/ingredients:
1 buah jantung/bunga pisang. 1 pcs banana flower.
5 cm lengkuas, keprak. 5 cm galangal, crust.
1 buah tomat iris. 1 pcs tomato, slice.
1 btg serai, keprak. 1 stalk lemongrass, crust.
Air secukupnya. Some water.
10 buah cabai rawit, iris serong. (sesuai selera) 10 pcs chili padi, oblique (taste to desire)
2 buah cabai merah, iris serong. 2 pcs red chili, iris serong. (seedless)
6 buah bwng merah, iris., 5 pcs shallot, slice.
4 siung bwng putih, iris. 3 cloves garlic, slice
Garam secukupnya. Sone salt.
2 sdt gula jawa. 2 tsp brown sugar.
2 sdm minyak sayur. 2 tbsp veggie oil
3 sdm teri goreng. 3 tbsp fried anchovy.

Cara/method:
1. Kupas jantung pisang, potong menjadi dua bagian. Peel banana flower, cut on 2 part.
2. Didihkan air dan garam masukkan jantung pisang dan rebus hingga empuk (10-15menit) Boiling waterand salt, add banana flower and boiling until tender.(10-15 menit)
3. Bila jantung pisang sudah empuk, angkat dan tiriskan. Tunggu hingga dingin lalu potong kecil-kecil sesuai selera. Remas jantung pisang. If the banana flower tender, lift up and strain. After cold room temperatur slice as your desire. Squeeze banana flower
4. Panaskan minyak dan masukkan bwng merah, bwng putih, lengkuas, sereh, garam dan gula merah. Tumis hingga harum. Heat oil and add shallot, garlic, galangal, lemongrass, salt and brown sugar.
6. Masukkan jantung pisang, aduk rata. Tambahkan air, aduk rata, Masak 5 menit. Add banana flower, stir well. Add water, stir well. Cook for 5 minutes.
7. Masukkan teri, aduk rata. Add anchocy, stir well.
8. Sajikan dgn taburan teri diatasnya. Serve with sprinkle anchovy on top.

SHABU SHABU with MISO SOUP

Bahan/ingredients:
1 pak sayur dan jamur siap pakai (jamur putih, jamur enoki, jamur shimeji, wortel, sawi putih, sawi hijau, jamur hitam, jagung muda dan kailan). 1 pack ready for use vegetables and mushroom (white mushroom, enoki mushrooms, shimeji mushrooms, carrots, cabbage, mustard greens, black mushroom, baby corn and kailan)
1500 ml air. 1500 ml water.
1 pack tahu sutera, potong. 1 pack silken tofu, slice.
10 buah baso sapi. 10 pcs meatball.
6 siung bwng putih, parut. 6 cloves grated garlic.
3 cm jahe, parut. 3 cm grated ginger.
1 lbr konbu/rumput laut (15cm). 1 pcs konbu/seaweed(15cm).
2 sdt minyak wijen. 2 tsp sesame oil.

Bumbu/seasoning:
2 sdm kecap asin. 2 tbsp soy sauce. (Kikkoman)
5 sdm pasta miso. 5 tbsp miso paste.
4 sdm shu/cuka Jepang. 4 tbsp shu/japanese vinegar.
1 sdm mirin. 1 tbsp mirin.
½ sdt lada bubuk. ½ tsp pepper powder.
10 gr dashi/kaldu bubuk Jepang. 10 gr dashi/Japanese powder stock.

Cara/method:
1. Didihkan air bersama konbu. Boiling water with konbu.
2. Panaskan minyak wijen, masukkan bwng putih dan jahe parut, tumis hingga harum. Masukkan ke dalam sup. Heat sesame oil, add grated garlic and ginger saute until fragrant. Add into the soup.
3. Masukan bumbu, biarkan mendidih add seasoning let’s boiled.
4. Masukkan jagung muda dan wortel rebus 3 menit, masukkan bahan jamur, sawi putih dan sayuran hijau, baso sapi dan tahu sutera. Add baby corn and carrot boiling for 3 minutes, add mushrooms, chinese cabbage and all green veggie, meatball and silken tofu.
5. Siap dihidangkan panas. Ready to hot serve.

Note:
1 pak sayur hanya 25.000IDR bisa utk 4-5 orang. 1 pack vegetables only 25.000IDR for 4-5 person.

TUMIS DAGING SAPI, SAWI PUTIH & JAMUR – STIR-FRIED BEEF, CHINESE CABBAGE & MUSHROOM

Bahan/ingredients:
400 gr sawi putih cuci dan potong. 400 gr chinese cabbage, clean and cut.
100 gr daging sapi iris tipis. 100 gr finely slice beef.
4 buah jamur shiitake kering, rendam air panas , dan iris tipis. 4 pcs dry shiitake, soak on hot water and finely slice.
3 siung bwg putih, cincang. 3 cloves of garlic, chop.
1 buah cabe merah besar, buang biji, iris tipis memanjang. 1 pcs red pepper, seedless, julianne.
200 ml air atau kaldu. 200 ml water or broth
1 sdm minyak sayur. 1 tbsp veggie oil.

Bumbu/seasoning:
2 sdt saus tiram. 2 sdt oyster sauce.
2 sdt kecap asin. 2 tsp soy sauce.
2 sdt kecap raja rasa. 2 tsp raja rasa soy sauce.
½ sdm mirin. ½ tbsp mirin
1 sdt minyak wijen. 1 tsp sesame oil.
Lada secukupnya. Some pepper.
Maizena dan air utk pengental secukupnya. Some cornstarch and water for thickener.

Cara/method:
1. Bumbui daging dgn sedikit kecap asin, lada dan maizena. Diamkan 30 menit. Seasoning beef with some soy sauce, pepper and cornstrach. Let stand for 30 minutes.
2. Panaskan minyak sayur, tumis bwg putih hingga harum, masukkan daging, aduk hingga berubah warna, masukkan jamur shiitake dan mirin, aduk, masukkan sayur, bumbu dan air, aduk dan tumis selama 5 menit. Heat veggie oil, saute garlic until fragrant, add beef, stir well until changing color, add shiitake and mirin, stir, add veggie, seasoning and water, stir and cook for 5 minutes.
3. Tuang dan aduk larutan pengental, dan siap dihidangkan. Pour and stir the rhickener and ready to serve.

Bahan/ingredients:
3 lbr sawi asin, cuci utk hilangkan asamnya, peras dan potong. 3 pcs salted mustard green, wash for reduced the acid, squeeze and cut.
2 buah tahu goreng ukuran sedang potong. 2 pcs fried tofu medium size, cut.
Krupuk secukupnya. Some crackers.
Acar timun (lg tdk punya). Preserved cucumber (I don’t have).

Bumbu/seasoning:
3 sdm petis. 3 tbsp black shrimp paste.
½ sdm kacang tanah goreng. ½ tbsp fried peanut.
½ sdm bwg putih goreng. ½ tbsp fried garlic.
5 buah cabe rawit merah (sesuai selera). 5 pcs red chilipadi (to taste).
1 sdm kecap manis. 1 tbsp dark sweet sot sauce.
Air secukupnya. Some water.

Cara/method:
1. Haluskan dan campur semua bahan bumbu. Ground and mix all seasoning ingredients.
2. Penyajian/how to serve:
** Letakkan bumbu diatas piring. Place seasoning on plate.
** Taruh potongan tahu, sawi asin, acar diatas petis. Add tofu, salted mustard green, preserved cucumber.
** Taburkan krupuk pilhan diatasnya. Put crackers your choice on top.
