Kerang Tahu Masak Tauco – Sauteed Oriental Hard Clam In Fermented Beans


KERANG TAHU MASAK TAUCO – SAUTEED ORIENTAL HARD CLAM IN FERMENTED BEANS

Bahan/ingredients:
1000 gr kerang tahu segar. 1000 gr fresh oriental hard calm.
3 siung bawang putih, cincang. 3 cloves of garlic, chopped.
3 iris jahe, 3 slices of ginger.
1 batang bawang daun, iris serong. 1 stalks of spring onion, oblique.
1 cabe merah besar, iris serong (bila suka tambahkan 2 cabai rawit merah, iris halus). 1 pcs red chili, oblique (to your taste add 2 pcs red cayennes, finely slice).
1½ sdm tauco. 1½ tbsp fermented beans.
200-300 ml air mineral. 200-300 ml mineral water.
2 sdm arak masak (boleh tanpa). 2 tbsp cooking wine (can be skip). Xao Xing.
2 sdm minyak olive. 2 tbsp olive oil.

Cara/method:
1. Panaskan minyak, masukkan jahe dan bawang putih. Tumis hingga harum, masukkan kerang dan arak, tambahkan air dan tauco aduk hingga kerang terbuka semua. Heat the oil, add ginger and garlic. Saute until fragrant, add clams and wine, add water and fermented beansstir until all shells open.
2. Masukkan cabe dan terakhir masukkan daun bawang, aduk sebentar dan siap disajikan. Add the chillies and finally add the leeks, stir briefly and ready to be served.
3. Sajikan panas. Serve hot.
